When my mother was alive she would cook up so many angloindian dishes and one of our favorites was pork vindaloo. She made it quite spicy because that’s the way we all liked it. Could you have added crushed red pepper flakes or garam masala? I am enjoying watching all your recipes and there’s nothing like bringing our mother’s recipes to life! I look forward to making some of your dishes. I absolutely loved your holiday dishes of roast lamb and chicken. Thank you for sharing!

Simply wonderful. My mother use to add more vinegar but the same recipe. The belly pork always had to have more fat than meat and melted in your mouth. ☺️🙏🇬🇧🇮🇳

Hi there again. I was looking around for a Pork Vindaloo recipe as I had decided to make this as my Christmas Day main course. As well as rice, I was planning to prepare in advance aubergine in coconut as a side dish. Can you recommend anything else to complete the special day main meal please. It's just for one now.

One question- why don't you ever use dhanya powder in your dishes. In our home cooking dhanya powder is essential for all curries.
Yes most of my curry’s have dhanaiya except for a few that don’t ❤️
When you say 'chilli powder' in this (and the marinated version) what heat are you using? I normally keep kashmiri and extra-hot.
