Amusing COVID related note; a Cuban lady in Miami just told me that she has learned this for the first time during the COVID isolation, that she never had to do it before because of course coffee is sold everywhere in Miami. Where we were standing during this conversation you could see three places to have Cuban coffee, and there were more across the street.... I have just started trying to do this for the same reason, it was funny. I always thought this sugar technique was kind of a magic trick, and have seen it done a few times but never tried it myself until 2020. Thanks for the timely instructions!

Great video! Thank you! I love the idea of using a fork instead of a spoon. I'll share this with my daughter in Miami. My son-in-law is Chilean and he likes Cuban coffee, so she makes it for him every morning. I use my Moka (cafeteria, greca) every morning, and I take it off the stove the instant I hear it gurgle so it won't taste burnt. It finishes brewing off the stove from the heat inside the pot. That's the traditional Italian way. I learned it from Moka tutorials by Annalisa J and I'm Barista Italiano.
I love 'moka pot' coffee. I have a collection of moka pots. This is the best video I've seen about how to make authentic Cuban coffee. I'll try it this way tomorrow.

This looks so good and I love strong coffee since I was a little boy. My father would bring back from Puerto Rican Yaucono Café and put in the Percolator so delicious. I used to only drink Puerto Rican coffee black with sugar no milk but any other coffee I use milk.

Unfortunately I haven't had a chance yet to visit Cuba, I have, however, been to Puerto Rico a few times. There is a little cafe in Old San Juan that makes the best coffee. I have tried and tried to recreate it at home but could never get it right. THIS...this recipe is the closest I've gotten. This is absolutely heavenly, bold and delicious, thank you for sharing. 💙

@@gabepenn7386 I think we're talking about 2 different styles of Cuban coffee. The one you refer to is "café colado" made with the sieve and it's delicious. The one mentioned in the original video is "café con espumita" (o as the Cubans would say "epumita"). This one is made with an Italian espresso pot (therefore much stronger) and then you add the sugar that's been whipped to a creamy texture which produces the foam (espumita).

In my opinion it's an abomination to add sugar to any type of coffee (Cuban - made as per your video or as per the original post-, espresso, Turkish, Americano, Mexican spiced coffee, you name it). Third, I don't see how the video you posted would be considered only Cuban since that's the way coffee is made in most Mexican villages (sans the excessive amount of sugar). Fourth, in reference to ignorance, the only thing I didn't know about what you mention was the Miami Cuban angle. I went to Miami and had Cuban coffee for the first time a few weeks ago. A week later I had my own stovetop maker but have still had trouble getting more than a thin layer of foam. Mines never been that light of a color before. I’ll try using a fork and see if that helps. Can you put a link to the small metal mixer in the links? That’s the piece I’m missing. Great video. That is how I make my morning coffee as well. It took a couple of tries to get the sugar just right. I have always used a spoon, but next time I am going to use a fork. Looks like a better idea.

The best tutorial I've found for the Moka pot is "Annalisa J Moka pot." She reaches the authentic Italian technique since 1933, which aligns with Bialetti instructions. The office correct grind is medium-fine. Most espressos are too fine for the Moka, but Italian grocery stores espressos are medium-fine for the Moka: illy, Lavazza, Kimbo, Bialetti Perfetto Moka, etc. So you don't pack it or it won't work. I think the reason Cubans and Spanish are abel to pack it is their coffee is a larger grind.
Where do you get the electric coffee maker. I have the stove top coffee maker, but the electric one would be good for hotels, where I can't get a cortadito.

They are actually italian mokas. Bialetti is the original brand and the one that is available all over the world, you can find them electric like the one in the video or the normal one you put on the stove

Francis Not to be the "guy on the sofa with an opinion on everything" but this is not actually espresso (which would require an extraction of 9 bars plus as opposed to the differential pressure between the atmospheric pressure and the boiling water pressure). I prefer to just call it café Cubano. It is typically a much darker roast profile based on samples I have tried by Bustelo and others and for that reason requires a lot of sugar. Darker roasting burns out a lot of the potential flavors one experiences with a medium roast and is quite common in Mexico, Central America and the Caribbean. Many times, it is a robusta roast which means there will be more lipids and coffee solids producing what has become know as "crema". Crema is pretty but not actually desirable for purists and/or actual espresso. One would not want to do a Bustelo extraction as a pour over for example. But for the Moka pot design, it is an authentic and historically significant method of coffee making.
