Maybe to crisp up the ones in the silicone mold try taking them outside of the mold after they are formed and setting them back in the oven for a few minutes. As for your ones in the metal cupcake mold it looked like you put it too close to the fire. I would try the middle rack for that when you try again and see how that works.

Indigo Nile has an egg white and beef gelatin recipe that makes protein crepes (a little less than 1/2 cup liquid egg whites to 1 Tbsp of beef gelatin. Mix with an immersion blender for about 30 seconds). Then you take the crepes and cut them into triangles and fry on both sides in bacon grease until brown and crisp. Then, remove from pan and place on paper towels to cool. While still warm, you can sprinkle toppings on them like ranch powder, salt, cheese powder, etc. These make excellent chips.

Yes! I've tried making both versions. This one that they're featuring here as well as Nili's. They're both good. This one does need to crisp up more on the oven for a more consistent crunch but Nili's is just super F-A-N-T-A-S-T-I-C all the time without fail. Great with dip, cheese sauce salsa or guacelome or even nachos.

Place them on a cookie sheet lined with parchment paper and put in a pre-heated 400 degree oven for 3-5 minutes. You have to watch them!!! They are delicious. Similar to tortilla chips. Can season with ranch seasoning or any powder.

You might try using popcorn ranch flavoring in the batter before cooking. I tend to make cheese crisps in the microwave and I've pretty much got them down pat. Different cheeses give slightly different tastes. I'm wondering if my pizza crust recipe would make good chips. I mix cheddar cheese and whole eggs together and add some mozzarella cheese to it as it seems to make the batter thinner. I also add red pepper flakes and that really kicks up the flavor of the crust. Then I bake on both sides before using as pizza crust. Now I'm wondering if that same crust can be made thin enough and cooked into chips.

I'm sure smoked salmon and cream cheese plus green onion would be good.
Note- I didn't read the bagel ingredients... on purpose. So happy to have a bagel option.
Next try? Chicken or tuna salad with slivered almonds and/or a shake of french fried onions... or both-- yum. French fried onions also come in jalapeno flavor. They are breaded so watch 👀the carbs 👀. 🎉🎉🎉

@@maggieguzowski768 I just used what I had-Kroger brand 4% (full fat) small curd cottage cheese. I use the normal sized silicone muffin pan (not the mini bc that’s what I had) & put in varying amounts & kind of spread it around. Probably about 2 teaspoons works best bc if you make it too thick, it takes too long to bake & isn’t crisp. I baked in microwave, a full powered one (built in) for 7 minutes on maybe #5 power, then kept checking but baked another 2-3 minutes on full power. I’ve also done it on full power for a shorter time. My daughter has a weaker powered microwave & has had trouble, getting it to crisp up.

In my regular-sized silicone muffin pan (NOT mini-sized), I put one tablespoon of cottage cheese. My pan has 6 holes for muffins. I used my full-sized microwave (1,000 watts) & cooked for 7 minutes at 60% power. It still looked pretty gooey & very pale. I then cooked it for 2 minutes at full power & checked it. It was pretty brown, but I did it another 30 seconds. Just experiment. Good luck!

What if you purée the cottage cheese with the egg whites? The cottage cheese would make the mixture thicker and you could put it on parchment paper to get a thinner chip that can be baked in the oven. You can choose the egg white to cottage cheese ratio. I’m not a huge chip fan, so this isn’t something I’ve been experimenting with, but I like your videos and seeing what works and doesn’t work for you. Also, thank you for showing us your mistakes too so we know what to expect and not that everything turns out perfect each time.

First of all, thanks for being the real deal. You remind me of how I banter with my siblings and bff. Hey! What about combining egg whites (unfrothed/unbeatened --- just as you did in this video) and cottage cheese with spices?
Ha ha ha ... I'm sending you not a smiley face, but some chip faces 😮 😂 😊 --- that's what the little mini muffin perfectly round chips from the silicon mold reminded me. Ha ha ha

Have you tried Wilde protein chips. The Himalayan Salt ones really taste like chips to me.

How about if you put those chips flat on a baking sheet like you did with the cottage cheese chips?

A dark pan cooks hotter and faster than silicon. Also, the lower rack is going to burn the bottoms faster. If you had placed the metal pan on the center rack, you’d probably have been more successful.

I wonder if you mixed half egg white with half whipped cottage cheese, put 1 teaspoon in metal muffin pan wells, and cooked 8 minutes, if they would taste good? :)

Since these chips are bland, I wonder if sprinkling on cayenne pepper or a few drops of Tabasco would help

I solved by chip needs with a simple recipe: equal parts of pork panko, coarsely grated mozzarella, coarsely grated parm. Mix together thoroughly. In a small muffin tray of 24 that’s 2-2.5 inches at bottom of well put 1/2 T of mix. Bake in oven at 375 for 7-8 minutes, Or until golden brown. I live above 5K feet so it takes an extra minute for me. Cool in pan and pop out. Get crispy as they cool. They are sturdy, stand up to any dip, and are delicious. Even a great side with a meal since I’m carnivore and don’t eat veggies. Everyone likes them even SAD eaters.

What if you added potato starch or flakes to the egg? Would that add enough "potato" flavor to cover the taste of the egg? I'm thinking with the potato it might need a bit less cooking time or it would brown faster... IMHO
