  • Chicken Changezi recipe aka Mughlai Chicken Changezi is a rich, creamy, and scrumptious Mughlai style chicken curry. An age-old dish.
    Chicken Changezi is a rich, mild, creamy gravy based curry specially prepared with yoghurt and fresh cream.

    Ingredients:
    1 whole chicken on the bone cut into medium pieces (approx 1.2kg in weight)
    500g fresh tomatoes roughly chopped
    400g or 2 medium onions finely sliced
    200g yoghurt
    200ml double cream
    4 tablespoon oil
    2 tablespoons of unsalted butter (30g)
    1/4 heaped teaspoon of red food colouring
    1/4 teaspoon salt
    fresh coriander to garnish
    oil to fry
    2 tablespoons each of fresh ginger and garlic paste
    1.5 tablespoons of dried fenugreek leaves
    4 green chillies (optional)
    Spices for the meat marination:
    1 teaspoon of:
    salt
    garam masala
    chaat masala
    black pepper powder
    cumin powder & 2 teaspoons of kashmiri chilli powder
    Spices for the masala:
    2 tablespoons of coriander powder
    1 teaspoon:
    salt
    kashmeri chilli powder
    1/2 teaspoon of red chilli powder & turmeric

    OMG! Made this tonight and it’s DEFO one of my favourite of yours Shamza!! Sooo super yummy! The only problem is I am absolutely STUFFED now coz I couldn’t stop tasting it as I was cooking! I agree with Carmen Martinez, for us who don’t know the names of all the ingredients, a written list would be really great if poss on ur vids as ur going through them. After the garam masala I wasn’t sure of the name of the other masala powder so missed this but it’s will stil SHAM-A-ZING! (Do you like what I did there haha) 😆 xx

    I made the coating up for the chicken and it smells like boiled eggs when mixed with chicken, made the dish and was superb, used tin tomatoes and ginger garlic paste

    Hi Shamza, came here to your channel after seeing Al of Al's Kitchen cook this dish of yours ;-) Looks absolutely yum nom nom !! I've been making a list of the ingredients needed for the dish, already have most of the spices. We have a induction hob and only a few small pans and a medium size frying pan....I've looked at your Amazon store front but not sure which wok/pan to buy to cook the curry dish. Can you advise or recommend one please ? with a lid....many thanks and have binge watched your recipes recently, I want to climb through the screen and tuck in to your delicious looking cuisines !!!       Ahh yes, it definitely is. Chaat masala is generally used for snack foods such as Chaats which means snack. I've a few recipes up that uses it which include Corn Chaat, Samosa Chaat and of the this recipe which you've already tried. Please take a look at the videos to see if they're of interest to you. 😊👍

      @@MyLittleKitchenRecipes I kind of figured it's was mostly used for deserts. though I must admit I have found my self adding this to all of my currys I cook. as i say it as much of a game changer as lime pickle was.. I love the finding some new. its been life time of my the love of a good curry to get where I am now. I rarely ever eat BIR style. as i find they all tend to taste the same... much love along your way

    I have a question on the spices for the meat marinade, you say 1 teaspoon but the heaps of seasoning on your plate look like a lot more than a teaspoon, could the measurements actually be tablespoons instead of teaspoons? or are the British teaspoons bigger than American teaspoon which is 5 ml.

    Hi Shamza , how would I adjust the spices for say 300/400 g of chicken please ( instead of 1.2 Kg )

      Hi David, just halve the quantity of all ingredients which will give you the exact amounts. My salt levels are slightly low rather than too much which you may have to adjust a little by adding more in but you can do that once you've finished cooking and see.

      I do Steve but some recipes require the fresh stuff for maximum flavour. You may used the frozen cubes if you wish.

    I want to make this for my mother but she cannot eat tomatoes due to an allergy. I know it’s a stretch but is there a substitute for the tomato, bell peppers perhaps? Thanks.

      Hi there, peppers will work but the overall base masala may be a little on the sweeter side when compared to using tomatoes. Best way is to try the recipe and see 😊👍

      @@MyLittleKitchenRecipes thanks for the reply. Just one more question as I plan on making this on the weekend. Can I marinade the thighs and then simply cook them through in the oven or airfryer and transfer them into the masala and then just simmer everything for 20mins or so, or do you need to cook the meat in the masala?
      Either way I am very excited to make this for my wife and I, had to order some chaat masala as nobody has ever heard of it where I am living at the moment in the USA :)

      Hi Billy B, yes you may but the flavour really comes from usage meat on the bone but I completely understand as I've the save problem with my kids too! Youre right 😆😆👍

      Maybe dried mango powder if not i would just leave out rather than trying to replace I imagine it will still be fantastic.

      Uncle Wonton, chaat masala is very unique in taste and I'd say the nearest thing as a substitute would be black salt. But like Royal Nag said, leave it out completely as adding other ingredients to try replace the chaat masala will potentially spoil the overall taste of the dish. 😊👍
