  • Three Dots and a Dash is a tiki classic created during World War II by the godfather of tiki, Donn Beach. The name means "victory" in Morse Code.
    The recipe calls for a rhum agricole which was originally distilled in the French Caribbean islands. Made from sugar cane juice rather than molasses, the resulting 'cane juice rum' is complex and exhibits a grassy, vegetal note from the fresh sugarcane.
    The cocktail features typical tiki flavours of aged cane spirit, citrus and spice. The Allspice Dram (also known as Pimento Dram) adds cinnamon, clove and nutmeg accents.

    INGREDIENTS
    - 45ml Rhum Agricole (1.5 oz)
    - 15ml Aged Rum (0.5 oz)
    - 7.5ml Velvet Falernum (0.25 oz)
    - 7.5ml Allspice Dram (0.25 oz)
    - 15ml Fresh Lime Juice (0.5 oz)
    - 15ml Orange Juice (0.5 oz)
    - 15ml 1:1 Honey Syrup (0.5 oz)
    - Dash of Angostura bitters
    METHOD
    1. Combine all the ingredients into a cocktail shaker
    2. Shake with crushed ice (optionally, flash blend with crushed ice)
    3. Dump the contents into a pilsner glass
    4. Top with crushed ice if needed
    5. Garnish with a pineapple 'dash' and 3 maraschino 'dots'

    Steve, try this drink, I call it a gin squared:
    1.5oz preferred gin
    .75oz domain de Canton ginger liqueur
    .75oz lemon juice
    Shake, strain over ice. Add preferred garnish.

    Nah Steve don't doubt that it's worthwhile. We can mail order most of the fixings, and Tiki drinks are great for a bit of escapism at times like this.
    There was a great tiny little Tiki bar down in Hobart when I was there for uni, got quite miserable and dark down there at times during winter, nothing better than to escape it by going down to the bar where they'd have the heating cranked. Tear off the jumper, unveil the Hawaiian shirt, LARP at being in the Tropics for a few hours.

    REally enjoyed the book and how it presents the stories/Recipes. Their method of listing rums helps to create layers of flavours. Also got some straws from Andrew and some custom ones as well. Cant wait!

      100% agree, the way they explain the rums and ingredients is ideal for either a beginner or pro... Andrew's straws are awesome.. I was skeptical about using a glass straw at first but alas, they are almost unbreakable!!

    Allspice is called allspice because it tastes like a combination of cloves, cinnamon, and nutmeg or “all” the spices. Something like that lol.

    Well done 👍, i think this cocktail is a great introduction to rhum agricole. I really love agricole and sugar cane juice rums, they are excellent stuff if you want something lighter and more aromatic than your standard molasses based rums, and there is quite a lot of variety, for example the Haitian clairins are very different to Martinique agricoles.
    Also if you want some simple tiki for next vid, i recommend the Kaiteur swizzle from the smugglers cove book, excellent but simple drink. ✨👌

    Looks tasty. About the orange juice. A friend showed me trick. You get clementines or mandarin oranges (any small orange) you can use them in your lime/lemon squeeze juicer.

    Made this one to celebrate patio drinking on the first warm day of spring. I used Smith & Cross as the sub for the 0.5 oz aged rum and it gave the drink some banana character underneath it all. ☀️🍹🌴 😎

    Damn boy, that VSOP ain't cheap! I keep Rhum JM gold at home for tiki drinks but I usually only use the VSOP in a stirred drink or sip it neat

      @@StevetheBartender_ made it a 1.5 week ago, now I got to use it in a very good cocktail. At first I thought did it wrong a couple of pimento drams online looked lighter of color, mine came out pitch black and yours is pitch black as well. But instead of allspice berries I used pimento powder. (Filtring wasn't easy)

      Pyrex is a brand name not the type of glass while Pyrex dishes are made of borosilokit glass that does not mean everything made of it is so he was correct in not saying the straw was made of Pyrex for the above mentioned reason

    A lot of foods and drinks during Ww2 were named victory. I know that a lot of German foods were renamed that, like sauerkraut being renamed "victory cabbage".

    You didn't actually say it so I will, three dots and a dash is morse code for V. It's featured prominently in the soundtrack for The Longest Day - 1962, and the first four notes to Beethoven's fifth. This is the first video of yours I have seen and as I am piqued, I believe I'll stick around. Usually I drink neat scotch, because I'm lazy, and diabetic.     Steve I was wondering what your go to brand of syrups would be , how do you rate monin? I am starting a mocktail bar (at least was about to before this virus) hoping to go forward at a later date, without blowing smoke you are an inspiration

      Same for me too guy is awesome ... monin isn’t the worst .. just not the best some have all natural flavors some artificial ... if you can weed those out should be good ... my advice making your own in batches if you’re doing it for a bar... lots of places will make you white label products as well you just tell them what you want and they make it the way you want it ... that being said making your own always best option

      I haven’t used Monin for over 15 years sorry so I can’t recall what they are like.. fresh is always better though... but these days there are many companies making great products without artificial colours and preservatives.. try sourcing them in your country 🙌

      ​@@ryano136 Also in Hong Kong, I have found Giffard syrups to be quite good when I need to rely on them. Their Orgeat is great!
      What kind of syrups are you making that are having trouble with sourcing? Pomegranates are often reasonably priced, as as passionfruits, at the wet markets. Cinnamon you can find at Southeast Asian grocery stores, and coconut milk practically everywhere.
      The main issue I had was finding a good supply of large limes for a decent price. Usually you find the small Thai ones, which taste great but yield very little juice (and are expensive because of this). I am lucky that my local market sells large limes for about $7 HKD each.

    What's the difference between rhum agricole and cachaça?

      Incidentally, during WWII the opening bars of the BBC radio service jingle played V as a nod to those under enemy occupation.
