I just found a pamphlet that my doctor (now retired) wrote and gave me 8 years ago because I was pre-diabetic and should be doing keto. Of course I didn't listen at the time, but I finally started keto exactly 3 months ago. My favorite bullet point in the pamphlet "You already ate your lifetime of carbs". 👍😂
He sounds like he was a good doctor! Treating disease and ailments through diet/nutrition 👍🏼 Most doctors now will just recommend a prescription for some meds and send you on your way.😔
Cottage cheese pancakes - 1/2 cup cottage cheese, 2 eggs, blend, then add almond flour a T at a time until the mixture is like pancake batter (about 4-5 T flour). Spoon out into little pancakes and cook as normal. Yummy!
I have that recipe, I top mine with a mixture of melted butter, a drop or 2 of maple extract, liquid sweetner, tiny bit, I don't like it too sweet. Or diced strawberries when in season.
Sorry to be that guy but the two are actually different things. The maillard reaction is the browning reaction from cooking amino acids with sugars. Caramelization is literally just the burning of sugar. ;)
Happy to report back that my lasagne was a great success! This holds up as well as regular noodles. I added dried basil, oregano, and fennel to the “batter”. Simply amazing!! Now I know how I can buy massive quantities of cottage cheese when it goes on those fabulous sales, I’ll just make them and freeze them and be ready to go.

I saw that Shredhappens also added garlic to his recipe for the flatbread. I just made this this morning using Shredhappens exact recipe, and it was marvelous! 1 cup cottage cheese, 2 eggs, 1 clove garlic and a small handful of cilantro. I used a 9x13 parchment lined baking pan, and it turned out perfectly! So glad you featured this flat bread recipe. So simple, and all ingredients are at the ready always in my fridge👍🏼. @@rosabotello9676 that may have made a difference. I usually use full fat cottage cheese. Try leaving it less time also. The cheese will spread as it heats, that’s a given. It takes a bit of tweaking to find what works for you. Sorry I wasn’t much help. Oh just remembered, to firm it up you could try adding some protein powder. I do that a lot lately, and have had excellent results.

This is my first youtube comment. Just wanted to thank you both for your hard work in the kitchen to share delicious low carb recipes that keep us food satisfied and motivated to stay on track. This flatbread recipe is a game changer, with many possibilities! For instance, I wanted to share an amazing dessert I made by layering 3 inch squares of the flatbread with lemon cream filling. 1 oz softened cream cheese, 1/2 cup Greek yogurt, juice of half lemon, zest of whole lemon, and sweetener. It was like a lemon Tiramisu. There is enough protein to have as a meal. Filling and delicious!
So the channel was Sarah's idea, and Emily didn't want to be on camera. LOL, Emily does all of the cooking on camera, and has way more air time! This looks like a great and simple recipe, thanks for sharing.

That's what I'm going to try. I've been trying everything to find a good replacement for sandwich thins since i tried the Arnold Keto Thins. The 90-second recipe on my Aldi Almond Flour pouch has been a decent replacement for English muffins, but it's a little dry.

I just want to say I made chaffles using your most recent recipe. But I used Kerrygold Dubliner natural cheese from Costco. OMG. It was incredible. You have to let them cook longer to get crispy. (Like 8 min.) Also it only makes 2 chaffles I think because it's a lighter cheese. I put a tiny bit of salt and a good amount of cracked pepper and Italian seasonings and garlic. Then I mixed 2oz rotisserie chicken,1 tb ranch dressing 1 tb, no sugar sweet relish with lettuce.. I served it with tomatoes. So so good! You gotta try it with this cheese.

I guess not all parchment paper is created equal. The second attempt using cooking oil spray worked out nicely. Going to try chaffles next, can't give up my smash burgers.

I added to a double recipe: 1 tablespoon Almond Flour, 1 Tablespoon Bamboo Fiber and 1 teaspoon of Xanthan Gum. It made it more bread-like and the Xanthan Gum helps keep ip pliable.
LOVE this "bread"! Now I'm trying different things i desperately want modified to keto/ketovore. Just made my mom's lasagna and used this bread instead of the egg noodles her recipe calls for. It works!!! NOW I can make this a lifestyle!!

