Chicken with Herbes de Provence
For the marinade mixture (increase or decrease ingredients as desired):
1/3 cup avocado oil
1/3 cup lemon juice
2 tablespoons Dijon mustard
Salt and pepper -- a generous pinch of each
1 tablespoon dried Herbes de Provence
For the chicken:
4 small skinless, boneless chicken thighs
Mix the marinade ingredients in a zip-lock bag. Add the chicken, and massage the bag until all of the chicken is coated with the marinade. Refrigerate for at least 30 minutes or for up to 24 hours.
Preheat oven to 425F or 220C. Pour the chicken and the marinade into a small baking dish. Bake until the chicken achieves 165F or 75C -- 20-25 minutes.

The piano playing is the icing on the cake, very much appreciated. Thanks also for the cameos of the fur babies. The chicken dinner looks very high end, like something you'd get in an upscale restaurant. You make it look so easy but it has a lot of love put into it from making your own garlic balls and making the beautiful chocolate cake with creme fresh. You always have the most beautiful presentation in the parlor with a lovely fire. Well done Kevin. I look forward to your next video.

Your "Afternoon Tea" videos have inspired me to have a tea with my friends. Luckily, one of my friends had a British mother so they have all the pots and cups and other necessities that I don't have. I prepared your amazing chocolate loaf cake. It is our new “go-to” chocolate cake recipe. I intended to have it for dessert this evening, however, my significant other took the remaining cake to the office this morning. 🤣🤣🤣 My garden is winding down as well. Hi Kevin, I greatly enjoy watching your videos. I am fascinated by your location /garden zone which is the opposite of mine. In the video you asked about our gardens. I live in south central Florida in a small town named Sebring where my vegetable gardening is just beginning for the season. Unfortunately, we went through two hurricanes recently. Hurricane Milton was ferocious and while I was fortunate and had no terrible damage (the beauty of living in the center of Florida in a 100 yr old home) the plants in my garden boxes which sit down near the lake we live on were pretty well tore up. No worries,I will replant all of it. Since it’s early in our very long growing season it will all be fine. Thank you for choosing to let strangers into your life, home , kitchen and garden. It’s always a pleasure .
Wow, Sebring. i have been scoping the area recently. i'm from Miami 1958, then Broward County now over to the West Coast, Sarasota/Charlotte county line. Not very nice people moving in and bringing their ideologies with them. What do you think of Sebring?
@@thetorchyblameseries8100 Sebring is a rural sweet sleepy little town. In the winter season most of our tourists are senior citizens from Ohio, Illinois and Michigan. The majority of residents are conservatives politically regardless of their party affiliation. We have many “southern democrats “ living here.
It’s a nice town but not much shopping and no fancy restaurants. The county has many golf courses and many fishing Lakes for entertainment.
By 10 pm the streets are empty. I seldom go anywhere where I don’t see someone I know.
Highlands county has a population of a bit over 100k with 3 towns, Avon Park to the north Sebring in the middle and Lake Placid to the south.
I grew up in Dallas Texas and Phoenix Az then as an adult moved to west Palm Beach. When my children came along I knew I had to get out of that rat race and we had friends with a cattle ranch near Sebring. It was an adjustment I would gladly do again.
I’m from northern Alberta, Canada. I just dug out all my root vegetables and cut myself a beautiful flower bouquet because it may snow this weekend. Here we go with the snow Kevin! Thanks for being you and for playing piano

My Grandmother and Great Aunt Alice used to play the piano when they visited us on special occasions such as Christmas and Easter. So watching Kevin playing the piano just now reminded me of those days gone by. We also had a real fireplace in our Grandmother's house, where I was brought up for my first 5 years of age 😊😂

Always a treat to hear you play the piano! We're getting our first snows here in the mountains, but mostly cold rainy weather in the foothills.. All that's left to harvest in my gardens are a few herbs, but the majority was harvested a week ago. Have a great weekend and stay warm and dry!

As far as the weather changing, you are 2 or 3 weeks ahead of we folks in the southeast. I can't wait until it is cool enough to make a fire. My garden has reached the end of its productivity, except for several jalapeño peppers that are almost ready to make into poppers. I loved your simple but elegant meal. The chocolate cake for desert took it to another level. With your inspiration, I may plant garlic this year. It will be a first for me. Thank you for you wonderful videos, they are special to me.

I would add carrots to that meal cooked in ginger, butter and orange juice sauce.
When my children were little, they only like dried potatoes. I used some grated cheese to add variety. Also used a little paprika on the top and browned in the oven.

I enjoyed my visit to your home today! Did you know that if you wrap the green tomatoes individually in newspaper they will ripen even inside a cool dry place. I still am harvesting zucchini and made a roast chicken today with fresh thyme from my garden, carrots and potatoes! I made an orange cake with chocolate frosting for dessert. It was delicious. I enjoy hearing you play the piano and planting garlic in your garden! The flower arrangement was perfect! I hope to make an arrangement tomorrow with asters and roses. You know, Kevin, back when we had a large garden, we would pick the green tomatoes before the frost and store them in a cardboard box between layers of newspaper. Then, we put the box in a cool place for storage, and we'd take a tomato or two out and put them on a sunny window ledge and they would ripen up.

I live 1 hour south of Buffalo, NY and we haven't had a hard freeze yet (but soon, I am sure)! I harvested a great number of beets and am planning to make them into pickled beets, our favor ite way of eating them! It is so relaxing to look at all of my raised beds that have been harvested and covered with mulch! Whew! I sure wish that I could come in to a cozy fire as you do! As always, thank you for a delightful episode! It was a wonderful way to finish my busy day!

Yesss, another delicious chicken dish. I've never tried avocado oil before so I'm going to give it a try. I usually use EVOO. I wish I had a garden like yours but I'm finding it too difficult to garden any more. Getting old sucks!!

Always nice to have cake in the freezer. Better to leave whole, minimize freezer burn on slices. Picked my last green tomato a few days ago. Hoping it will ripen. My neighbor gave me some green cherry tomatoes, I'll pickle them and pop into the refrigerator. Your zinnias did well this year! Along with the purple maybe plant some white/cream ones next year. It has been some time since I wrote a comment but spending these few moments with you are always comforting. Have spent the last few months in Tivoli which is a charming almost magical town. The Hotel Tivoli is charming and they accept dogs. Their restaurant is excellent as is Gio Batta and Italian restaurant in town. Perhaps next spring you and Mr. Fox might drive here. All the best always.
