- Whole Food Plant Based Fettuccine Alfredo
Ingredients:
1 15oz can white beans drained and rinsed
1 cup unsweetened non dairy milk
1 tbsp white miso
1 tsp garlic powder
1 tsp onion powder
2 tbsp nutritional yeast
1 lemon juiced (1/4 cup)
1/2 cup raw cashews
1/4 tsp black pepper
Fresh parsley or basil for topping
Directions:
Blend all ingredients in a high speed blender until smooth.
Heat on stove top (whisk continuously) until warm.

I made this today and added oyster mushrooms, kale, white onion, roasted grape tomatoes, and zucchini. SO GOOD!!! One of the creamiest alfredo sauces I've ever made.
I’m still new to my PBWF journey. As a former cheese addict, I just made this sauce with honestly very low expectations. OMG! It is delicious! It does remind me of Alfredo sauce. Dare I say...it’s better. I didn’t have that heavy feeling or regrets after enjoying it. Just sent a pic to my daughter at college (cheese loving daughter) and she’s excited to try it when she comes home. Win all around. Thank you!

I always add mushrooms and broccoli to my fettuccine Alfredo, I have made it with cauliflower but this looks so much easier I will definitely try this sauce with the beans, great choice 😀

Looks delish! Suggestion: Use the same pot that you cooked the pasta in to mix everything together. After you dump your pasta into the colander, Dump the dry pasta back into the pot along with the other ingredients and toss away. Then place it into the bowl and it will be pretty and already mixed.
I make mine with cauliflower--no nuts or beans. It's a delicious way to get more cruciferous veggies into the diet.
hows the taste with the cauliflower as i really dont like the tase of cauliflower
Do you use chopped raw cauliflower? Equal amount as the beans plus cashews?
Great tip to use the beans and less cashews. I have another recipe for a whole cup of cashews and no beans. So going to try this sauce. Love Alfredo sauce too! So yummy on so many things. Thanks!

I made this for lunch today. I sautéd a chopped sweet onion, a packet of sliced Baby Portabella mushrooms chopped, and chopped kale with no salt seasoning and a basil cube. I poured the Alfredo sauce over the cooked vegetables, stirred it up, and spooned it over a roasted yellow potato which I mashed with a fork. Oh my oh my, what a delicious lunch for me and my hubby. I used have of the mixture for lunch. I’ll make a little pasta to mix it for tomorrow’s lunch. The aftertaste of this meal is so flavorful. I am grateful for your creative cooking ideas. Thank you.

Brittany this is the BEST fettuccine I halve ever had ! Love ❤ love it !! Don’t skip the fresh Basil and parsley it completes the sauce so well Made it with Shirataki fettuccine noddles so delish

I just made this. I used fresh garlic and just put my kale in with the pasta for the last few minutes of cooking. This is super good! I will be making this a lot I'm sure. I love red sauce, but like a change and this is sooooo easy! Amazing as usual, thanks!

I steamed 1/2 of a large head of cauliflower 2 small red potatoes and 6 cloves of garlic... when these were soft I and added this to the sauce instead of the white beans. That also made the sauce really creamy and garlicky. Thank you for sharing we loved it and added steamed kale,cauliflower,and green beans with some pasta.

I'm definitely going to make this either tonight or tomorrow night. My youngest daughter won't eat any fruit or vegetables (except in pie form or French fries which don't count). But she loves pasta. I always add some pasta water to whatever sauce I'm making. The starchy water helps the sauce stick to the pasta and adds a bit more creaminess :) Can't wait to try this recipe. Looks delicious! I'll probably sauté garlic and onions in veggie stock with the baby kale, as my husband hates dried garlic and raw garlic gives him indigestion.

