    It's interesting that you washed the rice, usually to get rid of excess starches, before boiling. And it looks like you drained the rice after the rice boil too. Wouldn't that be getting rid of a lot of the starches that could be converted to sugars? At least if you have enough diastatic power from the grain I'd think you want to keep all that.

    Great video. I'm torn between rinsing and not rinsing the rice. Not rinsing could make it boggy, rinsing loses starch. Your idea here please?

      I personally are not worried about losing starches. I guess you could just add a handfull time more to compensate.

    I was considering following this recipe. Are you sure that this is the right procedure to follow? I noticed it is different from the saki method of doing it where the time taken for the conversion of starches into sugars takes longer than this. Obviously, using rice will not be expected to increase the ABV to the same extent as when using an equivalent weight of pure sugars as the adjunct.

    try using glutinous rice which have a slightly higher starch content for a sweeter but stronger beer..

    looks great. i wouldn't have added the caramalt though. you mentioned it has a chewiness and that wouldn't be from the rice, but from the caramalt.

    Great brew there; I did a brew a few months back but just tossed in some rice flakes, found it boosted the abv but could not notice a difference in the flavour

    Try the Zutho if you can get it anywhere, its northeast Indian tribal beer (naga tribe), made from rice flour. It is cloudy and white and tastes a bit fruity. I've a small batch going and so far it looks good.

    Great video! What an interesting recipe! The bear looks gorgeous and the head retention looks great as well. Your ideas for adding spiced to it next time sounds awesome. Have you thought about adding long grain wild rice to your next recipe or even couscous? Cheers! 🍻

    Good idea on the Asian dish. Maybe try Sorachi Ace as the hop, for the Lemon flavours.
    Thai - Indian - Japanese.

    By rinsing the rice, aren't you washing off/loosing starches? Another home brewer told me "you have to add amylase, if you aren't using Barley, to convert the rice starches into sugars for the yeast", is that true? Why do you add the acid and iodine? Great video, thanks.

      I rinsed the rice just cause I’ve always done so when cocking. You might be right that I’m loosing starches. It sounds right. Next time I won’t. You’ll need enzymes to convert the starches into sugars so that’s why you need the barley. I add the acid to control the PH. The Iodine where never added to the beer/wort. Only to a sample to read if the conversion was finished. Cheers¡

      its always a good idea to wash the rice before using it in any brew, cleaning the rice helps get rid of tac on the rice and kill off any bugs or egsg that could be hiding around in the rice ;D

      I would use koji, (a mix of mold and yeast). The starch from the rice need to be converted to suger by the mold before it can be fermented by the yest. This is how we Asian make our rice wine.

    whats the lactic acid for? if i cant get oat hulls, can i use rice hulls?

      David Sanchez'R I use the lactic acid to control the PH. Yes you can use rice hulls.

    Have you ever brewed with rice? if so what did you brew and how did it turn out?

      I just did-and I've done it with lagers and it turned out as expected. Looking at your video, and experiencing some great crispness out of Fermentis US-05, I tried rice in an ale with this-to the tune of 23%. It was flaked rice, and I fermented very low (60-63 F) and ended up keeping at lager temps for 2+ weeks after that. The surprising thing is that the rice 'flavor' (there is one to me-difficult to describe but maybe light nuttiness) is greatly exaggerated. I cannot figure out why(?)-ale yeast? Did yours have an exceptional rice flavor to it?

      Your video inspired me to try brewing with rice. I've since made several beers with rice and they have been delicious. I use 75% Pilsner, 20% Cooked Jasmine Rice, and 5% Munich (10L). Bitter with Magnum to 20IBU and I thrown in an ounce of Saaz at the whirlpool for aroma. I aim for 1.045 and ferment with W-34/70 at around 12-16C ambient temps. Turns out very clean and the delicate flavor of the jasmine rice comes through nicely. Great video as always!

    Between 4:44 and 5:56. there was a cut wherein I would have cussed a whole lot because those piece of $#!t grain mills have to be adjusted so many times because they're either not pulling grains in, or the grains are falling through without getting husked.       Thanks. Then you need to get your hands on enzymes to convert the starches into sugars. Look into rice wine making.

      Get the cheapest rice you can find they generally have higher starch ( by cheap I mean only pruce wise not like quality wise)

      I have been Gin Distilling in Indonesia for a while. Try out lemongrass (Cymbopogon winterianus) in combination with corriander. I can imagine it will give a refreshing touch with clean taste of the rice beer.

      @@oceanside88 You need the enzymes from the malt to convert the starches into sugars that can be fermented by the yeast. Theres also malted rice If that does it for you. Or adding enzymes of course.
