HOW TO MAKE KAOPOON NOODLE SOUP

  • Ingredients:
    2 packs kaopoon noodles
    2 chicken legs, thighs or breast
    8 kaffir lime leaves
    1-2 sticks of lemongrass (chopped)
    4-6 slices of galangal (NOT ginger)
    1 cup Mae ploy red curry paste
    2 cans of coconut milk/cream
    Sugar
    MSG
    Chicken bouillon
    Fish sauce
    Padeak
    Shrimp paste
    For the veggie topping;
    beansprouts
    shredded carrots (optional)
    long green beans
    cilantro
    green onion/scallion
    mint
    thai basil
    vietnamese coriander
    thinly sliced banana blossom
    thinly sliced cabbage
    For the EXTRAS**
    Cut nails on chicken feet, then boil in a separate pot and drain, then add it to the big pot. Same with gizzards & pork blood. Pork blood has to be cooked on LOW heat. All cooked in a separate pot first. Quail eggs & sliced bamboo can be put directly into the big pot to cook.

    Thanks for showing your package of vermicelli noodles. I know there’s a lot of brands out there but just wanted an idea of what people buy. Not a lot of videos show what brand they use. They just show how to boil only lol.

    Padek and shrimp paste makes the broth go bad quick if you sit it out. I don’t use neither in my soup

    What's the point of using shrimp paste and fish padek? Just wondering becus I have never use them before in kapoon.

      Its for taste. There’s a big difference in smell & taste if you don’t add it
