Low FODMAP Banana Muffins Recipe:
220g gluten free flour
1tbsp flax seed meal
1 tsp bicarbonate soda
1/2 tsp salt
120ml oil
100g sugar (or 10g artificial sugar)
100g brown sugar (10g artificial brown sugar)
2 large eggs
3 ripe bananas
75g walnuts
- mix flour, flaxseed, bicarb, salt,
- in a separate bowl mix oil, sugar, brown sugar, eggs
- mash bananas and add to wet ingredients
- slowly add wet ingredients to dry ingredients
- finely chop walnuts and add to mixture
- bake at 180C/350F for 20-25 minutes

If you're able to have them, cornbread muffins are a really good savoury recipe for baking. They can still be a little bit sweet though.

Also strawberries are not berries or fruit, avocados are fruits, tomatoes are scientifically fruits but in the US they’re legally vegetables, pumpkins are fruits, so are peppers

This really made my night! There was a man outside my college today "preaching" homophobia and it was so hurtful I had to go to the washroom to stop crying. As someone who is allergic to eggs, yes there are egg substitutes! I also quite like using apple sauce as an egg replacement since egg is usually only used as a binding agent! Also as someone who needs to follow a low FODMAP diet and a baker I appreciate being able to find someone making a recipe that follows that!!

I recently was introduced to a pizza dough recipe called Fat Head Pizza - it's gluten free but uses cream cheese and mozzarella cheese with almond flour. My wife, who normally is critical of my baking, really liked it.

I love baking, but I can only really bake for others- I have a billion random food intolerances, and accomidating them all tends to make food that other people don't want to eat. Watching you have fun, and your wife at least trying the muffins?? Gives me hope

Maybe Claudia would like my "egg cups", I have them regularly for work lunches and they can be eaten hot or cold. Recipe makes 24:
24 large eggs
2 cups spinach (if using canned or frozen make sure it is thawed / very well drained. If using fresh chip or shred.)
1 block dairy free / low lactose /goat's cheese
2-3 tbs flax seeds
(I would add onions and garlic but these can be left out)
Crack eggs into bowl. Add salt and pepper to taste (don't be stingy you don't want to underseason), add flax & whisk. Add spinach and whisk again. Chop cheese into small, even cubes while oven warms to 175. Roughly half-fill each well of 2 oiled muffin tins then distribute cheese cubes evenly. Bake for 25 minutes or until well risen and coming away from the edges.
You can play around with the recipe and use whatever "fillings" you want (or diet permits): peppers, ham, etc.
