  • A bowl of Chinese slow-cooked soup is most welcome for the colder days. Winter Melon is low in calories, high in nutrients and is also very refreshing.
    www.nyonyacooking.com/recipes...
    Nothing beats having a bowl of hot soup to warm the soul on cold winter days. There are many variations of [Chinese soups](/categories/soups) which are generally known to be very nutritious. Different soups have different benefits, depending on the ingredients used.
    For this recipe, winter melon is the main ingredient. It not only helps to cool down the body heat but is also low in calories. Good recipe to try out especially for those who are health conscious! Have this bowl of soup as it is or have it to accompany a typical Southeast Asian meal.
    Just like any other Chinese soup, you may substitute pork with chicken or anchovies. I especially like this soup cooked with pork, though. The sweetness from the carrots and honey date makes this soup even more yummy.

    When ever I am in a bad mood I watch your videos and I am happy again! I made your soup and it was awesome. I added a few dried porcini mushrooms for the umami flavor - (it is an old Italian trick) and it adds a wonderful mushroom element. Thank you again Nyonya Cooking - I love you for sure

    Thanks for reminding of this soup! Will make it tonight.
    Just wanted to add something I used to see my Mom do. We have coil burners, so she would char the squid on them before adding into the soup. This created a more pungent smokey flavour and in a way - more aromatic and rustic :).

    Hi Grace. I just tried cooking this soup for the first time. I tasted and found it to be somewhat too sweet (from the carrots, dates) without any other contrasting flavors to balance it out. I also noticed that you didn't mention adding salt anywhere in the video.
    Well, what I did was I adjusted with some salt and found it to be more palatable. I also experimented with a small batch by adding more salt to see if it would taste better, but interesting enough, the more salt I added the worse the soup tasted which made me conclude that saltiness is NOT the primary flavor for this soup.
    I was wondering what is your opinion regarding the use of salt in this soup? Thanks in advance.

    Hi, I have been missing home cooking for a while and stumbled on this vid of yours. Just a bit curious, where does the dark color of the soup come from? Do you use salted soy sauce?

    • @nyonyacooking
      @nyonyacooking  2 роки тому

      That’s a great question. According to the recipe, there is no soy sauce. www.nyonyacooking.com/recipes/winter-melon-soup~ryEWuwoDGq-7 you can reach our cook by posting a comment. Otherwise, our community manager can help you out too. - Admin

    • @nyonyacooking
      @nyonyacooking  9 років тому +1

      Irina Lau Hi Irina, this serves up to four people. As for the amount of water, I normally add an extra half a bowl of water to allow it to decrease as it cooks. Also, another tip is to get a really good stainless steel pot which is thick enough. Hope that helps!

    WHat does winter melon taste like? Can you describe it or compare it to something? And what is the texture of the carrots in the end product? I imagine it to be veeery soft because it has been boiling for 90 minutes! Could I add the carrots at a later point of time?

    • @wanfarezsaini9239

      it has a taste of cucumber but more juicy, it is like a "soup sponge" afterward.
      taste great . it a great combination with Hainan Chicken Rice/ chicken rice.

    • @nyonyacooking
      @nyonyacooking  9 років тому

      AnnK H It will be soft and not crunchy. But not so soft that everything will fall apart. As for winter melon, it really tastes like the rink of a water melon. :) It might be a little different from what you may already know or used to but give this a try. It's a nutritious soup :)
