Fun fact : my uncle was baking vinegar pies in his ship’s galley the morning of Dec 7, 1941 - the attack on Pearl Harbor. He barely escaped his ship before the Japanese sank it.

My heart has been healed and my soul has been blessed by Adam' smile. 😭
I live less than a mile from the restaurant and this is my favorite dessert ever. I found a copy of the Hillbilly Cookin’ book too, in hopes of recreating, but haven’t yet. We get a whole pie each Thanksgiving and have converted a few to try, but some won’t at all. The brittle is the piece that makes the pie so delicious. So happy to see this on your show!
Something tells me that Andrew hates being alone while trying something new and he definitely misses Adam. Yup he definitely feels lonely 😁😁😅😅

I love this idea of recreating restaurant food! my dad always does this when we go to restaurants - tries to dissect the food to see if he can recreate it at home.
The Miyazaki bubble-creature-trying-to-eat-air analogy is a stroke of genius. Hope Miyazaki can hear this idea and decide to do another movie.

The fundamentals of why something tastes good should be his future recipe book for sure.
Everything he did wrong according to someone that went to bakery school:
First of all CHILL YOUR DOUGH!
The dough was falling apart:
This is a clear sign that you didn't knead it enough. The gluten haven't fully formed, so yeah it will break. Knead it just every so slightly more until this texture just disappears!
- When your dough is ready to roll out, give it a break, you just beat the sh*t out of it. Put it in some plastic wrap and put it in the fridge for 15-30 minutes. (enough to drink 1 beer ;) then roll it out. Poke holes in it like there is no tomorrow. And then bake it blind, to make sure it doesn't bubble up.

The filling:
HOW DO YOU NOT UNDERSTAND 'STIRR CONSTANTLY' like start stirring when you put it on the fire, you can stop after your both of your hands have no feelings anymore and your mixture was boiling for 3 minutes. Yes, baking is hell. That's why it's so delicious and pricey.
Remember that somewhere in the world, someone is making this mixture for like 20 pies. Someone is burning their hands so you can enjoy those yellow custards!

Then for the plastic foil trick.
It takes practice to have a perfect even surface, start by pushing the bubbles out. A way to do this is to drop your tart. Obviously not from the top of your house, but just a few inches, centimeters, or whatever your measurements are. Press it firmly into your table a few times, you will see the bubbles go away. Then put on the plastic and just use your hands to press it in firmly then use your palms to even out the surface. It's not really a trick though. It's more an act of passion I would say.
Now for the caramel:
It looked pretty good actually, sugar is very heat sensitive and just a couple of degrees makes a huge difference in texture. I have no idea but I though your caramel was a bit on the bendy side. Just a bit hotter should undo that. If you care for this, just look up the perfect temp for your caramel, it's all over the internet and tbh, there's probably a buzz feed quiz about it....
Now go bake, and remember:
If you fail when you're alone, just act like it never happened and support your local bakery by eating away your misery.

Little tip: Instead of the bean method, put the mold with the crust in the freezer for half an hour and then bake.
Same result, and no beans will go to waste or get scattered around the kitchen.

2 suggestions I can already make to your pie making process in this video, make sure your dough is chilled before rolling it out, and make a slurry with your cornstarch by mixing it with equal parts water by ratio
