    Hi Gretchen, I have a friend who is gluten free and has recently had to become a vegan AND is a diabetic. Do you have anything that caters to this?

      Yes you can use my Strawberry Cheesecake recipe! www.gretchensveganbakery.com/vegan-cheesecake-recipe/
      Sub in GF cookies for the crust, GF flour for the AP that I use inside the cheesecake batter, and a diabetic sugar sub you like the best for the sugar parts in all recipes - 1:1 ratio for all subs!

    What is the water temp for the water bath?

      You will just pour in hot water to the oversized pan, submerge the cheesecake pan inside and bake at 350F

    Do you alter the baking time of doubling the recipe?

      Depends what size pan you would be using for double recipe. 9"x13"? I would probably check it sooner than the thicker round cake.
      Double recipe for a 10" round cake would be same time
      Basically it is the thickness of the cake (height) that will determine the bake time

      @@GretchensVeganBakery Thank you, I’d started cooking already, had used a 9” as suggested in recipe. It looks great 😊 I made a test one last week, which i practically ate by myself 😂 Doing this for my sisters b’day tomorrow

    There is a downside to this recipe, but also an upside.....my stove is down at the moment, and I can’t make this cheesecake. Otherwise, this cheesecake probably wouldn’t last a week.
