THREE DOTS AND A DASH - Classic Tiki Cocktail by Don the Beachcomber!
Вставка
- Опубліковано 3 кві 2020
- Three Dots and a Dash is a tiki classic created during World War II by the godfather of tiki, Donn Beach. The name means "victory" in Morse Code.
The recipe calls for a rhum agricole which was originally distilled in the French Caribbean islands. Made from sugar cane juice rather than molasses, the resulting 'cane juice rum' is complex and exhibits a grassy, vegetal note from the fresh sugarcane.
The cocktail features typical tiki flavours of aged cane spirit, citrus and spice. The Allspice Dram (also known as Pimento Dram) adds cinnamon, clove and nutmeg accents.

Steve the Bartender Hi Steve! What kind of cocktails would you make utilizing El Dorado 12, preferably something leaning towards the sweet and sour side with not too many ingredients (because of the lockdown)? Stay safe! Love from the country with the northern lights 🇸🇪 💫
Hey Steve, FYI, I just ordered 4 of the Surfside Sips glass straws for my tiki cocktails. I can't wait for them to arrive. Thanks for the discount code! 👍👍
That smile gets me every time
Emma S yes!!!!
Steve, try this drink, I call it a gin squared:
1.5oz preferred gin
.75oz domain de Canton ginger liqueur
.75oz lemon juice
Shake, strain over ice. Add preferred garnish.
I like your smile, when you are shaking the cocktail.
I always wait for the smile to press the like button.
Does today’s video get 8 likes then? 🤔
Nah Steve don't doubt that it's worthwhile. We can mail order most of the fixings, and Tiki drinks are great for a bit of escapism at times like this.
There was a great tiny little Tiki bar down in Hobart when I was there for uni, got quite miserable and dark down there at times during winter, nothing better than to escape it by going down to the bar where they'd have the heating cranked. Tear off the jumper, unveil the Hawaiian shirt, LARP at being in the Tropics for a few hours.
Love this one! Pimento/Allspice is so underrated! I've used it a bunch in a few of my cocktails! Cheers!
Love from the Caribbean 🤗
Cool! Where in the Caribbean? 😁
Trinidad and Tobago
Cheers steve! Loving your hustle with the daily videos, looks like the hard work is paying off. Cant wait to try this one.
thank you so much for including oz in all your videos💙💙
This is an amazing drink! Thanks for sharing!
Great choice Mr. Steve,
Three Dots and Dash is a delicious complex drink. I had this drink at a Tiki Bar called, Halle Pelle in Portland Oregon . Thanks for sharing.
Steve !!! My favorite cocktail!!
Looks delicious
I was telling my wife how you smile every time you shake and how I love it. And we watched a martini episode and you let me down. Keep up the great work. The espresso martini is my new favorite.
REally enjoyed the book and how it presents the stories/Recipes. Their method of listing rums helps to create layers of flavours. Also got some straws from Andrew and some custom ones as well. Cant wait!
100% agree, the way they explain the rums and ingredients is ideal for either a beginner or pro... Andrew's straws are awesome.. I was skeptical about using a glass straw at first but alas, they are almost unbreakable!!
your videos gets me through the lockdown at ease
Love Tiki cocktails! Love your channel! Keep up the good work mate! ❤️🍹👍
Thanks LMTC!
Its a great drink!
delicious, thanks for the book recommendation as well
Allspice is called allspice because it tastes like a combination of cloves, cinnamon, and nutmeg or “all” the spices. Something like that lol.
Yes that’s correct.
My favorite tiki bar in Chicago ❤️
Looks good! Been meaning to make this drink and since the weather is getting nicer now seems like a good time, plus this has 3 of my "pantry" ingredients. I'll have to improvise with the dash in my garnish though. :)
This looks really delicious.
Lovely drink made by a lovely guy in a lovely way. 💜 What more to ask for? Now so want one! 🥂
Hitting 350k by month's end looks real good. The word is getting out. Thanks for another great looking tiki cocktail. Plus the link for the straws. Cheers!
Love your videos
Tiki cocktail you say? Don the Beachcomber? Alright here I am loving every minute!!
Great video. I'll be glad when this lock down is over so we can have a party....
Party time!! 🥳
Well done 👍, i think this cocktail is a great introduction to rhum agricole. I really love agricole and sugar cane juice rums, they are excellent stuff if you want something lighter and more aromatic than your standard molasses based rums, and there is quite a lot of variety, for example the Haitian clairins are very different to Martinique agricoles.
Also if you want some simple tiki for next vid, i recommend the Kaiteur swizzle from the smugglers cove book, excellent but simple drink. ✨👌
Looks tasty. About the orange juice. A friend showed me trick. You get clementines or mandarin oranges (any small orange) you can use them in your lime/lemon squeeze juicer.
