      Is it firm like if we used pectin in it? That’s a lot of stirring, 20 minutes! Lol. So in other words, we let it boil on this rolling boil method for 20 minutes and just keep stirring while it boils away? Can’t wait to try it. Thank you.

      It does not GEL hard like added pectin jam..but it is still thick and spreadable and DELICIOUS! you can really taste the fruit!

    Your telling us to not look at your hair was unnecessary Bev. It looked great today. Not in the style of the fresh "do" after your latest haircut, but an attractive alternative. A real testament to the skill and artistry of your "find" in a hairdresser. Make sure you pass on to her the compliments you've received. I have wondered if she may want to take a trip down to NH for a visit and a snip.🤔☺️.

      I agree - it is a good cut! I wept for real when my hairdresser closed shop, I hate switching and once I find one who listens and also gives suggestions but really listens LoL - I clutch them close to my heart. :-)

    Boy, I wish I would have had this earlier this year. I had a friend bring me buckets of strawberries from her garden. She had so many she didn't know what to do with them. ...I was happy to take them. I made no pectin, but it had more sugar. Oh well, next year! The jam looked great, Bev!

    If you LIKE your Strawberry Jam to be full of Strawberry pieces. The night before layer your fruit with the Sugar (use a big bowl OR your Stainless Steel Preserving Pan) This a) makes melting & dissolving the Sugar MUCH faster & b) Firms the fruit so it doesn't break down as much in the boiling, having the Sugar mostly dissolved also means a shorter cooking time, fresher fruit flavour. I put the pulp, pips, and Skin/Pith of my Lemons in an odd Pop Sock, a) contains all the 'rubbish' bits that contain a lot of Pectin b) easy to squeeze out the Pectin Rich pith but throw the whole lot in the bin when you're done. Use a bigger pot than Bev did!

    Oooooo! Nuthin' better than home-made strawberry jam! Mom used to make it this way, without added pectin. She'd seal the jars with melted paraffin and keep them in the refrigerator -- Dad would burn through them in a manner of days! :)

      It is not as Firm a GEL than when you add pectin..but it is thick and delicious!!

    Watching this when I should have gone to bed. I love strawberry jam!😁 This has been a comfort. Been watching the Weather Channel all day with this hurricane (we're out of harm's way in the north of our state but with this thing tornadoes can pop up) and this is more fun to watch and get the weather off my mind.     Hi! Thanks for this video! I've made small batches of homemade jam to keep in the freezer and fridge before. But now my son is finally starting to eat them and prefers them over store bought. He also does not like it chunky. So I'm trying canning it for the first time today. I really liked your video. It was very informative and to the point, and not boring!     That looks delicious!
    I put peaches in my crockpot last night on low,for peach butter and woke up to scorched peaches!!
    They were dark dark brown with a teeny bitter taste!
    Good for eating but not for canning!
    So I have about 3 quarts in my fridge!!
    Sick about wasting those gorgeous peaches!!

    Now once they’ve cooled down, how firm or runny is the jam? Same as if you had put in a pectin box? Looks real good. Might try this, thank you!

    Thank you for this video. I don't do sugar so I cut it back to bout 2 cups. I'm prefer organic coconut sugar but I'm out ..figures😳. Oh and I used unsalted butter....the butter really does help.😁

      So there was no skimming done on these batches here? I put in a pat of butter last week, but I still had to skim, however, I used pectin, not this method. Perhaps that helps, not sure.

      no ,when cooking time is up ,remove jars from the boiling water ; now with a pressure canner ,you MUST NOT(NEVER) take the lid off until ALL pressure has released NATURALLY . ,you can make jelly/jam with frozen fruit also..Blessings

      Evangeline Minton :) now if you are pinching pennies-do what our families have done for generations to save $$.. All your glass jars ( from pickles to spaghetti sauce jars ) SAVE if their lid has a stamped rubber ring "glued" inside .. These can be cleaned .INSPECTED for nicks(breaks in the lid's rubber ring) then use them for your jelly jars and save the store bought jelly jars to give as gifts.Mine have always sealed with a "POP" just like store bought...Just in case 1 may not POP after canning - refrigerate and eat -enjoy Much love

    Does this thicken up after it sits? I know jam isn't suppose to be thick , just curious.I personally like jam better than jelly.The only other jam I have made is pineapple jam from Noreen's Kitchen it was really good everyone loved it.I will definitely be making yours.❤️

    beautiful bev !!!!!!! i made mulberry preserves / jam this past early july without pectin and it came out great { tree in my yard } . i boiled it like you did ur strawberry jam than jared it . i didnt water bath any of it because all the jars sealed great . they all pinged shortly after i put on the lids . have you ever done it this way and not water bathed your jared jam ???? we r on our second jar and it is still fine . i did get 9 jars a little bigger than a pint plus 1 medium size bowl in the fridge to eat immediately . ill know more if it is still not spoiled or molded this winter coming . i have strawberries in my fridge right now but plan on dehydrating them tonight . dehydrated strawberries are like candy to us . i cant keep enough of them in the house . have a fantastic weekend you n papa . hugs from michigan

      kathy jo tourtois you can do it that way as long as the gym going into the jars is boiling hot and the jars and Lids are hot however I always ball valve can in my videos for the beginner for safety

    I froze most of my strawberries and the rest I dehydrated. Can I use the frozen berries for this recipe and procedure you have shown or do the strawberries have to be fresh?

    Hi Bev...I'd love to make this recipe but I have a question...When you said you cooked it for 25 minutes, does that mean from start to finish or 25 minutes after you get the rolling boil ? Love the idea of more fruit than sugar !!! :}

      Yes..I cooked it up to a boil and then hard boiled it for 25 minutes.

      pretty much any jam can be cooked this way - I have always done mine without pectin. My Grandma was from Northern Saskatchewan with a Swedish dad and a Slovenian mom - she just called them 'preserves'. I love that the smaller amount of sugar means you really get the flavor of your fruit. I have done raspberry, apricot and even plum jam this way. Haven't made jam in years though...Bev you are making me twitch! Heading out to the thrift store to see if they have a waterbath canner or suitable pot....

      PS check for changes in the sugar to fruit ratio between different fruits but really it isn't that fussy and it isn't a threat of botulism as you would find with fiddling with low acid food canning!

    this is just the video i've been looking for as have heard say that pectin is not needed to make jam. to date have not tried jam without pectin but want to make raspberry jam, will it be runnier without it?

    Why do so many people cut off the top with so much strawberry flesh still in tact. I take the edge of sharp knife to quickly and very easily pull out the green stem. Try it saves more strawberry and is fun at the same time. No waste!

      Tracy Ris when you use the box of cereal recipe? It is 4 cups of berries and 7 cups of sugar I prefer this recipe!
