Taiwan has plenty of labor issues. Just like in the US, many industries underpay and overwork their employees. Small street food stalls/carts are often open for 10 hours a day. Their minimum wage is also crap compared to living expenses.

I stayed there for two weeks with my mom and brother in an air BnB. There were so many cute stores and it was so lively. It was so interesting how most people didn’t own cars because there are subways everywhere! I got so much stationary and we went all over Taiwan. We stayed up in the beautiful mountains in a breathtaking inn. We explored the city of Taipei and did all sorts of things in the suburban and rural areas. Omg I wanna go back so bad and see my friend! It was also crazy that we got to go to the original Din Tai Fung restaurant! Nowadays they have the restaurants all the way here in California! That being said, I can absolutely see her saying "so we went down to the bottle-o to get some goon in our thongs".

Solidify your soup with gelatine and let it set then chop your soup jello into small pcs and mix it into your meat filling, the soup will melt once steamed. However your meat in the dumpling will release some meat juice too even if you don't add in soup jello