The first time I saw him smile I was like wtf why is he smiling... Now I'm just watching the videos to see the smile 😁👍🏼❤️
Razor MacTavish Same here. It just grows on you...🐾.
Made this one to celebrate patio drinking on the first warm day of spring. I used Smith & Cross as the sub for the 0.5 oz aged rum and it gave the drink some banana character underneath it all. ☀️🍹🌴 😎
I have- Gin,Cynar,Aperol,Triple Sec,Tequila,Pastis,Midori,White rum and some Angostura.
I'm drinking your recipe as I write and it's pretty good. I only used a barspoon of Allspice Dram because it really pops for me so I have to tone it down. Cheers.
Love this drink! My favorite tiki drink however is a Jet Pilot. Would love to see you make one!
I’ve done the Test Pilot: ua-cam.com/video/h4G0_x8Utys/v-deo.html
Great video! I love when you don't edit away all the "mistakes", it feels a lot more laid back and fun. Also, could you sub in Cachaça if you don't have Rum Agricole? I know it'd technically be a different drink but, wouldn't that get you pretty close? #lockdown
That looks naughty that Steve !!
Tiki 😍😍😍😍
❤
Damn boy, that VSOP ain't cheap! I keep Rhum JM gold at home for tiki drinks but I usually only use the VSOP in a stirred drink or sip it neat
Tiki tiki 🔥
I love tiki cocktails... my problem, very hard to get some ingredients in Argentina
Hi Steve! I’ve got an idea for you.. Why don’t you start a series of videos where you rank your favorite Gin / Vodka / Whisky / etc. brands? I’d love it and you could give advice to which one is the best in quality/price for example
Leave a like so he can see this!
Cheers mate!
This cocktsil is so damn good, made it today with a homemade allspice dram.
Nice one! Did you already have the dram or did you make it specifically for this?
@@StevetheBartender_ made it a 1.5 week ago, now I got to use it in a very good cocktail. At first I thought did it wrong a couple of pimento drams online looked lighter of color, mine came out pitch black and yours is pitch black as well. But instead of allspice berries I used pimento powder. (Filtring wasn't easy)
Nice work Steve . I need to get me some of that agricole rum. Any suggestions?
From Russia with respect
Yes mate! More tiki! #notbiased 😂
I"m just here for the smile
Is it possible if you could provide some Mocktail recipes on your channel as well?
In order to get big arms like Steve, you just gotta shake cocktails often, no need to hit the gym! Shaking is both a tricep and bicep burner ;)
Haha 💪
Hey Steve, how does it look like with app for iphone? I’d love to try it!
Looks great. When’s your app coming to iPhone? I’m bored in the house and I’m in the house bored
Legend Steve! OK Ready? BOR-O-SILL-I-KIT. it’s the same as Pyrex.
Pyrex is a brand name not the type of glass while Pyrex dishes are made of borosilokit glass that does not mean everything made of it is so he was correct in not saying the straw was made of Pyrex for the above mentioned reason
Touché
A lot of foods and drinks during Ww2 were named victory. I know that a lot of German foods were renamed that, like sauerkraut being renamed "victory cabbage".
Victory cabbage!? Love it! My wife is German :-)
@@StevetheBartender_ I'm mostly German! (my name isn't really Noscenti) That's really cool!!
@@StevetheBartender_ you just broke a lot of hearts with that reply lol 😆
Looks like an exciting combination of flavours! You mentioned alternatives to the blended aged rum you're using, what are those?
El Dorado 12 or 8 is perfect with this cocktail.
Hey Steve just figure I let you know I bought a nice glass Royal blue smoothie straw very nice thank you
Nice one! You’ll love them..!
You didn't actually say it so I will, three dots and a dash is morse code for V. It's featured prominently in the soundtrack for The Longest Day - 1962, and the first four notes to Beethoven's fifth. This is the first video of yours I have seen and as I am piqued, I believe I'll stick around. Usually I drink neat scotch, because I'm lazy, and diabetic. But the lazy, hazy, crazy days of summer are coming and I'm game to expand my horizons. Slàinte mhath.
Gold peak raspberry iced tea and honey Jim beam
Can you please do a Million Dollar from the anime Hinamatsuri?
Do you think you could sub in Suze Chartreuse etc. for the piment dram? I have everything but that. Love the video but you knew that.
You could but it would be a very different flavour.. pimento berries / allspice taste like cinnamon, nutmeg and clove - try making a syrup with these.. or there is a link in the description to make Pimento Dram..
Steve could you please do some drinks that have coffee liquor in it? I love espresso martini and i want to try something new
I have a video with 3 easy cocktails with coffee liquor in them ... one of them is a easy frozen mudslide check me out!
