@@DennisdeJong you are correct! There's a couple things I would do differently.. hell if I'm saving time I just chop the head off and and cut all the way through from the neck bone to tail in one swoop

This is such a good collaboration between two UA-cam cooking legends. I have seen wasabi plants for sale, years ago in the garden section of a hardware store in Edmonton, Alberta. The way he cuts the fish, it's simply art, you could do a long video of you cleaning and preparing fishes like this with relaxing music in the background and it would be a perfect ASMR video.
Having lived 3 years in Japan - eating real wasabi with sushi/sashimi is way different than eating bastardized wasabi/horseradish or fake wasabi sold as green dye horseradish. And I eat a large amount of wasabi with each piece.
Always love watching Guga's and Hiro's videos and great to see their team up videos. Tried the real wasabi before and they have to be eaten 15 minutes after it is grind. So much better than the imitation pastes.

His cuts are so practiced and consistent in portion size that it is somehow more pleasing to watch. Additionally I noticed Chef Terada applied wasabi and ate the salmon in a way where the wasabi wasn't on the top when he ate it so it wasn't against the roof of his mouth by sinuses as I've found to be the best way to avoid tears and the kick in the face that can be strong wasabi up the nose. If wasabi blows you away, don't have it on top as it goes in your mouth. Great vid, I think I learned something about breaking down the salmon and Guga is a great host.
I absolutely loved this video. The music and videography were a great touch. I do kind of wish the Depth of field on the camera was a bit larger but mainly just because I love seeing the filleting in videos like this. Awesome job guys.

I just watched the wasabi dry age video before this video and I had to come here and watch Guga eat fresh wasabi on salmon ( love salmon as well) and watching this much care Master Sushi Chef Hiroyuki Terada at his craft was a real treat. Have a good one.
A big difference between the powder and the "gel" is the vinegar that they add... the vinegar activates different components of the white horseradish that prepared "wasabi" is known for in most restaurant forms.
I've never had the pleasure of getting to try real wasabi... only the horse-radish dyed green that they call wasabi at the restaurants... But honestly, I finally got to try that wasabi paste sold in stores and I absolutely love how it hammers you right in the face, absolutely love that stuff! I use it in my sandwiches and on hotdogs too! lmao.
I love the wasabi kick compare to chilli. The wasabi kicks you in your face for 20-30 seconds, then it disappears. When you try the real wasabi, it’s a whole different story and I agree, it’s just delicious
That's a super fresh Salmon. The eyes are CLEAR. Not to mention that it is still easy to work, which means that it was alive not long beforehand. No, I am not a professional in fish, I just know bits and pieces about things, like what happens when things die, or what fish look like when alive...and a lot of other Stuff...

I tasted the real wasabi just once in a High end restaurant here in Brazil. Must say that is a tottaly different experience and after that i never eat the fake ones. I rather have no "wasabi" on my food than eat with the fake ones. Great video Hiro.
The tube is the best. I make a roll I call where there's smoke there's fire. It's nori outside with avocado, cucumber, and and spring onion inside. Outside smoked salmon with a slice of jalapeno. The tube wusabi and I use for dipping a sauce of soy sauce red pepper flakes and a hit of sesame oil. You heat the sauce slightly and then cool it. Absolutely fire baby

The man's knife skills are magnificent. At 63 I still work at keeping knives sharp so I don't have to fight with them.
You gotta watch out for the one in the tube. In my experience the heat varies so make sure you try it first before you put a bunch on your food
