  • Nacho Cheese Sauce
    Ingredients:
    1/2 cup raw cashews
    1/4 cup water - *(if blender is having trouble double this)*
    1 large piece of roasted red pepper (1/2 cup chopped)
    3 Tbsp nutritional yeast
    1 tsp miso
    1 tsp rice vinegar
    2 tsp smoked paprika
    1/2 tsp garlic powder
    1/2 tsp onion powder
    Directions:
    Blend together all ingredients in a high speed blender
    Serve Warm

    Hello!! My husband and I have been eating plant based for about 3 years now.. and yes, I was a cheese-a-holic! The closest thing I have found to help forget it is the "Game Changer" cheese sauce by Jill, with a few modifications. Someone shared a photo of something they made using your butternut sauce, and I took at look at your UA-cam channel... I thought the Nacho cheese sauce sounded interesting, so I jotted down the recipe and just made it... OMG! I took a pita chip to my husband to dip in this sauce and his eyes lit up!! this is now my go-to cheese sauce... (I did add a small jalapeno and some jalepeno juice with the water)... this cheese sauce is the closest so far to what we were looking for.. thank you for sharing!!

      @@TheJaroudiFamily Our family just tried this recipe about an hour ago with our tacos for dinner. I had a jar of candied jalapenos so I added some of the juice to it. This is the best cheese sauce I've tried and I've tried a lot of them! Thank you!

    OK - I literally just made this, as in less than 5 minutes ago. This is a GREAT 'cheesy' sauce - I've got some plant-based tacos prepped and this is going to make my lunch tomorrow fantastic. This was super easy to make (I have a Vitamix, purchased 12/2009!) and this is a sauce I can see being used on so many things. Thanks so much for sharing this one! One item down so I can do the potato nachos!

    Just made this because I had all the ingredients on hand. Loved it! I used regular paprika because I don’t like smoky flavor and I boiled the cashews bc I didn’t have time to soak and it still turned out great! Thanks for the wonderful recipe! And PS, would love a video on the chips!

    I made these to go on top of my walnut meat tacos. So good! It actually tastes better than regular nacho cheese sauce. I added a splash of apple cider vinegar to make it a little sharper.

    Late to the dance on commenting. This is my go to recipe for cheese sauce. Great with homemade tortilla chips, on rice, veggies, you name it! I double it up sometimes, it is that good!

    This is SUPER good! I would def double it! I soaked my cashews for 1 hour in super hot water, drained and used a ninja. Needed to double the added water but it came out perfectly. I am heating it to thicken on the stove. Excellent recipe.

    What an amazing WFPBNSOS nacho cheese sauce. It's hard to believe a nacho cheese sauce could taste so awesome yet still be healthy. Instead of using 1/2 cup of cashews I use a 1/4 cup cashews and a 1/4 cup cannelloni beans. If I only make one batch, I will blend it all in my bullet as it strains my vitamix. I know I could thin it out with more water but I like the consistency of it as it is. DELISH!!! 😋😋😋

    Can I tell you how SHOCKED I am? I just made this cheese sauce to go with the hamburger helper dish which is not yet out of the oven; and thank the Lord I doubled the recipe! It is so good!! Earlier today I made the chips with the corn tortillas in the air fryer which were MEH. I just ate them all after dipping them in the nacho cheese sauce. What a great recipe! Thank you! This may save my life! Hopefully I’ll have some left for the hamburger helper!

    Wow, this is so good. I drizzled it over steamed broccoli - yum! This is definitely going to encourage me to eat more broccoli! Only changes: I added 1/2 tsp of the savory spice blend from the How Not To Die cookbook. Great recipe!

    I made this for the first time tonight and OH WOW!!! I made it over corn tortillas, pinto beans, salsa, corn, and a raw cabbage/bokchoy combo, avocado and cilantro as toppings. I have never made nachos, never a big fan- until now. Boiled cauliflower on the side. I made pumpkin pie nice cream I got from you too. My parents were over the moon with this meal. We are all wfpb and branching out from the FOK, Prevent and Reverse Heart Disease, One Peaceful World cookbooks. I am thinking of topping a pizza with this sauce in the near future. YUM!!!

    Would love to see your WFPB take on Instant Pot recipes... I'm debating getting one but besides cooking beans and rice in it, I don't know how much more use I would get out of it.

      Trish L. They’re great for making split pea soup (you can simmer your veggies first right in the pot), and I batch steam potatoes in there fairly often.