I was wondering how you get or make your ice every time?
With my ice machine 😁
When you say flash blending, do you mean like a one second pulse?
Yes, just briefly..
Steve I was wondering what your go to brand of syrups would be , how do you rate monin? I am starting a mocktail bar (at least was about to before this virus) hoping to go forward at a later date, without blowing smoke you are an inspiration
Same for me too guy is awesome ... monin isn’t the worst .. just not the best some have all natural flavors some artificial ... if you can weed those out should be good ... my advice making your own in batches if you’re doing it for a bar... lots of places will make you white label products as well you just tell them what you want and they make it the way you want it ... that being said making your own always best option
I haven’t used Monin for over 15 years sorry so I can’t recall what they are like.. fresh is always better though... but these days there are many companies making great products without artificial colours and preservatives.. try sourcing them in your country 🙌
I offer my glass straws at wholesale! Mocktails are great sipped through glass.
Thank you so much for all the replies and advice fellas, yes I would love to make my own but to be honest fruit is so expensive in Hong Kong as it is all imported, will carry on with my due diligence, thanks again
@@ryano136 Also in Hong Kong, I have found Giffard syrups to be quite good when I need to rely on them. Their Orgeat is great!
What kind of syrups are you making that are having trouble with sourcing? Pomegranates are often reasonably priced, as as passionfruits, at the wet markets. Cinnamon you can find at Southeast Asian grocery stores, and coconut milk practically everywhere.
The main issue I had was finding a good supply of large limes for a decent price. Usually you find the small Thai ones, which taste great but yield very little juice (and are expensive because of this). I am lucky that my local market sells large limes for about $7 HKD each.
Hi Steve do you know when you will be releasing your cocktail app for iPhones?
No release date unfortunately, will definitely announce it on the channel when it’s available 👌
Steve the Bartender thanks Steve
Steve I am from India why don't you show a top angle of the drink from the ceiling camera it will look awesome
So when are we going to see Kat on camera beyond the mysterious hand, or her throwing citrus fruits at you and nearly hitting the drinks?
Greg and Leandro have gotten their behind the camera crews up front... now it's your turn!
What's the difference between rhum agricole and cachaça?
Generally Cachaca is distilled to a lower ABV compared to Rhum Agricole. Here’s a good read: www.amountainofcrushedice.com/?p=16666
Given the choice, would you rather have pineapple spears in the eyes or lemon juice......
Okay. You keep mentioning the book you get these from. I kind of want to buy it. But much rather see you make the actual drink
The smugglers cove book is available as an e book, much cheaper than a regular book. 👍
I cant find Pimento Dram anywhere, any substitutes?
It takes a bit of time, but you can make it yourself. Here is the recipe I used and it came out great! www.seriouseats.com/recipes/2012/02/diy-allspice-dram-make-your-own-st-elizabeths-pimento-dram-recipe.html
Yep, as George said.. you can DIY.
Thx guys!
And what is flash blending?ah okay, on websites it showed a different kind of blender for flash shaking it.
3:31 briefly blending it..
“In just three or four short seconds of ‘flash blending’ it will effectively chill, perfectly dilute and aerate your cocktail, making it frothy, waking up the citrus and pushing the aromatics to the surface of the drink as the air rises,”
Maybe the blender does balance it out then given your reaction to shakn it
Good luck going back to a couple of videos a week instead of 1 a day
Man, it’s a lot of work on top of everything else.. I need a video editor!
@@StevetheBartender_ i completely agree that way ypu can do 2 videos a day
If the Comissary falernum is better than the JDT Velvet, why not use that in that drink?
I was making the original recipe which calls for Velvet Falernum... and I did, I made it with both..
Weird name but ok
Edit:
I hope am not the only one with the problem of drinking too fast, lol. If I have a drink, I gotta, well, drink it. Constantly, at least sipping
me too chugging Shit is fun but can get pricey$$$ lol
@@AlcoHello yeah man, that's my main problem. That's why my favourite mix is a off-brand Jägermeister at 6'5€ mixed with an energy drink that goes at 1'1€/1'5lts :p
I think it’s a clever name :-) I’m the same. I drink things too quickly..
Steve the Bartender especially tiki drinks!
Is this cocktail like a zombie or variation of one
•••- is Morse Code for V
V was short for Victory in WWII
That makes more sense, I was wondering what ST meant as a cocktail name.
Incidentally, during WWII the opening bars of the BBC radio service jingle played V as a nod to those under enemy occupation.
I want to be locked down in your house!
Does that mean I've been putting alcohol in my pits all these years?
Hey?
These are very good glasses, i have a pair of these in double old fashon style, next cocktail i make I'll post on instagram. dionisis001, I hope you see it!
The Video is Fake!
