I have spent much time at this place! The food is outstanding and the ambiance is unlike any other place. I wish they showed how each setting area is divided from the next with floating glass walls separated by mechanical spiders. The floor under the Japanese style "floor table" is hollowed out, so you appear to be sitting while kneeling, but actually in a traditional western posture with comfort. One of the restaurants I truly miss in the SF Bay area.

Oh man. Now im Danish, so im very familiar with pork belly. It is our national food. And here its called "Stegt Flæsk". Now Sushi is my favorite food. No matter the type. Its my favorite way for food to be made. The fact you get everything from the dish in one bite (most of the time). The way the different flavors combine, but can still be recognized individually. The skill it takes to make. And the near endless possibilities in terms of combinations, variety and creativity. Its just the perfect food in my mind. And raw fish, salmon specifically happens to be my favorite meat. But there are just two things that i love eating almost as much as Sushi. Its Wagyu Picanha. And its pork belly. And that pork belly in this video looks like they made it just perfect. Usually in Denmark we make it crisp and crunchy so it breaks in your mouth. But i like the outside crisp and the inside soft. With the fat being very soft and juicy. Which usually people just make it all crunchy and breakable cus its less fat and easier to do. But man it looks like they nailed it. Many say Danes make the best pork belly. But so far i've only been to one restaurant where i would claim that to be true. And these people made most danish places look like amateurs.
