I like Swiss for shells…it gets very crunchy, it’s not so oily, it’s mild tasting, and it looks good…lightly golden brown.
My least favorite is cheddar. It’s too salty!

I've been making breakfast "burritos" with cheddar wrap for years by melting cheddar in my saute pan, till it started to render, then cracking a whole egg on top, and letting it cook sunny side, I add other ingredients in the center, then while still crispy but flexible i bend the cheddar shell over the contents in the center, and fold up the left and right side into a pocket, and finally fold the top edge over. Then I flip it over to finish on the folded side. Plate it up and let it cool and I have a crisp crunchy pocket burrito

Laura Spath has a recent video featuring those same taco holders as well as making taco shells with mozzarella cheese. One tip…Try cutting your parchment paper so it doesn’t hang over the plate. Otherwise, it can interfere with the microwave turntable (it stops the rotation) and you’ll get overcooked spots in the cheese. Also, if you watch her video, she takes the shell off of the parchment paper as soon as it comes out of the microwave.

I use a small non stick pan sprinkle the cheese in, it doesn’t have to touch because it will melt together. Never used for tacos now I will! Right on the stove top, it definitely cooks evenly better than the microwave, crumble in my salad, soup or just a snack.
Okay, here's the 411 on the cheese. ❤ Use shredded Parm for the taco shells. 😉 ( the oil will separate if you're using cheddar or other types. )

Yes! Shredded Parm cheese is the best. In a non-stick pan. Super easy, and keeps it shape immediately. No excess oil. I agree. Been making these for 20 years. :)
The easiest way to do this is in a frying pan on the stovetop, you just have to moderate your heat, after a couple, you'll get the hang of it. And this is a great place to use bagged already shredded cheese, won't be as greasy and the bit of starch helps. Different cheeses will give different crunch/soft factors. Try a mexican blend, enough crunch and soft together. Shredding cheese in a food processor is easier if the cheese isn't frozen. hth

I've made these for years, I just use a nonstick skillet. And I drape them over a flat wooden spoon handle. Works perfect.
Wait for the sizzling to change to popping, then like 5 more seconds, and it's done.
I make these in the microwave using shredded mozzarella spread thinly in a circle on parchment paper, 1.5 min in microwave, peel off the paper and bend it immediately over the handle of a large spoon or in one of those taco shell molds.
I fry mine in a small non stick skillet. Yummy i love fried cheese.
I like to melt the cheese in a nonstick pan. Cook it long enough to caramelize and some of the fat melts too. Pour off the fat then shape the tortilla!
This so great for a quick meal. I batch cook my ground beef or whatever meat I have on hand, then make cheese shells as I want for a quick meal. It’s really easy to make multiple at a time in the oven with parchment paper too. ❤

I have never been successful with this but I like the idea of the taco mold
For me I am not a big fan of frozen cauliflower rice so I actually cut up a real head of cauliflower to make my Spanish rice and it is so delicious
I discovered the cheese tacos and have those exact holders I also do in the fry pan so i can load the good stuff right on top and flip into a burrito. So yummy. Thank you ladies

I use the hand crank shredder that suctions to the counter top. My food processor broke on me twice. Once while shredding cheese, and once while slicing cucumber. The plastic tube that you send the food through broke and sent several pieces of plastic into my food. So, I went ahead of bought the hand crank shredder and it's SO much better!!!!

I use readysliced cheese for soft wraps. I've found Gouda to be my favourite as it is not too strong in flavour and not overly greasy. I put down 6 slices (fairly small) 3 side by side slightly overlapping ine one row and repeat another row also slightly overlapping the first one. So much easier than shredded cheese. And it tastes so good much better than keto tortillas I think. 😋
You could use cheddar cheese folios to do this, too.

I make the cheese shells a lot and they are delicious. When you put the cheese in a circle, if you make sure there aren’t any empty holes, the shell will come together better and not have space for the liquid to drip out. Never tried mozzarella though. Great content! I tried these cheese taco shells and love it. I still like the ones where I used your chaffles for a taco shell. Just let them cool over the taco shaped tool or something similar. Works great too.
I have made "taco shells" out of cheddar and mozzarella ... I like the crunch of the cheddar, but I don't like the oiliness of them. I make mine in the oven on a cookie sheet so I can made several at once.

Have you ever tried the pork rinds egg whites tortilla by Chef Fat Grams? It can be used as a soft tortilla or microwaved for a hard shell taco.

Fold a small soft tortilla in half and put it in a toaster, you get a crunchy taco shell.
YAY! it worked. You two are so cute. Ive done this i took the Mission low-carb tortillas and draped over a bowl and toated in the oven. I wiped both sides with olive oil and they turned out super crispy and toasty flakey-perfect for taco salad! and I use cottage chees instead of sour cream. it adds more protien. The cheese is good, but inherantly it can be salty. I find them great as a novelty to wrap things up with! :) What I think is the best, for me is EggLife wraps. Griddling them, then shaping them up for tacos :D
