These look fantastic! What I love is that you’ve taken simple ingredients that are relatively easy to get. Any challenging ingredients could be simply replaced by something else, and all of these would still turn out amazing

I made seabass for dinner tonight; whilst I was cooking, I was thinking I could save the smaller fillet and have it for breakfast tomorrow, Japanese style! I clicked on UA-cam to watch something whilst I ate, and your video was here, showing us all about different breakfasts, a wonderful coincidence! If I have the energy, I might try making the tamagoyaki to go along side it, with some seasoned salad, pickled tomato and rice!

I'm talking out of my ass as I've never lived in Japan, but in Taiwan (where I used to live) and Korea (where I'm living now) the elaborate breakfasts are more of weekend thing. On weekdays it's often some combo of eggs, rice, and the soup from last night's dinner. In Japan I imagine natto is in the equation too 😂
For the vinegar, regular white vinegar or rice vinegar? I recently learned that we have a Japanese Grocery store in our city. It's not the typical Asian market. They specialize in Japanese products. I make Shokupan at home but they sell the real thing there so I had to try it. Honestly, it's hard to tell the difference other than I can taste a little more salt in the one I bought at the store.

Yes! Dashi no moto is same as bonito powder :) They translate different ways depending on the supermarkets.
