Butternut squash tip: Know that little orange scraper tool that comes with pumpkin carving kits? Don't put it away with the Halloween stuff - keep it in the back of your silverware drawer. It works great for getting seeds and orange gunk out of winter squashes too.
I watched this sitting next to my son and I kept laughing out loud. He said 'Ma, you're watching a cooking show - why are you laughing?" I told him to remember to take a pass at a large assed butternut squash. LOL
"Rando and crosshatch" gets me every time! 😂On another note, I've tried this with sauteed mushrooms a couple of times, and it's fantastic! Just take the shrinkage into account, so you have the same amount of sauteed mushrooms as ham.
I adore butternut squash seeds. I will save them in a sack in the freezer. When I have a good amount, I clean them up and soak in salted water for about 1-2 hours. After a roast in the oven, they are the perfect snack. I also will sprinkle them on top of my butternut squash dish.

Ratings are based on similarity to the real thing not goodness. For vegan butter miyokos creamery brand 9/10. for cream cheese violife is 10/10; for milk notmilk by notco 8/10, I’ve heard oatly is also milky in a way almond milk isnt but I’ve never had it. Diaya (sp?) cheddar is a good replacement for American cheese. The violife parmesan is like 7/10. Forager cashew Sour cream is like 10/10 taste 3/10 texture, contains unlabeled corn in the vinegar. Silk heavy cream may or may not whip taste 9/10. Miyokos creamery mozzarella, 6/10 mozzarella, 10/10 as general soft cheese.
I recommend that instead of looking for substitute ingredients (never satisfactory) for recipes that traditionally contain dairy, you focus instead on getting familiar with cuisines which naturally developed without using dairy. In other words: time to learn various Asian cuisines.
Many aged cheeses' naturally occurring bacteria eat up all the lactose during the aging process. Easy way to see if a cheese contains lactose is to check the label for carbohydrates. If something contains sugar, it will have "ose" in it's name, like lactose, and will read as having carbohydrate content. Sharp, aged cheddar, Romano, Parmesano Reggiano will likely read ZERO carbs and should not upset your GI tract.
I also like cooking butternut squash with pineapple, cinnamon, cloves and sucralose on an instant pot at 90 Celsius for a couple of hours for a healthy dessert. You can also do the same with grated coconut instead of the pineapple and a bit of lime or lemon juice when you're done cooking. You can obviously use sugar instead of the sucralose, but I don't see much of a benefit...

Cashew milk (or coconut milk for anything curry) is a really good dairy milk substitute.

Just Microwave the whole Squash for 4 minutes, the skin and the flesh get hot and soft and you can cut through it with very little effort.
