    I'm fermenting under pressure in the Fermentasaurus conical fermenter. If you're not using a pressurized fermenting vessel I would suggest fermenting a bit colder and for longer if you're using lager yeast.

    Interesting recipe. I've brewed about a dozen rice beers over the years. I've used flaked rice a couple times and Louisiana medium grain rice for the rest. I didn't like the flaked rice as much as using regular white rice. I cook the rice with some crushed malt and much more water than you would normally cook rice. Once this mixture is cooked, I will add it to the rest of the barley malt mash to bring it up to mash temperature (150-152F for a light bodied beer). The ratio is about 2/3's barley malt to 1/3 rice at 12.5 plato, your basic American Premium Lager. It's a nice beer to drink. I should make one soon as it's been many years since the last.

    Man, what a wonderful colour the black rice has! I just brewed a Asian Spiced Californian Common with 1.5kg’s of Jasmine Basmati, I didn’t rinse ( I do if I’m cooking) because I thought I’d loose valuable starch but as it goes the cooked rice turned into a thick cake which made it a bit tricky to break up in the mash. I managed to loosen it up and my efficiency was sky high giving me another 4 litres of beer. I will upload a G2G of it very soon as it’s been in the bottle now for over a month. The lager you have brewed looks amazing, as most of yours do👍🏻 cheers 🍺🍻

    Great video Dr. Thanks for all the hard work making a full grain to glass. I have not brewed with rice yet. I have thought that if I did I would try to crack the rice grains before boiling to get a better extraction. Yes I agree, a bigger pot and longer cooking time would seem to have helped also. Especially with the black rice. All in all, you got beer and a very nice beer. Cheers.

    You only need to rinse your rice if it indicates on the bag that you should. Typically bulk rice in huge sacs is the rice you need to rinse, smaller store bought packages as the one's shown in the video do not need to be washed (unless otherwise stated). Cheers! Hope this helps :)

    Rice: will make sense to rinse like you did. Normally you do it to remove impurities, in this sense also starch, which is ferment able? Don’t think you lose a lot.
    To skim or not: again, was brought up with foam on boiling liquids is impurities, so I skim 😊

    Rinsing the rice with cold water should not affect starch really, its the hot wawa and enzymes that will affect it. However, rinsing the rice will get rid of dust and bug parts that inevitably gets in there as part of manufacturing/transport. I also believe that many companies may not put anything artificial in the food, however many times packaging is coated with chem,icals that slow bacteria, so rinsing is def not a bad thang!!! ....... BTW, love the video on brewin with rice, I been wanting to Brew and IPA and add some brown basmati rice, lemon grass and nutmeg perhaps...... still playing with it in my twisted head!

    Yes to rinsing rice..get rid of dust and etc. Also, use organic rice, you really want to avoid arsenic (and pesticides) from the vermin poisons rice farmers use. The starch conversion is a fascinating scientific subject..there are reasons to not cool after heating, or rather avoid repeated hot and cool cycles, the starches can fold back up, it’s actually a fairly complicated topic..

      DrHans Brewery looking at the recipes it’s gonna be a cross between a Japanese and American rice lagers, but, will need to do a stock take of what I have remaining. Fingers crossed!

    It is recommended to rinse rice several times to remove any arsenic. I think brown rice has more than white rice. You can look it up.
    I quit checking my mash with iodine years ago. Maybe with rice you need to mash a little longer but I wouldn't worry too much about it. Good video.

      Ah nice note there. I have always rinsed my rice so it's a natural step for me. I don't do the iodine test myself either. But I've have got some questions about it so I'd thought I would show it. Thanks mate, cheers!

    Yes..the iodine test only shows when conversion hasn’t finished, but not when it “has” completely finished. I’ve seen lots of experiments where the test shows finished, but the sugars continue to increase..so, maybe 15-30 minutes after it shows done would get a few more points and maybe some more unfermentables as well.

    Nice video DrHans
    Yes, you are losing some starches rinsing, but also getting rid of any dirt and rubbish that may have made it into the rice pack.
    I keep meaning to try and brew something using red yeast rice.
    It's very expensive here in Australia from the health food stores, but quite cheap in China, so I get people to bring it back for me when they go there 👍
    Not sure if you can make actually make a beer with it, but it's nice in fermented pickles.
    When I actually try it I'll let you know and do some video footage whether it works or is a total disaster.

    We recreated your recipe, but cooked the rice properly. We got 1.040 as post boil gravity. Fermenting using Brewferm Lager yeast in a bucket at 12/13ºC. At day 14 gravity was 1.012. Tomorrow will be day 16 of fermentation and will make another gravity read.

      @@DrHansBrewery FG was 1.011. ABV around 3.8% if my math is correct. Just started cold crashing. We'll keg it, force carbon and then we'll see...

      @@DrHansBrewery our first batch is still lagering in a keg. Is there a chance you'll be interested in tasting and sending us your feedback once we bottle it? Today we made a second batch of the same recipe. Made a few corrections to the brewing process and got a preboil gravity of 1.040 (brewfather said 1.041) and an initial gravity of 1.048 (brewfather said 1.045). This time we're using saflager s189. Cheers.

