Looks amazing! Would have loved to see some cultural food from the masters of fire cooking, the Argentinians, Brazilians and South Africans - all of which have pretty big communities in Chch and surrounds. You guys need better firewood as well, Bluegum makes meh embers.

Use for the Burger the Parāoa Parai bread as a Bun, roasted before on the grill. Step 2. Use the Manuka plant's honey and wood and well those of other plants if known or used for Hangi to smoke BBQ and for the Hangi-Smash Burger. Step 3. If the patty is not made with typical NZ(Aotearoa) fish or even sea food like seen in your wideo, make the Burger Halal as well. Step 4. For things onto the Burger like sauces I would put some pit-roasted crispy Kukuinuts eventually crushed with also roasted coconut flakes and a fruity coconutmilk-green chili sauce onto it, but that is optional (ferns or water-cress?) This looks really good. Why though are you lot crying about not getting any funding? You are businesses getting a permit to operate in the street then call it a community event and whine about not getting funding even though you are still making money. Or are you giving away the food for free?
A city only grows through cooperation both from operators but also through the collaboration with local councils. If the vendors win, the city’s economy wins, if the economy wins, customers win, it’s a win win win situation where a little generosity goes a long way.
There is no typical NZ food , it's just all fusion from all different countries. Even "traditional maori" dishes aren't traditional Maori, it's all Maori - Euro settler fusion.
