    Ingredients [for 1-2 servings]
    ・Rice (As much as you want)
    Root veggie miso soup
    ・4.2 oz (120g) Sweet potato
    ・3.5 oz (100g) Daikon
    ・1.7 oz (50g) Carrot
    ・1 sheet of Thin fried tofu (Abura-age)
    ・1.7 cups (400ml) Water
    ・2 tbsp Miso paste
    ・1/2 tsp Dashi powder (Hondashi)
    Easy daikon pickles
    ・7 oz (200g) Daikon
    ・1.4 oz (40g) Cucumber
    ・2 tsp Seasoned kelp strips (Shio-kombu)
    ・1.5 tbsp Shirodashi*
    ・1/2 tsp Sugar
    ・Chili pepper (As much as you want)
    *Shirodashi substitute: 1 tbsp Shirodashi = 1 tbsp Soy sauce + A pinch of Dashi powder + 1/2 tsp Sugar
    Sweet simmered kabocha squash
    ・8.8 oz (250g) Kabocha squash
    ・3 tbsp Water
    ・1 tbsp Sake
    ・1 tbsp Soy sauce
    ・1 tbsp Mirin
    ・1 tbsp Sugar
    ・A pinch of Dashi granules (Hondashi)
    Okra & tomato salad
    ・2.8 oz (80g) Tomato or Cherry tomato
    ・1.4 oz (40g) Okra
    ・1/2 tsp Salt
    ・1 tbsp Mentsuyu*
    ・1/2 tbsp Sesame oil
    ・1/2 tsp Sugar
    *Mentsuyu substitute: 1 tbsp Mentsuyu = 1 tbsp Soy sauce + A pinch of Dashi powder + 1 tsp Sugar

    Ingredients [for 1-2 servings]
    Salmon mayo rice ball
    ・Rice (As much as you want)
    ・2.5 oz (70g) Salmon
    ・A pinch of Salt
    ・Mayonnaise
    ・Parsley
    ・Nori seaweed
    Rolled omelette
    ・2 Eggs
    ・1 oz (30g) Imitation crab meat
    ・1/2 tsp Sugar
    ・1/2 tsp Oil
    Sweet potato side dish
    ・3.5 oz (100g) Sweet potato
    ・1 tbsp Oil
    ・1 tsp Sugar
    ・1 tsp Mirin
    ・1/2 tsp Soy sauce
    ・Black sesame seeds
    Easy cucumber pickles
    ・2.8 oz (80g) Cucumber
    ・A pinch of Salt
    ・1 tsp Soy sauce
    ・1 tsp Sesame oil
    ・1 tsp Mirin
    ・A pinch of Dashi granules (Hondashi)

    ・2 tbsp Juice from canned corn

    *Shirodashi substitute: 1 tbsp Shirodashi = 1 tbsp Soy sauce + A pinch of Dashi powder + 1/2 tsp Sugar

    ・3.5 oz (100g) Komatsuna or Spinach
    ・1.7 oz (50g) Onion
    ・1 oz (30g) Carrot

    Nice recipes. I always want to learn more cooking tips or recipes. I am in love cooking homemade food two years ago and at the same time I love Japanese food ( mainly because I'm a sea food and vegetable person).

    This is so interesting, some techniques are similar to my Russian cooking and some are so wildly different! This just shows that you almost cannot "ruin" the food if you cook it one way or the other; it just becomes the other country dish 😊
    It is so nice to have lots of other culture influences at out disposal! All of the Russia uses soy sauce now, but the way we use it (putting in borscht f.e.) may upset you 😅

      My husband washes dishes also,he says it helps to get off all the grime he can't scrub away from his job after that I make sure to moisturize his hands,his hands get beat up daily because he's a mechanic so he's working on greasy engines all day.

    Watching this on Christmas Day--my day is going very well! I so wish I could get fresh daikons where I live. Do you have suggestions for substitutes?

