as someone who ran into a shiny Tangela in Pokemon Crystal (on 3ds) I can tell you it can and did flee :'(

My favorite Eveelution is Umbreon. Love the simplicity of it and the red eyes with black fur. It looks so cute as well, and I love how tanky it is.
Back when I played a lot of pokemon, I would give it wish, foul play, toxic, and protect. Foul play is great because it takes the opponents attack stat to calculate damage, so sword dance and dragon dance work for your favor.

Until Sylveon, Leafon was my favorite. A huge move pool for a Grass-type, fluffy yet leafy, simple design yet memorable.
For those of you having trouble catching pokemon that flee in gen 4 onwards, here's some advice.
Step 1: Get a female Ralts, Kirlia or Gardevoir.
Step 2: Put it into the daycare with a suitable male pokemon that knows Mean look and/or Hypnosis.
Step 3: Get a male ralts from one of the resulting eggs that knows the aforementioned moves.
Step 4: Evolve the Ralts into a Gallade.
Step 5: Teach Gallade False swipe.
And voilà! A Gallade that can lock a pokemon down with mean look, lower it to 1 HP with False Swipe and put into a coma with Hypnosis. The ultimate pokemon for catching other pokemon!
and Thunder Wave for enemies with Vital Spirit/Insomnia, don't forget that.

By Gen IV, there are very few Pokémon who flee (the highest number being five in Platinum, and three of them can be traded from HG/SS), they're all legendary and most of them are Psychic-types (Wobbuffet tanks them), so there's barely any need to go out of your way like this for them.
Also, if one wants them for competitive purposes, chances are they'll hack their nature and IVs anyway (because roaming legendaries have their nature and IVs set from the moment they're released on the wild for the player to find), so they might as well hack 999 Master Balls into their bags and save themselves the trouble.
DarkEinherjar It was just some advice. Besides my point still stands, even if you're not trying to catch pokemon that flee, Gallade still makes the best "Catcher".

I see Elliot too has good taste in Eeveelutions, for I also consider Jolteon my favourite Eeveelution, hell, my favourite Gen 1 Pokémon. Primarily due to its speed, good special attack and access to Thunder Wave in most games, making it useful for Legendary hunting.
I see Elliot is a man of class as well.

it looks so cool! doomguy has like this dash move! the super shotgun has a freaking grappling hook! doomguy has a little assassin's creed blade on his left hand! he can punch again (witch should hopefully be more accurate then the weapon whip from the previous game)! he even seems to have a war machine-esque shoulder cannon that's a flamethrower! we're finally in a none-red environment for once! also, a bfg 10000?! a custom crucible for doom guy?! oh man, so much hype!!

From how badly the devs fucked up some of the mechanics that are at the forefront of the additions GSC made, it feels to me like Gen II was actually a step down from Gen I (mostly Yellow) in some ways.

Ah, Umbreon & Espeon. The few Pokemon that I remember because I had Pokemon Colosseum. Loved the game, but damn did it feel long for me. Also, the music is great.
It didn't help that battles were gen IV levels of slow. ;)

Fun fact from the space world demo regarding Umbreon, it originally was supposed to be a poison type. Now those dex entries about it secreting poison makes a lot more sense.

3:00 It's also good to note that all ghost attacks pre-gen 3 are physical. All dark types attacks are similarly tied to special. Thus, if you want decent psychic coverage you should give your physical attackers shadow ball or hidden power ghost. If you want psychic coverage for sp. attack oriented pokemon the best they can get is usually faint attack or crunch.

Dont think Johnny knows this but in Let's Go neither Pikachu nor Eevee can evolve. In return they have higher stats than the average Pikachu or Eevee.

I really hate it when the NPCs cheat the evolution levels... Haunter LV20, Golbat LV18 (later on), three Dragonite below LV55...
The one who really takes the cake, however, is Aarune (the guy who gives you Secret Power in ORAS): LEVEL 23 FLYGON!

Though amusingly you can turn this kind of crap against the enemy as well... for what it's worth. Pre-gen 5 the in-game trades always matched the level of what you traded for it, so you too could pull shenanigans like a level 3 Electrode.

The thing with Lets go, you can get other pikachu and eevee to evolve in both games. Surprisingly they are not version exclusive

