If your texture isn’t what you’re wanting you may need to increase your xanthan gum. In baking both sugar and gluten contribute to the texture we have come to love in most western cultures, and the sugar substitutes available today have a breakdown point lower than most baking recipes. You can also use cornstarch ( corn flour) as an addition if you’re able to have corn.
Also reducing the amount of leavener can help iirc - from the description these have two different raising agents, I'd maybe try cutting the baking powder and just using baking soda
If your using regular flour would you still need the xanthan gum? I've never had that ingredient show up in a recipe before so I was wondering where it fit in and if it was replacing something the gluten does.

omg I made these when I got home after watching this vid and they were SO GOOD. I used wheat flour and regular sugar (halved) and then made cream cheese icing for on top.

What's the reason for using cups anyway? Every substance has different density, so a cup of something will not be the same thing as a cup of another thing. I suppose in baking you only ever use flour and sugar, so it doesn't matter, but I feel like saying 160 g of something is just more helpful. It's definitely quicker, but very confusing. :D
@@Pavlinka__ I guess these days using a food scale would be about as affordable as buying cups. I've never owned a food scale, but googling them I see they're about $10. Cups cost about $1, so not a big deal now. 200 years ago, though, cups would have been much cheaper and easier to use than trying to acquire a manual scale and keep it accurate enough to do measurements. My grandmothers and parents taught me to cook, and I doubt they could have afforded a food scale prior to the 70's or 80's, but they'd been cooking for years by then. At that point, it's a matter of having to relearn how you're doing everything. I can guesstimate what I need a lot of the time using cups because I've been cooking for about 40 years now (started young), but I'd be lost using a scale; I've never used one for food before. Digital food scales weren't really affordable before the 90's to the average person, so cups just made more sense. Times keep on changing things, though. :)

"A weird thing Americans do where they don't measure, they just say cup." LOLOL - the cups are our measurements. 1 cup = 8 ounces. Oh dear, you guys don't have ounces either.... nevermind our system is super stupid afterall ♥
Actually she was right. Instead of measuring the weight of the ingredients, most Americans use a cup or spoon to measure the volume, which actually measures the volume of the ingredients and the air between the ingredients. So a cup of walnuts for example isn’t actually going to give a cup of walnuts because a small portion of the volume will be omitted since the walnuts aren’t fit perfectly together within the cup. A cup of chopped walnuts will have more walnuts than a cup of whole walnuts because the walnuts are able to fit closer together leaving less air. And a cup of flour could be an entirely different amount depending on the humidity, how tightly you pack the flour into the cup, how finely the flour is ground, etc. So you’re not really measuring the ingredients at all, just roughly estimating the volume and hoping that you’re close enough that it won’t make a difference.
In Australia we use cups too, but with metric measurements on the side. Like 1 cup = 250 mL. Grams would be more precise, but for things with high air space like nuts there's not much need for precision in my experience. Lots of people here have scales these days so depends on the household. Most recipes will have both measurements.
As a reward for letting this become a series I'd love to see you too baking a savory treat or a main course type thing. As thats more lie cooking Claude will hopefully be less bothered about participating. Maybe something sweet potato?
My mum recently started to be on a FODMAP diet to help with some digestive problems she was having and I really wanted to find things to bake for her because a lot of gluten free baked things she used to have aren't low FODMAP so this recipe is going to be really useful for me!

We do, but (unhelpfully) 1 cup [US] = 0.946 352 946 cup [metric] (and 1 cup [US] = 1.040 842 730 8 cup [Canada])

These are my dad’s favorite cookies! We make them every fall; always with raisins and sometimes with walnuts. So delicious! 🥰
