pls help me! i really wanna make this, but i can't find the right chocolate!. we don't have candy melts in our country and when i looked online on why and it said my chocolate wasn't tempered. so i tried the only method i could afford/ really do cause i'm ten. i did the "melt your chocolate quickly and do it in a plastic bowl and grate the chocolate" technique but it DIDN'T WORK. in so many videos, people use normal chocolate chips and it works, but not with my chocolate. i an't even find any chocolate that doesn't contain cocoa butter. pleaaaase help!
Cocoa butter is an important part of chocolate. In 70% or so cocoa solid chocolate the balance is mostly cocoa butter, and you need this to allow it to melt nicely. (www.biggerbolderbaking.com/temper-chocolate/) try this method, or if you have 70% or so cocoa solid chocolate, just melt it an proceed, all will be well. If you have a further problem let me know, but on the website, it is easier for me to follow the threads of the comments :)
That little round design on the top (from the bottom on the pan) really gives it that little extra!!!
Hi Gemma! Congratulations on becoming the spokeswoman for Good Cooks! I don't think they could have chosen anyone better. So far the products you have shown are wonderful! Can we substitute the cream for the caramel with milk?
The cream in this recipe tends to thicken the caramel, the milk will not do this. A thick Dulce DE Leche will work, or take a look at the other caramel sauces here (www.biggerbolderbaking.com/?s=Caramel+sauce) it needs to be thick enough to hold :)

This means that you've put on the sugar a little too long. You can try to add a little more cream and taste it until it gets better. If not, you can start over, keep a watchful eye as sugar for caramel can burn in a blink of an eye!

There are really great ideas Bushra. The problem with this caramel is that it needs the cream, though yo can make a Dulce De Leche, with coconut milk, which would work well here too! :)

Hard to say with the exact temperature as with caramel, your eyes will be your best tool. Focus and don't let your attention wander while making caramel and you should be grand. Once it turns light to medium amber, add the cream www.biggerbolderbaking.com/caramel-filled-chocolates/

I have not yet made the actual chocolate from the bean to bar if that's what you mean. But you need to buy your baking chocolate chips or bars from the store

Rolos! I used to buy a pack of these, eat the whole pack and grab another while still paying for the first one. Looks like a whole baking tin will be tested soon. I think I will make a few with chocolate filling, mix them up, and try to guess what each one is. (I am clearly addicted to chocolate).

You could, or you can use lactose free cream! Lactose free cream works the same as any dairy cream, it is just lacking the lactose! :)

These chocolates look so yummy. Do you have to use tempered chocolate? What happens if you don’t?
Really, as long as there is a reasonable amount of cocoa butter all will be well. The difference is in shine, and snap. Here is a simple way to do it, and it works too :)

I tried making caramel the sugar syrup was really dark but when i added the cream it went very pale and didn’t even taste like caramel :/I don’t have a candy thermometer as well
What I noticed when I started to make caramel was that if I used a dark lined saucepan, I could not see how the caramel was developing. There is a point too when the caramel is done, and it continues to darken if you do not 'stop' it. Have a basin/sink of cold water ready, and dip the bottom of the pot in to cool it, and prevent the caramel from cooking further. When you add the cream this will automatically happen, It is timing. The spatula I use here is a fabulous tool, take a look at it here: amzn.to/2EghMeo :)

I just made this. It was soo good, but the caramel was kinda tricky to make.
Caramel can be tricky, that is where a thermometer really helps, take a look at the one I use here (amzn.to/2EghMeo). I messthis up too when I first made caramel a long time ago, I was using a non stick pan, with a dark interior, it is important to get the color right, and that is about temperature, then you can stop it, the cream wil do that, and thicken it, but the color must be right first. Practice makes perfect! :)

For the caramel, is putting it in the freezer recomended? Just to make it a bit thicker
If done right, the caramel will be thick without the need to freeze or chill it. It does tend to soften when covered with warm chocolate.

Is it whipped cream or is it the fat thing we get from milk? Sorry, I have no idea.
There's low fat 25% cream available where I live, is that okay to use?
you could use effort, time, and energy make these but have you heard about rolos? you can get them at acme for about 1.50 and roll!