You can also put some water on the baking sheet, you don't need to use spray. It will hold the parchment paper in place. I'll mix up a small batch of this cottage cheese mixture and bake it in my air fryer which has a bake function and use a parchment paper boat to cook it in. The air fryer has two sides and each finished "bread" would be 5" by 8", big enough for a nice sandwich. It is a good idea to keep various condiments you particularly like handy to make fixing a sandwich quick and easy. This is a good recipe. Thanks for the video.

Jumped in this morning and made the flatbread, did not double it and it made two pieces. Added a little sour cream, guacamole, bacon and a fried egg, very filling and delicious. Thank you.
I tried this today and it was perfect for my Beyond beef patty. No egg taste. I messed up and had my toaster oven on toast! Once I corrected it I got it looking good. I did have to flip it to get it toasted on both sides. Gracias
Ladies.. thank you so much for spending so much time on us. I figured, if you didn't screw up the cottage cheese flatbread.. and noses weren't turned up at it.. I'd give it a try. That is my go-to now. The S/O doesn't like cottage cheese.. but he chows down on that flat bread!! I agree... season the heck out of it... I'm also slightly prone to adding other cheese... freshly grated parm.. dust the parchment with it.. pour it on top... dust it on top... best dipping sticks ever... also super keen on the whole deli sandwich idea... have not been brave enough to make roll up with it.. but.. hey- you never know what tomorrow brings...
It looks like it would be eggy so I'm so glad that you both said that it doesn't taste like egg or Cottage Cheese. Will definitely give it a try and I agree that 1/2 would work for a meal. I'm not a fan of cottage cheese, but its more of a texture thing ...its weird.

That bread looks like a good replacement for pitas. Gyros come to mind.
Exactly what I was thinking! That and a flatbread pizza.
You can sprinkle parmasan on the bottom of pan before you pour and more on top and it's crispy enough for pizza. Bake on higher temp till brown.
Sprinkle a little water on your baking tray to make the parchment stick...just as good, and easier clean up!

I used lactaid cottage cheese and my mixture stuck to parchment paper. Was I suppose to spray the parchment 1st ? Anyone can help TIA

I learned a trick re: parchment paper. Wrinkle it into a ball then spread it back out.
I wet my parchment paper and then do the same as you - it works a treat for me!

Mine had burnt edges and was super floppy. Added a bit of shredded cheese and it was much more flatbread-like. That’s the only way I’d make it now.

I made it and was a bit short on cottage cheese so added 2 tbsp mozzarella and 1 tablespoons almond flour. Loved this!!

Definitely toast it! If you have a crisping pan for pizza it could work. Toast it some then add sauce and toppings and bake till hot and bubbly.

You can also just use water to get the parchment paper to stay, as well.

Jumped in this morning and made the flatbread, did not double it and it made two pieces. Added a little sour cream, guacamole, bacon and a fried egg, very filling and delicious. Thank you.
I tried this today and it was perfect for my Beyond beef patty. No egg taste. I messed up and had my toaster oven on toast! Once I corrected it I got it looking good. I did have to flip it to get it toasted on both sides.

Ladies.. thank you so much for spending so much time on us. I figured, if you didn't screw up the cottage cheese flatbread.. and noses weren't turned up at it.. I'd give it a try. That is my go-to now. The S/O doesn't like cottage cheese.. but he chows down on that flat bread!! I agree... season the heck out of it... I'm also slightly prone to adding other cheese... freshly grated parm.. dust the parchment with it.. pour it on top... dust it on top... best dipping sticks ever... also super keen on the whole deli sandwich idea... have not been brave enough to make roll up with it.. but.. hey- you never know what tomorrow brings...

It looks like it would be eggy so I'm so glad that you both said that it doesn't taste like egg or Cottage Cheese. Will definitely give it a try and I agree that 1/2 would work for a meal. I'm not a fan of cottage cheese, but its more of a texture thing ...its weird.
