Thanks for this! My son and I used to make eggs Benedict for big family breakfasts and it would take us 45 minutes to do the traditional way (including setup). I just found this video today. It’s the third anniversary of his passing.

I usually make my hollandaise with the classic preparation but I loved the way you did it! You do a great job of simplifying difficult recipes/techniques of cooking.

Hollandaise Sauce can be made sous vide; it helps a lot. I mean for starters, it's pasteurized, so maybe that would help Ninja get involved lol. Not only that, the sous vide can help emulsify and airate the hollandaise. Best hollandaise you could possible make.

One of my favorite things with a used prime rib the next day!
I use a bagel, a slice of prime rib, a poached or SV egg and then i go the extra step and make bernaise instead of hollandaise and its phenomenal. I like to add pickled asparagus too.

Also remember that they have gone keto so no english muffin for them either.
Hollandaise is a good sauce to use with steak surprisingly enough and can be quite good on a keto diet. I use to go to a steak house that brings out hot stones you cook your own steak on and I would get hollandaise sauce with that, now that was amazing.
Love the no nonsense of your videos Guga! We can make the Hollandaise sous-vide as well: I do it while eggs are cooking, in a tall jar (put all ingredients in it), in the same water bath. Shake the jar a few times. Then use the blender. Will try the beef Benedict soon!

I never would have thought of steak with that...but...steak and eggs is a popular breakfast choice. Hollandaise is close to Bernaise sauce and that is fabulous with steak. Angel is right, with that light sauce, ham and eggs take on extra class. 'Holland-days' sauce (French for 'as the Dutch do it.')

I adore Eggs Benedict.. it's what makes Breakfast that elevated experience over the common, but still good, classic Eggs and bacon and toast.

Was messing around one day with what I had left in the kitchen and decided to make Eggs Benedict. I make my Hollandaise very similar to Guga, but I used some boar bacon that I had in place of the ham, and then I used a croissant since I did not have an English Muffin on hand. Croissant is the way to go for real. Toast it up and omg it is so decadent.

Guga, I figured out putting eggs in the bag with water in the bag a while ago. No matter how thoroughly you inspect the eggs, one always breaks an makes a mess!
One thing I found was that if you crack your poached egg on to a griddle for about 30 seconds (just on one side), it gives just a little bit of texture and firmness to the egg so it stays on your fork a better.
When I make these for big family breakfasts, people prefer this method.

i just put eggs in boiled water for 7min then quick put in cool water for stop cocking and it was perfect for me
Eggs Benedict is pure ambrosia, food of the gods. LCan't go wrong with canadian/peameal bacon, I LOVE it with smoked salmon, and have had some really nice vegetarian ones with fried mushroom + spinach. Would LOVE to try it with fresh baked eng muffins someday

The steak one looked amazing and your hollandaise sauce is the best. They have different names for different combinations though, like eggs florentine when it has wilted spinach instead of ham, or the best one - eggs royale which has smoked salmon.
Also those were crumpets/pikelets. English muffins are just a round, thick, dense bread roll with a powdery/grainy coated exterior, and tiny tiny holes not big ones. :)
