OH MY GOODNESS!!! I followed your recipe all the way through. Until the moment came after I made the sauce. It was bitter. I did not think I over cooked the chilies. I was being very cautious to slightly sauté them. I was not about to waste this sauce so I added a little bit of brown sugar and I was able to balance out the flavor and it turned out amazing. My first time ever making tamales. And they were flavor upon flavor upon flavor. Thank you so much for sharing your family’s traditions. this is going to be added to my recipe box.
My mother used to make them using beef pork and chicken. We're African American...id give anything to make them. Your chicken chili is wonderful. I can taste them and will make them.. thank you
I love your channel. You and Nelson are great hosts and your recipes are top-notch. I have been binge-watching your videos and am ready to cook! I've also shared your channel with my wife and two sons, both of whom love to cook. I've lived in Dallas, TX for most of my life so I'm a Mexican food junkie! I can't wait to try this one. My wife and I frequently vacation in Cabo San Lucas and get our regular "fix" for tamales from a cart in the square in San Jose del Cabo.
Fyi, my wife is an Atlanta native and I lived there for 12 years. My first Mexican meal was a Speedy Gonzales at Montery's in Marietta at the age of 22. I've been hooked ever since.
Those look great! My coworker made strawberry and pineapple tamales, and I was in hog heaven. I have never seen tamales that are pretty in color in San Diego. So I might surprise my coworker with these beauties! Thanks
Thank you so very much dear for sharing your wonderful knowledge of tamales and the cooking of your relatives generations! ❤ Terrific video! So enjoyable! So we'll done!
Thank you! Sooo delicious!!!😋. I plan on using this recipe for this holiday season also. Last year I took the tamales to 3 family gatherings and they were a hit!!!! 🎯 Now I'm the talk of the town😂
I worked in the city and a wonderful woman would come to the job site & sell us tamales every other day, I think. I do know that I would buy twenty-five of these delicious treasures at least twice a week to bring home. I MISS that lady-angel who fed me tamales(!) and I will try to do this recipe the justice it deserves. Thank you for sharing!
@@VillaCocina Let me ask you something, What do you serve with Tamales? Now I had them many times at a favorite restaurant and they always serve them with fresh made spicy guacamole, which I come to really enjoy.
I have GOT TO try your recipe and make this, I've been subscribed for a while and every time you post a video, it makes me wanna try and make it. I LOVE tamales
Those tamales look sooo good. And you make it look so easy. If I ate your food I would weight 300 lbs. And enjoy gaining every pound. I love your videos. Mexican food is my favorite food.
Oh Gosh! That’s what I was looking for …tamales with not much lard or manteca( I am a senior ) and avocado oil is the solution , for sure I’ll try it , thanks , I like the way you talk no to fast and ver specific with details .
I recently made this recipe and I'm absolutely in love with the chicken filling. This was my first time making tamales and they ended up a bit soggy after steaming first for 50 minutes, and then for an additional 30 minutes. I let them sit for 10-15 minutes before unwrapping and was disappointed with the results. I think they still had a slightly doughy taste. I'm sure it was something I didn't do properly but I don't know if I steamed the tamales too long or not long enough. Is there any additional guidance you could offer and is there a fix for soggy tamales?
My sister-in-law from the family Gonzalez, asked me how I make my red sauce. She learned from a learner, thank you, Villa Cocina. (Nelson is a tease.) Your tamales look good!
I made the RED pork tamales using your recipe, which came out delicious. This coming weekend I will be trying your RED chicken recipe tamales. I'm certain they will turn out just as delicious. Thank you so much. BTW, Happy New Year to you and your family.
I made the red pork tamales and next the chicken. My family loved the pork tamales. I know they will love the chkn. I also want to make the verde chkn tamales TY
I just found you.❤ These look so amazing and yes, I'm Sure delicious, but You lost me at the LARD. I WOULD LOVE to try just one. However, with Diabetes and high cholesterol. I won't be able to. I love your presentation. I love cooking I love Mexican dishes. ❤️ you have done a great job. Wish I was younger so I could try one. God Bless you abundantly 😊❤
They look delicious but I prefer pork the most traditional way is with fat large.. So we indulge we don't have a them everyday we make them only for Christmas and New Year's, you're the color red looks very delicious. I'm sure people make it many ways thank you for sharing.
Hi!! What is the difference in masa that is moldable like yours and the kind that you have to spread on with a spoon? Does your masa float in the water test?
I bought mine at my local farmers market. It’s called “mi Pueblo” it also has “MP” ingrained with what appears to be a sun around both letters. Hope this helps.
Can you use chile de arbol instead of the chile puya? I have a ton of them. If so, I’m looking to get a medium heat. How many arbol would I use in this recipe? I’m really new to cooking with chiles. Do you think the puya is a better chile to use in this chicken recipe? If so, I will go buy them. Is this recipe for a medium heat with the puya? Thank you ☺️
Hey I was just wondering what do you suggest when you don't have a steamer? I am not in Mexico anymore so maybe I could just buy one off Amazon in the future
Dear Rossana, would you consider uploading your delicious Apple Cake Recipe to your Villa Cocina website so we can print it out for some Fall baking? I know it's one of your older recipes but I think it's a recipe worth making again and again, especially over the holidays! 😋🥰😋🥮
I just finished making these from your recipe. Things I learned is make sure the meat doesn't have too much sauce. Mine was too wet and dripping out of the tamale. The other thing I learned is buy A LOT of corn husks because 70% of them from the package were too small to use. I ended up with a bunch of tiny tamales because I didn't have any other big ones.
I hope you enjoy them. And yes, the filling shouldn’t have too much sauce. Next time, you can overlap the husks to make a big one. It takes some getting use to but works. Hope this helps 🙂
I've seen a recipe for making tortillas using masa harina which calls for only water and some salt. Is it possible to make tamales without using the fat?
Hi iam way up in the north us. Only a handfull of athentic really good mex resteraunts. I was going to subscribe and like the video untill your husband tempted me with that tamale fork. (HOW MEAN ) I smashed my face unto the tv screan and bit my tounge. Do you realize how much us gringos like real tamales!❤ ok i smashed the like button❤
“There’s flavor in the flavor”. That’s right Nelson.
He got inspired
There's a lot of great UA-cam cooks, but Rossana's the only one with her own hype man. 🎉
I know lol he's so chill

Hi, I wanna ask. Is this spicy? I wanna make it but my kids don't want spicy. Looks so yummy!
Love it and the pot used for steaming. What’s the name brand of your pot?
I bought mine at my local farmers market. It’s called “mi Pueblo” it also has “MP” ingrained with what appears to be a sun around both letters. Hope this helps.
You're the first I've seen that didn't smear the masa on the husk. 👍👍
Your whole approach is different too with the way you stack them. You're a master. 😃
Thank you so much! Glad you found my technique helpful.

Que rico!!!
Can you substitute fresh thyme and oregano with the seasoning kind ? Thankyou for your help
You could if fresh is not an option.
Where did you get your corn husks? I'm making this right now but my husks were too small. Idk how they're gonna turn out.
Hey I was just wondering what do you suggest when you don't have a steamer? I am not in Mexico anymore so maybe I could just buy one off Amazon in the future
You could probably find one at a farmers market.
Thanks for a delicious Pozole!
My pleasure! And thank you for being so generous 😊
It's that time of year already? I better learn quickly.
