    Serves 3 - 4 pax

    350g prawns
    1 tablespoon sesame oil
    5g chopped young ginger
    5 cloves chopped garlic
    1.5 tablespoon oyster sauce
    1/2 teaspoon sugar
    60ml (1/4 cup) water
    1 tablespoon dark soy sauce
    2 - 3 stalks spring onion
    3 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)

    Omg i made these the other day and they were FIT! Soooo delicious! Could've eaten a bucket load. Such a good combination to go with the prawns. One of my fave recipes now for doing chinese style prawns with shell on.

    Isn’t all the delicious flavour stuck on the outside of the shell? I feel really stupid but I don’t understand. So all the yummy flavour on the shells would maybe end up on your fingers as you peel them once cooked, but still not on the actual prawn meat? What if you took the shell off the meat and cooked all of it , meat and shell, so still getting the tastiness from the shells, but also the meat gets to cook and be covered in the tasty sauce directly? Sorry I feel like I’m missing something obvious. Big fan, chef Roland!!

      Hi Len Gee. Just use a knife to make a slit on the back of the prawns then remove the vein. Very easy. Happy cooking!

    Hi Roland, do I double the ingredients if I double the amount of prawns? For the chinese cooking wine if I double it, it'll be 6 Tbsp. Will that be too much?

    Mine is a lot easier😁. Fry prawn in oil, turn after skin is crispy. Then (add some cut chilly if prefer), add oyster sauce. Stir for 1 min, turn off fire and scoop the crispy cooked prawn onto a plate already garnished with iceberg lettuce. You can appreciate the taste and freshness of the prawn with lesser additives.
    *My 1st bf cooked it for me. He was older than me but still a young boy himself. I remember this simple dish to this day.

      When you split the back opened, it will have better taste because the sauce will have contact with the prawn meat instead of just the shell. Removing the vein is actually more for texture, the vein sometimes contains Sandy particles.
