We have a concept of medicinal cheesecake in our family......its for days where everything goes wrong and the world seems terrible to you, we go and have a piece of cheesecake to brighten the day. Its a treat for the really terrible times and not just a bad day so the cheesecake is always seen as an extra special treat.
I love this story so much. I grew up in Melbourne and I miss the food more than I could ever explain! I wish these guys all the success and I know that Melbournians are very good at supporting their local businesses. What I would give to try their cheesecake 🫶
I did a little math, and they seem to be pulling in $50k a month out of that location. Their net might be $20k ish, which makes this a pretty decent $250k annual take home business if they don't expand or do wholesale stuff. Amazing concept.

Well, I said 2 weeks........ A piece of basque, pandang, strawberry long cake for my wife and a whole Japanese cheesecake later!!!! Dessert is going to be GOOD tonight.
Thank God they are using real pandan leaves instead of food colouring like others did. You can really see it from the green colour, subtle green not bright

Waiting for some overhead camera system that can read the calibrated distance between two knives and on a small display show in real time an approximation of the price as you widen, close the distance between, dependant on the type of product being cut. I have no doubt there will be people wanting to enjoy but inwardly worried about the price based on where the knife falls.... Some way for the customers who are price conscious to have a degree of control for price and not just their eyes/appetite. Nerds of youtube.... discuss and solve. (Will lead to other videos in other tech, finance, blogging etc if successful)
Or order by length. A ruler with $ values... far less tech. I did think of one of those bread slicing machines and depending on how thick the cut it shows a sliding scale for price.... Don't mind me everyone, just brainstorming here. I'm not mad, but I do need to feed my cat now. And the 6 others that come by.

That’s true! It might seem a bit awkward, but those conversations can really add to the experience. People crave human connection, and sharing a moment-even over something as simple as cake-can make it more special. Plus, it’s a chance to learn more about the desserts and the story behind them!
Baked cheesecake has no gelatine, you can also get beef-based gelatine like Queen brand from the supermarket, the downside/upside is you have to make it yourself.

Please do remember the difference in exchange rate aswell between say the USD, GBP or Euro and the Australian dollar. The Australian currency is much weaker, so the equivalent price in the US or UK might seem significantly less on first glance, but is likely equivalent when accounting for exchange rate.
Please consider that we create demand for dairy with desserts like this. While i loooove cheesecake so bits, im slowly changing my lifestyle to be kinder to the planet. We need ro be kind to our future generations. We need to reduce use of dairy, reduce agricultural lands and turn them into forrests, we need to be kind to the cows that are no longer animals but machines producinh milk that should go to their calves! We need to reduce the demand for dairy! Not eliminate it but olease consider making plant based cheese cakes! Perfect thr recipe so we dont miss dairy anymore! I respect your passion and food! But please do think about it!
@@StoryBites. Exactly. I thought it was disrespectful how they referred to it as a fad. It was very centered around themselves, and it seems a lot of the choices they made were like that too (e.g. pay by weight means variable/uncertain pricing for the consumer, and also no seats, etc.)
