- I built another offset smoker, and it turned out great! The customer wanted the cook chamber length to be 42" and the diameter 24". Built out of 7ga (3/16") thick mild steel. This was a lot of fun and fantastic to cook on! Looking forward to the next build already :)

Main cook chamber: 7ga mild steel, 42" long, 24" diameter
Firebox: 7ga mild steel inner and outer, 24" x 24" outside, 2" insulation on top, bottom, front, and back (Not door or cook chamber side)
Base: 2" x 2" square tubing, 11ga mild steel
Smokestack: 6" mild steel tube, 11ga, 48" tall
Casters: 6" heavy duty, 2 swivel and 2 fixed
Temp gauges: Two Tel-Tru gauges on cook chamber door
Overall length: 7' 6"

It is nice building with all new components and not having to knock a bunch of rust off!
@@fabmakebuildcook6274 hats off to the propane tank fabricators, but I think knowing everything was fabricated from scratch is easier when paying top dollar for quality product.
@@cmsense8193 Totally get it. There's a very good reason for using propane tanks to be sure. Moberg, Primitive Pits, Centex, and many more turn out some seriously nice units. From scratch quality I would say TMG pits and Shirley Fabrication have some of the nicer units out there. Allen Tubbs does some great work as well.

I weld on industrial size bag houses for air duct systems for manufacturing plants. We weld the seams downhill and it does great at making airtight seams. You should consider welding yours that way. The settings I use for .035 wire is 250 I’m and 20 to 22 volts. You should try that sometime. It would cut down on sanding welds. You could leave the welds and only sand at the starts and stops.

Used those magnets for years. I remember the bosses telling me to use it on a 316 stainless 800lb round disc.
I told them. "You try it!"
Found out quickly that it will not work on 316. Some stainless grades will but always TEST the lift. Used an electric magnet also. Could not believe that the plant manager didn't realize that unplugging it! The magnet will release!

Great build! I actually just started building my first pit, same dimensions but I have a 3/8 thick pipe. What size opening did you make from the firebox to the cook chamber?

The opening was roughly 16" wide and 6" deep in the shape of a half circle. Leaving a good lip between the bottom of the cook chamber and the firebox is advisable since it will keep grease from entering the firebox and starting a grease fire. Outside of that I think you have a ton of wiggle room.

What size expanded metal are you using for grates and racks and such? Not the physical dimensional size of the racks but what you order from the steel provider. Thanks, I also deal with Coremark in Mn.

It took between 25-30 hours to build I'd guess. Total timeframe from start to finish was about 2-3 months though due to scheduling conflicts and procrastination.

How did you get the braces on the inside of the door before you cut the door open?
I welded them on the inside before the pipe end was welded in place.

Going to be making my own soon, just wondering how do you determine the size of the cutout from the burn box to the cook chamber?
Or how'd you determine the size of the actual burn box?
Hey Abe,
I eyeballed the opening from the firebox to the cook chamber honestly. Not too small and not too large but would err on the side of larger than smaller personally. Make sure you have a barrier between the cook chamber and firebox to avoid grease fires though.
The firebox I'd suggest at least 2 feet deep or deeper depending how large of a cook chamber you're going to have.

Why welding the whole seam at 1:50? and later having to cut it for the door?
Is the chamber level or does it drop slightly for the grease drain
It's relatively level.
What steel grade did you use? I'll get my smoker build from 1/4" A36 steel sheet that then will be shaped to cylinder. My main concern is make sure that the steel is food safe since I don't know if that type of steel has a coating that might be non food safe. Do you think A36 is fine? Or not all A36 will be food safe?
This is 7ga pickled and oiled steel sheet. Once the metal is seasoned it’s completely safe for cooking. A36 hot rolled is the same way. Burn a decent fire in it so it gets around 450f and spray or wipe the inside with some sort of vegetable oil and you’re good to go after a few coats. Washing the metal prior to the fire so all the dirt and crap is off the metal is necessary.
@fabmakebuildcook6274 Yes I was planning on cure the smoker and add pam spray oil to create a protecting coating. Besides curing it, do you think sand blast when the steel sheet is still flat would also help to eliminate impurities and harming agents?

It’s high temp ceramic fiber insulation. You buy it in rolls on Amazon.
Great build, welding needs some work. Metal is too thin for that magnet that's why it fell. Need more meat for it to hold on to.

Yeah that steel sheet was flexing/pulsing due to the chain fall hoist being kind of a turd too. Really choppy operation. With the electric hoist it’s much smoother.
Can someone explain the reason for the complicated exhaust thing? Why not just a 90 degree elbow right out of the end of the cook chamber?
Hey Earl,
The collector (complicated exhaust thing) helps move the hotspot outside of the cook chamber. A 90deg elbow does the same thing. A 6” schedule 40 90deg elbow is a bit more expensive to purchase, and supposedly doesn’t do as good of a job with pipe style pits as a collector. That’s what I’ve heard anyways. Plus the collector is fun to build😁

Magnets only really work when the steel is thick
For example that mag clamp probably couldn’t hold its own weight on a kitchen fridge
On something 1” thick though it’s a different story
Yeah I figured that out the hard way. Flex in the plate was the root cause and lack of mass I suppose.
Did you use bullet hinges on the firebox door and if so how are they holding up to the heat?
Yup sure did. They hold up great. Used them on the other two offsets as well without issues.
@@fabmakebuildcook6274 are they greasable hinges? I’m almost done building my first offset and have greasable bullet hinges on the cook chamber door but was sure if they would hold up to the heat of the fire box.

Best way to learn to weld with out classes?
UA-cam for sure. I learned how to weld/fabricate from youTube. Channels like weldingtipsandtricks, 6061, allens welding and wood working, Jimbo's garage, the fabrication series. So many good ones out there.
Just curious as why you didn’t add an air intake on the door. Or are you just adjusting the door for that. Great build tho
No "need" for an air intake damper on the door. Wouldn't hurt and might add additional control but is not necessary. Just leaving the door open a bit seems to work just fine. I do have a notch cut out in the door latch that keeps the door in place while open and the fire fed well enough with fresh air. About 1.5" opening. Thanks for watching!

I enjoyed the smoker build and the video. I just wish the audio volume levels were consistent and higher. I had to turn up the volume higher than normal to here your voiceovers then turn down when the ads started. Great video though!

Where do you source the pipe? I can't for the life of me source a 20" diameter pipe.
I had my metal supplier roll a sheet of 7ga (3/16") steel for me. It is a bit expensive, but my only real option for pipe around here as well.
