Wouldn't that be getting rid of a lot of the starches that could be converted to sugars? At least if you have enough diastatic power from the grain I'd think you want to keep all that.
I was considering following this recipe. Are you sure that this is the right procedure to follow? I noticed it is different from the saki method of doing it where the time taken for the conversion of starches into sugars takes longer than this. Obviously, using rice will not be expected to increase the ABV to the same extent as when using an equivalent weight of pure sugars as the adjunct.

Try the Zutho if you can get it anywhere, its northeast Indian tribal beer (naga tribe), made from rice flour. It is cloudy and white and tastes a bit fruity. I've a small batch going and so far it looks good.

I rinsed the rice just cause I’ve always done so when cocking. You might be right that I’m loosing starches. It sounds right. Next time I won’t. You’ll need enzymes to convert the starches into sugars so that’s why you need the barley. I add the acid to control the PH. The Iodine where never added to the beer/wort. Only to a sample to read if the conversion was finished. Cheers¡

It was flaked rice, and I fermented very low (60-63 F) and ended up keeping at lager temps for 2+ weeks after that. The surprising thing is that the rice 'flavor' (there is one to me-difficult to describe but maybe light nuttiness) is greatly exaggerated. I cannot figure out why(?)-ale yeast? Did yours have an exceptional rice flavor to it?
Your video inspired me to try brewing with rice. I've since made several beers with rice and they have been delicious. I use 75% Pilsner, 20% Cooked Jasmine Rice, and 5% Munich (10L). Bitter with Magnum to 20IBU and I thrown in an ounce of Saaz at the whirlpool for aroma. I aim for 1.045 and ferment with W-34/70 at around 12-16C ambient temps. Turns out very clean and the delicate flavor of the jasmine rice comes through nicely. Great video as always!
Between 4:44 and 5:56. there was a cut wherein I would have cussed a whole lot because those piece of $#!t grain mills have to be adjusted so many times because they're either not pulling grains in, or the grains are falling through without getting husked. I have been Gin Distilling in Indonesia for a while. Try out lemongrass (Cymbopogon winterianus) in combination with corriander. I can imagine it will give a refreshing touch with clean taste of the rice beer.
@@oceanside88 You need the enzymes from the malt to convert the starches into sugars that can be fermented by the yeast. Theres also malted rice If that does it for you. Or adding enzymes of course.

I personally are not worried about losing starches. I guess you could just add a handfull time more to compensate.

try using glutinous rice which have a slightly higher starch content for a sweeter but stronger beer..
looks great. i wouldn't have added the caramalt though. you mentioned it has a chewiness and that wouldn't be from the rice, but from the caramalt.

Get the cheapest rice you can find they generally have higher starch ( by cheap I mean only pruce wise not like quality wise)
