食材做法:
材料: (wpy )
花肉 500g (去皮,切成适当大小的厚肉片)
玉米粉 1汤匙
南乳腌料: 混合均匀,备用。
姜汁 (姜一小块,切丝加少许水,搓揉至出味,去掉渣,保留姜汁)
蒜泥 1瓣
南乳 2块,加南乳汁
蚝油 半汤匙
五香粉 1茶匙
糖 半汤匙
胡椒粉 半茶匙
绍兴酒 1汤匙
炸粉: 混合均匀,备用。
粘米粉 2汤匙
玉米粉 4汤匙
1. 花肉加入南乳腌料,混合均匀,再加入玉米粉,混合抓均匀,
室温腌制至少2-4小时,或隔夜更佳。
2. 起锅烧热适量油,把肉沾上炸粉,薄薄的一层,即可,待油温六成热,
放入肉,炸至暗红色(约10-15分钟),即可,起锅,切片,摆盘。

这个煮法是真的好吃。因为我以前有煮过。我放玉米粉一起腌,不沾粉就炸了。我的肉是三层肉,用钉子打到软,炸起来后口感也不硬。你的视频很清楚,不啰嗦。我喜欢你的直接教法,不浪费时间。

我有借鉴湖北的沔阳三蒸.把这道菜改造了一番....甚为惊艳:把玉米淀粉换成了泡过夜的糯米.然后上高压锅压1个半小时.....好吃到爆.....

(require marinade overnight)
Persons of serving: 4
Time: overnight or 2 hours+
Ingredients:
500g pork belly 花肉
1 thumb finger-size ginger
1 clove garlic
2 TABLEspoon fermented red beancurd,
4 TABLEspoon fermented red juice,
1/2 TABLEspoon oyster sauce,
1 TEAspoon five spices powder,
1/2 TABLEspoon white sugar,
1/2 TEAspoon white pepper powder,
1 TABLEspoon shaoxin wine
2 TABLEspoon rice flour 粘米粉,
? TABLEspoon cornstarch
some lettuce 生菜 as plate bottom
some chilli sauce
Steps:
1) (prepare pork) Remove pork skin.
Slice pork into 1 inch thick slice.
2) (prepare spice) Slice ginger into thin straight slices.
Put into a small bowl and add some water.
Use hand to squish out ginger juice.
3) Mince and squish garlic into flat.
4) (prepare marinade) In a bowl, add 2 TABLEspoon fermented red beancurd,
4 TABLEspoon fermented red juice,
1/2 TABLEspoon oyster sauce,
1 TEAspoon five spices powder,
1/2 TABLEspoon white sugar,
1/2 TEAspoon white pepper powder,
1 TABLEspoon shaoxin wine,
squish garlic,
ginger juice. Mix well.
5) Add pork belly into the marinade solution. Hand mix well.
Add 1 TABLEspoon cornstarch. Hand mix well.
Put marinaded pork into an air-seal container, air-seal it and let it marinade for 2 hours or overnight BEST.
6) In a new bowl, add 2 TABLEspoon rice flour 粘米粉,
4 TABLEspoon cornstarch
7) (fry pork) Heat wok or big pot, add oil enough to cover pork.
Let oil heat until temperature 150°C.
While waiting it to hot, to lightly coat the pork with no. 6) flour mixture.
After oil temperature is reached, add coated pork slice one by one and deep-fry until golden dark red for 10-15 minutes. (can set alarm)
While frying, try maintain the oil temperature at 160°C.
8) While waiting for pork to be cooked, decorate lettuce onto the serving plate.
Sieve out pork when golden dark red.
Drop off oil.
Cut it into smaller 1cm slices and put onto serving plate.
9) In a small bowl, pour some chilli sauce. Serve.