      For the daikon in miso soup, how about adding leaf vegetable such as spinach. Maybe it's not really substitute. Totally different veggie. 😂 Actually any vegetable can be good in miso soup.
      For the daikon in pickles, I think you can use carrot instead of daikon.

    An easy way to do the cucumber Paton is to use a fork, just run the fork down the cucumber

    You are NOT clumsy! These cucumbers are lovely. I would like to know -how long do usually spend fixing breakfast? And, sort of out of nowhere: do the Japanese ever use lamb for dishes? I ask because it is a common meat where I live--raised locally. That last recipe is basically a Deviled Egg sandwich! great idea!!

      If it's not busy day, I spend an hour or so to prepare breakfast. But, we just eat some bread and yogurt when I don't have time.
      About the lamb, we don't really buy at store. I think most of the grocery stores don't have them. Maybe only in luxury store has...? I'm not sure about that in Hokkaido where lamb dish is famous as local food. So, I don't really know how to cook them. I know it's really tasty if I can cook it right. How do you cook them? My husband like lamb so I wanna try it at home someday haha
      About the Deviled Egg, yea, you are right! It looks like it. I've just eaten it once in the US on Thanksgiving day!

      @@JapaneseCookingChannel RE: lamb--oh my! I am so used to having lamb that I really don't think of it as unusual! I have a local farmer who offers lamb roasts, lamb bratwurst, ground lamb meat, lamb chorizo, and other treats! I am very lucky! Wish you could also have these wonderful foods!

    I always get confused between the so many different sauces and vegetables. Seem like many are unique to Japan. Hopefully I can find most in Singapore to try your recipes.
    Ponzu, dashi, shirodashi, (is there hondashi or am i dreaming?), white miso, red miso, brown? miso, oh my, so many to remember~
    The tofu you use, we have it here in Singapore as well. Classified into silken tofu, soup tofu, tofu for frying, tau pok (dried fried tofu?) (this is Hokkien dialect), tau kwa (fried tofu like the one you use in this video, the one that splashed everywhere with the white sesame oil) 😂 (again dialect).
    Really ❤ the interactions you have with your husband. Makes the videos very interesting.
    I would probably smack my boyfriend's hands for snacking on the ingredients/foods being prepared. 😅

      Yea... sorry for that you need to remember and buy many different kinds of seasonings to cook Japanese food... 😂
      Actually, you can use dashi powder instead of shirodashi! Maybe you need to mix it with a little soy sauce. Some of the seasonings and ingredients can be replaced with something else, so please let me know if you can't find something or have question!
      By the way, it seems that there are so many kinds of tofu in Singapore. That's amazing!

      @@JapaneseCookingChannel hello, the different seasonings is also one of the reasons why your videos are interesting. Just that I have to differentiate them by what they contain, so that i dont double or triple add what it already contained. For example, if it already contained soy sauce, then i dont have to add so much soy sauce. Its fun to try!

      Maybe next time you can feature more foods from other countries. Like, how American foods are cooked in Japan. I believe the different ingredients and seasonings would make for subtly or extremely varied flavors from the country of origin. 👩🏻‍🍳

    Can anyone please tell me what the difference is between Japanese mayonnaise and American mayonnaise?

      In the US, brewed vinegar with a high acidity level, made by fermenting vegetables and other ingredients, is commonly used in mayonnaise. On the other hand, Japanese mayonnaise is often made with rice vinegar, which is more familiar to the Japanese palate. Rice vinegar has a mild taste with less irritation.

    Is it just me or does that seem like a lot of food for one meal? Especially the first one. I don't think I could eat that much in one meal. I agree with your husband I do not like plastic either. But I opt for class. Stainless steel would be nice because it would probably be lighter in weight than glass. Another wonderful video. Always look forward to the next. Thank you

      It could be a lot for one person. But the meal on the tray is for one person. And it's not too much for me haha. If it's too much, please reduce the amount.
