Made these for a ladies luncheon recently, and got RAVE reviews. They were delicious. Since it was all for ladies who sometimes pretend to be healthy conscious, I subbed in a single cup of whole wheat flour and still did the rest all purpose. Still rose beautifully and the color and flavor was phenomenal! I am already getting requests to make them again for the next luncheon.

I’ve made these three times - the recipe is very similar to my grandmother’s - but is “easier” using the mixer and there is not a second rise time. My only question - each and every time I’ve done them the 5 cups of flour is just not enough - my dough after the 7 minute knead time falls of the hook as an almost thick batter and very sticky. The first time I added almost an extra cup of flour - the last two tries I’ve cut the milk back by a tad and didn’t add too much extra flour - will see how it is after the rise. Just don’t know how you got your dough that stiff to hang off your dough hook and not stick to your hands with only 5 cups of flour. Recipe is delicious and I’m not complaining (since this is the recipe I’m using for thanksgiving!) but wondered if anyone has l actually made these yet like me and found the dough very wet. Thank you!
I came across the same issue and for some reason it didn't double in size even tho I added the yeast to it hmmm. I'll keep practicing in the meantime. Nice to know I wasn't the only one that may have to tweek the recipe just a tad. 😊

its possible this is because of how imprecise cup measurements are for flour. If you dip a measuring cup into the bag and level, the flour is more compacted this way, with 1 US cup of flour weighing about 155 grams or 5.5 ounces using this measuring method. If you spoon the flour into the measuring cup and then level, the flour is less compacted, will weight about 120g or 4.2 ounces per cup. The spoon-in method is the expected standard for volume measurement of flour, however recipies often do not specify which method to use or provide a more accurate weight measurement for the expected amount.

This recipe reminds me of a no-knead recipe my mom used to make for the holidays, but I think this would be more consistent. Can't go too wrong with a yeasted milk dough with lots of butter.

Yes, they can. Let the dough rise first. Next, divide them into rolls and place them into the freezer on a flat pan. Be sure and leave space between them. After an hour you can place them into a plastic zip bag and freeze them. To make them take them out and let them rise for 2.5 to 3 hours (depending on your environment). Cover with melted butter and cook them as you normally would.

❤❤❤ Well, I made these Dinner Rolls last night and underbaked slightly so I could finish them off in the oven so they will be hot and for a little more browning just before my Thanksgiving dinner. Let me tell you, these rolls are delicious!!! They were easy, light and fluffy, and turned out great!!! Mine may not look as perfect as Claudia’s, but they are perfect for me. These will be my “go to” dinner rolls for years to come! Thanks for a great recipe!!!
@@Greens5511 I made them again last night for Christmas dinner, I let them go through the first rise, then shaped them in 2.5 oz. balls and now they’re in the freezer. I will take them out tonight, (Christmas Eve) and let them thaw naturally and allow for the second rise and then bake them off in the morning. I will update after I see how this method works! (After all, we can buy frozen dough balls all the time at the grocery). 🙏🏻

Making these now i didnt have the instant yeast so i just added a tablespoon of the sugar to my warm milk first and added my yeast let it proof for about 10 mins. I also warmed my butter and shortning before adding to my milk and yeast mixture. We are on our 1st proof now I'll try to remember to update if this worked for me

@slowmotionfood8108 it depends on how warm your kitchen is, I put mine in the oven turned off with the light on for an hour. After I formed the dough, I let them rise again for another 30 to 45 minutes.

I didn’t really have exact time but I think it’s about 2 hrs more or less depending on the temperature in the house.

❤❤❤ Well, I made these Dinner Rolls last night and underbaked slightly so I could finish them off in the oven so they will be hot and for a little more browning just before my Thanksgiving dinner. Let me tell you, these rolls are delicious!!! They were easy, light and fluffy, and turned out great!!! Mine may not look as perfect as Claudia’s, but they are perfect for me. These will be my “go to” dinner rolls for years to come! Thanks for a great recipe!!!
That is a great idea to under bake them to heat them up for the meal, I need to try that!
@@Greens5511 I made them again last night for Christmas dinner, I let them go through the first rise, then shaped them in 2.5 oz. balls and now they’re in the freezer. I will take them out tonight, (Christmas Eve) and let them thaw naturally and allow for the second rise and then bake them off in the morning. I will update after I see how this method works! (After all, we can buy frozen dough balls all the time at the grocery). 🙏🏻

Definitely going to make these! Love the idea of using the stand up mixer. they look so yummy!! can theses be frozen BEFORE baking? Trying to make ahead of time for the holidays
If I’m trying to make the dough the day before do I just place it in the fridge and bake them the next day? 😊 or how do I go about that?

This seems fairly easy to make. I love dinner rolls so I’m going to definitely try this recipe.
Making these now i didnt have the instant yeast so i just added a tablespoon of the sugar to my warm milk first and added my yeast let it proof for about 10 mins. I also warmed my butter and shortning before adding to my milk and yeast mixture. We are on our 1st proof now I'll try to remember to update if this worked for me

Hello, when is the best time to make the dinner rolls for Thanksgiving day ? A day before or two days before or the day of ? Also, can I make the dough a few days or a day before I bake the dough ?

How long did they take to rise the first time?
@slowmotionfood8108 it depends on how warm your kitchen is, I put mine in the oven turned off with the light on for an hour. After I formed the dough, I let them rise again for another 30 to 45 minutes.

Can I use this recipe to make the dough and put in fridge the night before I want to bake them? Or does the dough have to be kept warm and cooked right away?