    Here's an experiment for the rice rinsing. Collect your rinse water ( use a 1liter clear water amount to start with ) and take a gravity reading of the rinse. It might be worth keeping? And you can determine the absorption rate of rice.

    another high quality video. thanks Doc. I assume the boiling of the rice is to break it down to make it mushy. maybe that is part of the reason there was no sticking mash problems. it would be interesting to see how everything came out with longer boiling time of the rice. too bad it wasn't pink. cheers Doc

    Yes you can germinate brown rice with the husk on . Soak it in water overnight. Then put it in a large glass vessel and put it in a dark warm spot. When the the little shoots are about 3/4 length of the rice corn remove the rice and put it in a cloth bag or old pillow case and dry it in a cloth dryer on the lowest setting. After you have to roast the rice to your liking . There is a lot of info on the net how and what temperature to malt the it. Same as malting grains.

      If I was to germinate the rice, would this mean I don’t have to cook it in water now? I can just add it to my grains to be milled?

    Really nice video Doc.! Egen though I usually prefer shorter vids. For color aybe you should try with only black rice next time!? And it was gutsy to boil that much rice in such a small pot!

      My understanding of malting is that it is a germination of the seed, then arresting the germination by drying (heating). Is it possible to germinate store bought rice?

      As long it's brown rice with husk on and not GMO it will sprout. See my reply

    I used to skim the foam, but when I moved to 3 vessel system the wort is so much cleaner when going to boiling that there are hardly any brown foam anymore. Can also see what is left in the mash tun, a layer of brown protein gunk left behind.
    3.5% Folköl/folkøl !

      I would recommend using a brewing software. There are both free and paid. I use Beersmith.

    Looks like a good drop!!! How you think it would work out with using us05 or nottingham. I just got a robobrew v3 and am looking for some different brews to do such as this one but I don't like taking up my fermentation chamber for as long as lagers take. Cheers great vids keep em coming.

    Would you do this again and did the rice bring anything special or is it more for the fun of the experiment?

      I will definitely do it again. Maybe not the exact thing as I like to brew new stuff. But an addition of rice in a stronger beer to lighten it up sounds like a good idea to me. I think the rice brought about what corn does it did remind me off my cream ale quite a bit.

    Another great one. Thanks. Would you happen to have any insight to the importance of temperature control when fermenting under pressure. Is it as important? One could be lead to thinking that the impact of pressure at least at this level somewhat has a bigger impact on the final result than a few degrees fluctuation of the temperature inside the fermenting vessel? This is just speculation from my side, but you are at least on the home-brew side somewhat of an authority on the subject now.

    Nice video and still awesome color even though it didn't get the rice color! :) Maybe next time add some of the dark rice without pre-boiling to the mash. Just to get the color...

    The last few recipes of mine that contained rice, I've put the rice thru a food processor just to increase the surface area. Nothing outrageous, just to cut the the rice up a bit. I don't really see the point in rinsing it either. If your going to be eating it I've heard it's a good practice, for brewing though...I don't know. Also, maybe increase your grain addition. Your diastic power may have been low(Lintner). Try to keep it above 70, but 90 is even better. Good video though, keep up the good work.

      Yes I have been thinking of using a food processor that way. I have a crazy idea for another episode, so stay tuned. Well pilsner malt should have the enzymes to convert a lot of extra starges. I've read 50%. Next time I will not rinse the rice, promise! Cheers buddy!

      @@DrHansBrewery well, each type of grains diastic power is different. Pils is around 125. If half of your grain bill has no diastic power (125÷2=62.5), you've brought your lintner below the recommended 70. Which of course is going to mess with your conversion. Don't confuse total grain bill %, with overall lintner.

      @@DrHansBrewery oh and just as a side note. I doubt rinsing is going to make any appreciable difference in gravity. I just choose not to. If pesticides are a concern, then it may be better to go ahead and rinse. Arguing to rinse/not rinse just seems silly, when we are probably talking less than a point of gravity. I like your videos, keep them coming.

    i dont think you are loosing too much starch because when u rinse, u wash the outside of the seed. the starch is inside of it and it doesnt dissolve in water. the starch u loose is basicly dirt.

      i brewed a 1.125kg pack of black rice as a rice wine using the same yeast/mold balls as you use for chinese rice wine and found the colour was red and it was very packed with tannins, tasted of dry tree leaves. this is probably why its traditionally brewed to be sweet. i also decided to pasteurise it as the yeast killing process and at that stage it tasted like a nice tea. an alcoholic acidic tea. very nice. i needed to backsweeten because i fermented it dry instead of stopping it at a set time.

      I once brewed with rye bread. It turned out really interesting. I need to do it again, but with more bread and adjust the mashing. So what happened was that the wort SG was too low, like very low and in a panic I threw sugar in it. More ABV, but the taste was bland.

    Rice has no fermentable sugars, instead it contains gluten. to turn rice into alcohol you should use rice leaven also known as Qu. Qu not only contains yeast, it also contains Jiuqu. Jiuqu consists of several types of mould which feed on the gluten and turn it into fermentable sugars. However rice will add to the mouthfeel making your beer taste more creamy.

    Yes, why rinse the rice?, boiling will kill any bacteria, and it was rinsed prior to packaging.

      Det finns egentligen tre olika metoder:
      Tid
      Klarningsmedel
      Filtrering
      Just den här ölen minns jag inte, men det var inte filtrering iaf, så de lämnar de andra två.

    You should spend less time showing scooping and shoveling, crushing etc.
