    Pozole is a dish that has been prepared for generations all across Mexico. In fact, we consider it a celebration food because it’s present at birthdays, winter holidays and independence day. Let me just clarify this; if we crave it, we make it! This dish is the perfect example of our devoted attention to detail when it comes to flavor and presentation. Mexican food not only takes pride on ingredients but also color and texture. This means, before you even taste it, you know it's going to be amazing!

    ➤ Meat
    4 lbs pork short ribs, medium pieces
    2 lbs pork shank, medium pieces
    2 ea pigs feet, cut in half
    Salt, generously season (1 1/2 TBSP salt, kosher) - only ribs and shank
    Black pepper, generously season - only ribs and shank
    ➤ Brown the meat/broth
    2 TBSP avocado oil
    1 gallon of water
    1 head garlic, cut the top off
    1 ea white onion, cut in half

    2 cups water

    I’m a gringo, but my partner is Latina. you and Rick Bayless have helped me learn so much about authentic Mexican cooking. I remember making your al pastor at the park grill on one of our first dates. What a special memory. This will be my first pozole attempt, no idea what it’s suppose to taste like. I’m sure it won’t be perfect, but I’m excited to begin my journey. Thank you!

    Nelson, I like this shooting and editing style versus what I have seen in the others. Using more of the kitchen gives you more possibilities.

      @VillaCocina my MIL is a phenomenal cook. And she's been cooking since she was 4 so long before she could read or write, so everything is by texture, taste, eyeballing, etc so it's very difficult to duplicate or come close with ratios and measurements to preserve los sabores de la familia. Which would be such a pity for them to disappear. So recipes like your help give a baseline so that I can reverse engineer hers through observation and noting some differences and nuances.

    I love the idea of using broth to rehydrate the chiles! Also, to help remove the can flavor from the hominy you can roast on a sheet pan for a few minutes.

    I made it & it was so much better than mine . My adult daugters picky & says no ones pozole has flavor . But wen she tasted yours she said wow finely a pozole with flavor . your an amazing cook thank you so much 🥰

    I made it!! Turned out amazingly delicious 🤤 ❤ whole family loved it!! i also added some pork neck bones that i found at walmart, the broth came out so creamy and rich.

    For your salsa Macha can you use avocado oil instead of grape seed oil, we stay away from all seed oils.

    How many servings will this realistically make? 6 pounds of pork and 2 patas seems like much more than 10 servings especially with the hominy?

    Pigs feet are just for flavor or did you eat them too? Couldn’t I make it without the feet?

      They add body to the broth and flavor, we do eat them. You can skip them if that’s what you prefer.
