      I love everything about the direction the channel has taken, but it should not be understated how nice it is to get what feels like a throwback episode sprinkled in every now and again. That distinct editing style and music from his relatively small rotation of songs back in the day really hits home every time.

    Tip for squash, if you're serving it roasted with the skin on: After cutting it in half, also cut a small slice off the rounded side so you can lay it flat on its back. This prevents spilling when you move it around, especially if you roast it with butter and brown sugar and it pools in the middle.

    This reminds me a lot of my family's favorite cold weather meal, coconut braised beef cheeks and savory mashed sweet potatoes. Might need to give this version a try, I love braised meat when it's cold, so cozy.

    Great dish, Andrew. I'm definitely going to try this. In my mind I was thinking of doing squash-filled ravioli with a brown butter, sage sauce and braised beef au-jus sauce. You could also have some toasted pistachios over for garnish
    Hopefully you try this out.

    Funny enough, ingredients wise, this reminds me of a dish my family would make when i was a kid. Except it was with yellow squash and andouille sausage, and it was boiled into basically a soup with butter and seasoning and could be eaten over rice.

    Safety Cooking Hack: in place of the food processor try an immersion blender if you have one. You have better control over the speed and amount of steam being produced and therefore are less prone to steam burns and steam pressure buildup problems (if using a regular blender in place of a food processor)

    I’ve seen a method of de-fatting a sauce where you put ice cubes in a ladle and skim the *sauce* with the underside of the ladle
