- Today I have my vegan version of classic Tiramisu! Creamy, rum scented mousse with coffee and Kahlua soaked sponge layers. Topped with a dusting of cocoa for that authentic taste and look.

Hi Gretchen, just wanted to let you know that I made this again yesterday and I couldn't get my hands on cream cheese so I used silken tofu instead and it worked so well! I beat it first till it was super smooth with a dash of apple cider vinegar. The end product didn't have a strong tofu taste at all. 👍

Yummy, delicious, and mouth-watering recipe!
Made this on New Year's Eve and it was a huge hit with friends and family! What I learned most though was that it really does get significantly better with age. I would even consider it a requirement for this recipe to leave it for a minimum of 3 nights in the fridge for the best flavours and textures 👌 I'm also looking forward to making it again and doubling or even tripling the amount of syrup as I love a juicy tiramisu where the sponge is completely saturated 😍 Thank you for this wonderful recipe Gretchen, I can't wait to tackle many more of your recipes as they're so well thought out and easy to follow (and thank you SO much for putting your measurements in grams/mL as well as volume, please never stop! it's a massive help). xxx

i dont really know if it's available in USA, but here in Europe we have rum essence. it's just like any other liquid flavouring( vanilla, lemon...) and it has no alcohol. but it tastes like the real thing for sure. (for my non-alcoholic friends out there)
For anyone who doesn’t want to use alcohol, non-alcoholic spirits are a great option. I like the brand “Lyre’s”. They have a replacement for lots of different liquors including rum and kahlúa.

This Italian here loves Tiramisu and I never made it in my life, but I'm loving yours. I'm so happy they make a can of coconut whipping cream. Two weeks ago I made some, what a waste of the milk after removing the fat. So sad. Gretchen I love the flavors and a espresso flavored coffee bean make it.

Never had tiramisu before but as a vegan I can't wait to try this recipe
Sadly, Trader Joe’s Chocolate Covered Espresso Beans are not actually vegan. Like most shiny candies, they're covered in confectioner's glaze, which is beetle juice (secretions from the lac beetle). That glaze can't be made vegan - but some candies like Skittles use other glazes like carnauba wax to get shiny!
I hope you can consider adding a note above and on the recipe blog. Being vegan can be hard and all we can do is try to learn and get better.

Gretchen's Bakery lololol yes. A lot of non Italians use liquors and I'm not sure why. A classic dessert with alcohol is Zuppa Inglese. Check it out!

Ah yes the yule log, I have to share one soon for sure!! I have been testing vegan sponge roulades recently and have had some trouble with these traditional cake recipes cracking upon rolling. I think if you bake this one in a 12X18 pan and roll it while still warm it will be ok, but again I have to do mo0re testing for this and plan to share a yule log recipe ASAP!
instead of using the canned coconut whipping cream do you think your whipped cream recipe will work along with the addition of the cream cheese?
Yes! Totally! OR I just got my hands on the SILK brand heavy whipping cream! TIME SAVER!! it is worth it!!
It looks good! Funny you say that about the type of alcohol you used. When I worked at Carrabba's, we used Myer's Rum in the cheese mixture, and Kaluah, Amaretto, and Espresso for the lady finger soak. Always smelled so good lol although I'm not big on coffee

Gretchen's Bakery Oh yeah, no problem! I just think it's neat to see all the types of different liquor people use in their versions of Tiramisu.
If you don't mind me asking (I'm sure you've already probably addressed this by now) but how come you use cake instead of lady fingers? Do you prefer the look and texture the cake provides versus the lady fingers, or are lady fingers typically not vegan? Just curious! Lol. I always snacked on Lady Fingers at work 😺
Baking with aquafaba has been a challenge, I have not seen 1 vegan baker do it successfully. If you are not sure, aquafaba mimics egg whites and whips up to a meringue, but baking with it at temperatures required to make cakes is disastrous. It works in macarons and baked meringues but not in cakes.
So... that being said... I have not yet mastered vegan lady fingers :(

Hi Patricia thank you! I’m not sure if I understand your question, but basically all of my base cake recipes make 2-8” layers
Although most of the time you’ll see me making 3-7” layers, but dont be confused because you can equally bake the batter divided evenly between the 8” pans

I made this for Christmas it was delicious but the layers didn’t have enough coffee soak I didn’t get a strong flavor of it at all which was disappointing wondering how I can fix the rest of the batch it’s all layered but dry and not enough coffee
Hey! I'm sorry that happened! You can absolutely make another small batch of the soak and either brush(add more) to each serving (as you serve it) or cut the casserole into portions and take a soaked brush to each cut, it will soak down int the cut layers and soak into eh cake underneath

Hi thanks, but it's not actually wrong. It's a link to cupcakes, yes, BUT the recipe for the vanilla cake is the same. Instead of baking cupcakes you will bake it into a cake pan

Plantbased families and kids but you can just sub with more coffee and a bit of rum extract, or leave the extract out and just stick with the coffee

Great recipe but I would suggest no longer using processed vegan alternatives and find recipes for vegan cultures cream cheese and sour cream etc. Its healthier and has a much mire traditional taste too. Just a tip. Great work though!!
