      leinadyon Lol. Thai names (southeast asian) names always sound weird in english. I had a friend and her name was pronoumced as "supa porn" But in thai it had a total different meaning.

      I certainly and assertively concur: please, make more videos attending cooking classes! I do like the mukbang vlogs but everyone and their dog are doing it on UA-cam. You have the expertise and palate in oriental cuisine to go into a totally different direction plus excellent communication skills to do so successfully.

    Hey Mike, one suggestion could you please create a forum, I really like your show but I often have to dig through videos constantly for information on places to eat authentic Chinese cuisine. The forum could be detailed more than your videos about your recipes, restaurant location, menu recommendations etc. I am from the Caribbean and I am planning a trip for next year to go to New York and Vegas to try some of your awesome food recommendations.

    Please don't cook the eggplant any longer as this dish will test better on the next day. Trust me mike if you cook this dish (with the eggplant like you just tested) and let it cool down and warm it up again the next day the eggplant will be softer and the green curry will review more to you.

      Oh and the Pai Thai, if you have all the tammarine sauce and the coconut or palm sugar. To cook another way, use chicken stocks tammarine sauce, plam sugar, mix well in a bolw, fried the noodle (don't need to soak in water) with 3/4 of the nixed sauce season like you learned until the noodle is almost cooked (it soften and the sauce is almost gone) and scoop it out from the pan. Then cook the other ingredient like you did and add the noodle you rest a side and the rest of the mixed sauce. And you will like it more.

      I just made pad thai sauce with 5 tbsp sugar, 4 tbsp lime juice (dont have tamarind), 1 tbsp rice vinegar, and 4 tbsp fish sauce. my pad thai honestly didnt taste very good at all. What did i do wrong?

      Yes, it does effect him. But when you travel and it is for the job or career you are doing, everything is tax deductible, at least in the US it is. He gets a certain amount of this deducted from his taxes at the end of the year. My husband had his own business for a little while and we found out that certain amount of stuff gets deducted.

    Not big on those eggplants in the curry myself but is very common ingredient in Thailand. I think it maybe just a textural note as there is not much flavour. I really like your honest opinions when you don't like something and explain why. Looking forward to your next trip to Thailand as you said you have just scratched the surface of one of the ultimate food destinations. Just avoid April/May! Crazy hot! Best Nov-Feb.

    If you go back to Thailand "Chef LeeZ Thai Cooking Class Bangkok" is the place you want to go for authentic Thai cooking class. Fresh ingredients...even the coconut cream and milk is made fresh!

    That "The best mushroom of Thailand" you mentioned on 5:32 is called "Hed Fang" or Straw Mushroom in English. It's not too uncommon though. I bet some of the store in New York's China Town have them but probably not as fresh.

    Awesome! Glad you got to cook with Poo. She has a great Pad Thai recipe, but I didn't have all of the ingredients to follow it exactly. Might have to try the Green Curry though. Sounds amazing. I love coconut in recipes.

    That variety of eggplant is usually known as "kermit eggplant" in the U.S. It's the only type I ever ate in Thailand, but it's relatively uncommon here. Fortunately, it's easy to get seeds and easy to grow.

    Hey Mike. I too went to a cooking class in Bangkok. It is fun. I also took a couple of classes up in Chiang Mai. Like you, I love Thai food and wanted to know how to make some dishes. Great experiences and I recommend doing it if in Thailand.

    Thai people have really long name and usually their names are from Sanskrit so they have to use nickname to make it easier for other to call them.

    Recipes are useless in Thai menu, lol. We don't usually put ingredients on measurement, we has the word call "Rod mearh" a.k.a. the weight on their hand when someone put ingredients in. so you know what to put in, but it will never be the same flavour that you had tested. Just enjoy flavour that you like 😜

      Sleepy Dolphiny Your English wasn't that bad. There were a few grammatical problems, but I understood what you were intending to say which is the important part. As for the measurements, in the US there is a term called "eyeballing it" which is similar to what you mentioned. It is really just an estimate based on how much it looks like. Having said that I still think written recipes and measurements are important because they allow us to teach others a dish without even being there. Having said that I have met too many cooks in the US who see a recipe as an inflexible guide to cooking, measuring exactly howuch a dish calls for. They they never make a dish as delicious as it could be and they blame the recipe.

      Tristanosaurs It will improve time after time if they keep it up. For me, cooking tacit knowledge and it is an art there is no one best way to cook something. When I started cooking I never know anything, but only base ingredient and I need to balance its up.

    Mike, what was the name of those particular green chilies you pounded? I have not seen those at walmart (they only have pablano, jalapeno, red chilies). Also, which is hotter....the red chilies for hot oil or those green chilies? PS. I cant get green chilies ANYWHERE except green chili past at Harris Teeter. So, as a substitute for fresh, what brand would be a good jar of green chilies?!Thanks! 💙 💙

      Usually it's Bird Eye Chili or sometimes simply labelled as Thai chili. Green chili is an unripe one and it's hard to find outside of Thailand.