i made this for last night's dinner. i was planning on making stuffed peppers because we were having company and it makes me nervous to serve a new recipe but i ended up taking a long afternoon nap and ran out of time for peppers so i made this. it was very yummy! i served it with mushrooms and asparagus. next time i will also add spinach. definitely a keeper! (sorry if there's a similar post, i tried posting and it just kept loading)
making this one again tonight. mushrooms, spinach, and onion. i don't know if mirin is plant based but i'm using mirin and tamari to season my veggies. i'm going to add a little of the leftover juice from the cooked veggies into the alfredo sauce and hope it will be good. mushrooms give off so much yummy liquid!
This is really good! I subbed a shallot and 2 garlic cloves in the sauce, and poured it over sauted veggies and pasta! Thank you for another great recipe. Will you be putting out a cookbook? I’d buy it.
I paired this with edamame and mung bean fettuccine. I found the flavor a little bland so ended up sprinkling garlic and herb no salt seasoning on it which helped. I like the idea of a bean based sauce and wil be using it as a jumping off point. Thanks!
So I didn’t realize I didn’t have any beans until the pasta was almost done and the rest of the ingredients were in the Vitamix so......I subbed oats lol. Actually still tastes pretty good but definitely not as smooth as if I used beans. I subbed low sodium Tamari for the miso as well. Excited to try it with the correct ingredients next time.

Oooh, what if you switched out the white beans for a darker bean. Should make it look more like traditional stroganoff.

Traditional alfredo has a dash of nutmeg! Try adding that, and broccoli is always delicious with alfredo.
AGREED about baby kale! I was so happy to discover it, because adult kale just makes me cringe a little, LOL.

I really enjoy your channel! As a newbie vegan (1 month in) I’ve not yet tried recipes using cashews. I’m wondering how many pound(s) you buy for either a month or two weeks? I live quite a ways from a source for them so having an idea of how much to buy would be a big help. Thanks for any suggestions!
I always keep some in the freezer. They stay nice and fresh that way.
I keep raw cashews in a quart jar in the fridge, we go thru them in about 2 weeks for various recipes.
I could only afford salted/roasted cashews and after rinsing they were great. Even soaked shelled sunflower seeds will lend a creaminess to this without breaking budget.

I'm alergic to cashews so I will likely try a substitute. Perhaps a yukon gold potato. I've read about that in other sauces. How does this freeze. I've read about a "velveta" like cheese sauce that I'm told freezes well. I bought some silicone icecube trays to freeze it before storing it in zip lock bags. Wondering if this will work the same? Opinions??

Hi! I hope you response to this because im really confused and scared at the same time. Is eating fruits everyday will make me diabetic? Because fruits is part of my lifestyle and i dont consume sugar and other sweetener but use honey sometimes, like just 2 tbsp for the whole month. Im kinda scared if it will make me diabetic for too much fruits? Thank you so much. I dont also eat white rice and white bread.
Eating fruit isn't going to make you diabetic. ❤ Vegans are the group found to have the healthiest weight and least incidence of diabetes.
Fruit is full of fiber so it's sugar is absorbed slowly, eat all you want of it. In reality, even though most doctors are still uneducated about this, it's FAT not sugar that *causes* diabetes. Excess sugar is just a symptom of insulin resistance cause by too much fat accumulated in muscle and other tissues. nutritionfacts.org/2016/11/17/fat-is-the-cause-of-type-2-diabetes/ For years doctors had me on pills and a low carb diet, but when I started eating a whole food plant based diet with lots of whole food starches like potatoes, grains, root vegetables, etc. and cut out all added fats... I am no longer diabetic.
Soak the cashews or not needed?
If you have a Vitamix you don't but other blenders I recommend 20-30 minutes in hot water.
I have a Ninja Professional and never have to soak my cashews either.
Is there a substitute for the miso???
I would make sauce minus miso then taste for salt and add it at end.
Salt - or just nothing -- its really just to give it a bit of that salt flavor.
What ARE white beans? Does it include cannellini, chickpeas, navy beans, great northern beans???

How can everyone afford a Vitamix? 🙄 Is there a blender similar to that but affordable?
I've found Oster blender ("higher end" 600 watts I think) does well. Around $69 - $79? (about 3 yrs ago maybe) Instead of several hundred $.
My son has a nut allergy. Do you think I could substitute a big spoonful of sunflower seed butter in place of the cashews? As an experienced cook, do you think that would give the same sort of creaminess as the cashews?