Holy crap. I knew that the modifiers for some of the Poké Balls in Gen II were screwed up, but how did they mess up the Moon Ball so badly regarding the Burn Heal? I knew that the Moon Ball was useless in Gen II thanks to a glitch, and the Moon Ball is still too situational to be of much use anyway. But with full context regarding the glitch, the whole thing is even more hilarious.
The meeting with the Kimono Girls is handled a lot differently in the Gen IV remakes. Instead of just meeting them all here, you’ll meet them at various points throughout the game, and you won’t meet the last one until you reach the Ice Path that leads to Blackthorn City. You will however have to come to the hall to help one of them deal with a Team Rocket Grunt, though. At the end of the game, you’ll come back here to fight them all, and they’ll give you the item you need to summon Ho-oh or Lugia.
Ah, Eusine. Forgot about this guy. I know you fight him once in HGSS, but is that also the case in Crystal?
The encounter with Silver in the Burned Tower is handled differently in HGSS thanks to the area being redesigned. Instead of just waiting around for you to approach him like here, he’ll ambush you without any warning when you try to use a ladder to reach the lower floor.
Cyrus Halberd yes, you fight Eusine in Crystal. And in GS, Silver fights you as soon as you enter the tower
I'm glad that the remakes made the Kimono Girls required fights. They felt like something major to the story but they... Just weren't, for some reason.
Welp, talk about some... interesting glitches so far with the catching part of the game.
Fun fact there is a lvl 16 weezing in the burned tower basement but it is a 1% catch rate and it knows self destruct.

Actually, you’ll be able to get other members of the Pikachu and Eevee line in their respective games that you can catch and evolve.
so, speaking of umbreon, a friend of mine did some chain breeding in Gen 6 to get the perfect Umbreon and he ended up glitching the game to where the final one he got had extreme speed on it, which is something an Eevee can't normally get through breeding.
Poor Flareon. My favorite Eeveelution, but outclassed "heavily" by the others. What genius thought it was a good idea to make the fire-type one a physical attacker?
Special attack of 95 is hardly unusable. And in gen 1 its special was 110, which made it a beast.
I've always loved Umbreon, hell hadn't it been for Golduck Umbreon would have been my favourite pokemon, but then they introduced Sylveon and now I've got a close contender for favourite eeveelution and then they introduced Mimikyu and now it's really hard to arrange my top 3 pokemon.
Umbreon has been my favorite for a long time.
That's the problem with pokemon - "what's your favorite?" is hard to answer, while "what's your grab bag of favorites?" is much easier.

Talking about eeveelutions, heres a nice trick to remember what types are physical and special before gen 4 fixed that issue.
Eeveelutions types + dragon = special
Everything else = physical

I caught Entei with a Fast Ball on the first try in my Gold version. Let me remind you that Entei's catch rate is low and it was luck.

Fun story here: I was trying to get through a route without running into any wild Pokémon, so I put my LV20 Poliwhirl (HM Slave) on the lead and used a Repel... and then, suddenly Entei!
I knew it was going to flee regardless of what I did, so I just threw an Ultra Ball for the lulz... and caught it!
DarkEinherjar Omg something similar happened to me with Suicune. I threw an Ultra ball at it with full health and caught it!
Rayquaza with a Pokeball at full health.
(It was on an emulator with fast forward where I was just chucking balls and resetting after dying, so it simply happened eventually. 3/256 odds are low but hardly "it'll never happen!")

To be fair to Flareon, most Fire types back in Gen 1 would have killed for a base 95 Special Attack when the average back then was 80-85. I'm not kidding, Fire types in Gen 1 were very underpowered and received a much needed buff in stats from Gen 2 onward, as well Steel types making them more useful to have around in general.
Flareon's Special in Gen I was 110. It was actually the strongest non-legendary user of STAB Fire-type moves back then, second only to Moltres. Gen I also allowed Flareon to make great use of its Attack stat, thanks to the Body Slam + Hyper Beam "combo". Gen II took both of those away from it and made Flareon nearly unusable until Gen VI, and by then it was too late.
Not completely true. Ninetales had 100 Special in Gen 1, making it the premiere Fire-Type outside of Moltres, who was a legendary. Ironically, it got nerfed while the other Fire types were buffed in Gen 2.
Ninetales, Flareon and Moltres were the only Fire types in Gen 1 that has a Special stat at or above 100. Charizard, Rapidash, Arcanine, and Magmar, more than half of the fully evolved Fire types back in Gen 1, all had a base Special stat of either 80 or 85. So even if Flareon only had a base Special of 95 back then, he still would have had a stronger STAB than most other Fire types in the game.
You fight the Kimono Girls waaaaay later in HGSS and I don't know why they changed that.
Because they're made more plot-relevant in those games: you find them individually throughout the game, and you battle them as part of the process to meet Lugia and Ho-oh (which is now mandatory before you can go to the league).

First involves nuzlocke comic. Namely in it, Suicune follow the protagonist around because it’s in love with her.
Second involve Kris holding a baby suicune with her hair coloration and explain why she didn’t appear in HG/SS or the anime. Suicune knocked her up.
My favorite eeveelutions are Vaporeon and Glaceon.

Umbreon or bust. Man gen 1 and 2 are pretty messy, with all the fuck ups with the implementations of some mechanics. Well, gen 1 more so than gen 2.
Not to be the bearer of bad news but you can't evolve neither starter in Let's Go, you have to catch another Pikachu/Eevee to get their evolution. To make matters even worse you can't release/box your starter from your team.
