But many recipes don’t explain how to eat healthy/budget friendly on a day to day basis since many recipes are fast food, holiday meals, street food or such. I made the soup (albeit with store bought chicken stock) and it was so delicious, I added more tofu and reduced the egg a bit because of what I had. 10/10 highly recommend

Wow, for someone from a western culture I'm very envious of how well people from Eastern cultures eat. This looks very comforting and healthy for a regular dinner.
One of my best friends is Cantonese, whenever I go to his house I'm guaranteed a good meal. I was told that it is bad manners to only eat one bowl of rice and that I have to have at least two which is never an issue for me, truth be told. 😂 One of my favourite meals is a chicken dish that only uses parsley, coriander, water, oil, salt and pepper as seasoning. No idea what it's called but my friend's mum showed me how to make it so I can cook it at home. So cheap and simple but packed full of flavour, my kind of food. 😊 I'm going to try this tomorrow, I have everything but the chinese greens/spinach so I'll pick some up on my way home from work. Reminds of the REAL Chinese food I used to get in the NYC Chinatown, when I used to live there. Simple and veggie-filled, with a good balance of carbs, meats and plants. Normal Chinese take-out food is so full of fats and sugars, it's only slightly better than fast food. A pity that most Americans think that's true Chinese food. REAL Chinese food like this is incredibly healthy. Thanks for this video! I think I'll take the soup recipe--I never know what to do with my chicken stock. This is a perfect way to use it! :D
SHALLOT & SCALLION CHICKEN 0:57 BOIL 2 chicken legs in 5 C. water, 1.5 in. ginger & 2 stalks of scallions. SIMMER for 8 minutes. 2:41 TURN OFF the heat. LEAVE the chicken in the covered pot to continue the cooking process for 15 minutes. CRISPY AROMATICS 2:49 SLICE thinly 1 in. ginger, 2 stalks scallions, 2 shallots 3:20 in medium-low heat, COOK aromatics in 4 T. oil until golden brown 3:52 STRAIN aromatics & set aside SAUCE 3:59 ADD oil back into the pan, ADD 2 T. soy sauce, 2 T. oyster sauce, & 1.5 t. sugar. COOK & MIX well in low heat. Set aside. 4:23 TRANSFER chicken into an ice cold bath to stop the cooking process 6:11 WIPE with paper towels & DEBONE the chicken 6:42 CUT into bite-size pieces, place on a plate, drizzle on scallion sauce, & garnish with chopped green onions 7:12 SERVE with soup & rice bowl topped with the crispy aromatics 1:41 HOW to cook RICE 4:43 HOW to cook TOMATO & EGG TOFU SOUP

SUR is one of the channels I tried a lot to cook from. So I did with this dish. Now some 2 cents from my end. Sauce: I tried as in the recipe. Turns out there's so much scallion oil included, it didn't go well with the faty texture of the skin. Solution: I whipped it up one more time and added merely a few drops of aromatics oil. Otherwise soy and Oyster is a winner. I added merely a hint of sugar since Oyster sauce has quite a lot in it already. Modified sauce was on spot for my liking. Broth: It's goinna turn out quite light. After taking out the chicken I reduced even more and added salt, lil msg as well as some tuna Flakes and a tiny tad bright miso. I know it's a sacrilege. If you gave some Chinese Umami near, go ahead. Chicken itself. Mandy has some cool skills going on when it comes to deboning cooked chicken. My chicken disintegrated during handling. I've put it on a small tray and popped it into the fridge for firming up while keeping the shape as good as I could. Once firmed up, I could slice it nicely. Then I had an idea: I've put it in the air fryer and gave it a crisp. That was a game changer. Again a sacrilege but a game changer. Soup: I used spinach as a green. Outstanding. As mentioned above: The stock is pretty light. One can add more veggies such as leek and carrots to intensify. That or going for Umami such as mushrooms or what not. Again a very inspirational video. Thanks for the input. Keep up the good work.

When making the scallion sauce, to prevent oil separating from soy sauce and oyster sauce, heat the other ingredients first and then add the oil little by little, stirring well between every addition.