      Trish I put anything and everything plant-based....and I do mean everything...from whole potatoes, peppers, carrots, etc, to grains from rice to buckwheat in my IP. Once pressure cooked with water or broth I use an immersion blender to purée it all into a thick soup. Most tasty and efficient way to use up whatever bits and bobs you have at the end of the week.
      It is also brilliant for batch cooking whole regular and sweet potatoes, corn on the cob, white, brown, wild or any rice or grain and any other vegetable. You can make soups, stews, currys, chilli and all things similar. I have seen one-pot pasta made in it. If you have freezer space, it is ideal to make large amounts using ingredients that are inexpensive when in-season and freeze them for the winter months when most fresh veg is more expensive. Or take the simpler route and use frozen and canned veg. In many cases, just as or even more nutritious and less expensive than fresh and often far more tasty.
      You can also make oatmeal, yogurt and a variety of other individual foods with the IP.
      As a disabled vegan with my dominant hand and arm being very compromised, the IP has been a complete game-changer for me. To say I cannot imagine life without it now is an understatement.
      It seems to be intimidating to many but once you have it and use it, it becomes very simple to use. There are many safety features built in, just in case those were concerns for you.

    I have to agree about the VitaMix! I debated with myself for close to 10 years wether or not to get one, then at a Vegfest VitaMix had a booth and I bought a reconditioned for several hundred dollars less than new. Having used it for about a year now, I don't know how I ever lived with out it! Worth every penny! With that and an Instant pot my time in the kitchen is much more enjoyable and productive and the amount of 'whole foods' we eat has tripled, at least! Interesting idea to layer the sauce covered chips, I'll have to try that.

    One last question...sorry. If I have a Ninja Pro, their highest watts, but it doesn't produce heat, do I need to cook this before serving--I know the VitaMixes do create heat. I guess I can just make it and if it doesn't seem thick enough then heat it on the stove? I am about to watch the butternut version, maybe my answer will be there. Many thanks.       Michelle D yeah I would hear it on the stove, it’s not a hugely thick sauce. Just make sure to whisk so it doesn’t burn

    If you don't have a high power blender, try dry blending the cashews into powder first before adding liquid, instead of waiting for them to soak.

    Do i need to take the skin off the roasted red pepper? i am going to have to roast my own and am wondering if there is a certain way i should do this? google says 450 degrees, roast 20 minutes and remove skin afterwards. Is that what you would do as well? thanks! can't wait to try this

    do you take requests?
    this is my grandma's recipe, SHELTON'S STICKY FANCY CAKE :
    50g unsalted melted butter
    50ml cooking oil
    2 eggs
    2 dl white sugar
    1 dl of brown sugar
    2 ½ dl wheat all purpose flour
    4 tablespoons cocoa powder
    2 tsp baking soda
    1 tsp vanilla extract
    1 pinch of salt
    50g little chunks of 70% dark chocolate
    butter, to butter the springform
    bread crumbs, to dust the springform
    garnish with icing sugar and whipped cream.
    1. Put the oven at 175 degrees.
    2. butter your detachable baking springform and spread bread crumbs.
    3. Whisk eggs and sugar until fluffy.
    4. Stir the melted butter and oil into the whisked eggs.
    5. Mix flour, cocoa, baking powder, vanilla extract, salt and turn into a batter.
    6. Pour the batter into the mold and sprinkle over coarsely crushed pieces of chocolate.
    7. Bake the cake for about 30 minutes at 175 degrees. Let rest for 20 min when done, it should remain gooey in the insides.
    8. Sprinkle with icing sugar and serve with plain whipped cream.
    Grandma called it fancy coz it was a treat to have money for chocolate chunks. she had a white chocolate recipe too.
    and just vanilla when we could not afford chocolate

      Jamie Barnes I would use 1/4 tsp and see if it’s enough. You can always add a bit more.

      I'm from a small town in NS and Superstore used to sell it in the Healthy/Organic section. You can also google Asian Grocery for locations near you, they will carry it and they also carry the can Jack-fruit in Brine.

    OMG I love any "cheese" with a cashew base. But do you find that the nuts inhibit weight loss? This is the only thing that worries me.

      I swap out white beans for most creamy recipes that call for cashews and they turn out great. Much less fat and a bunch of protein. I found this by accident honestly, lol. My daughter is allergic to cashews so I started experimenting with substitutions.
