Wow, this is such a good recipe. I made a batch last night, and it was so good that I made another batch tonight (and now I don't have enough space in my freezer for all that curry!). The thing I like about this curry is the same thing I like about the video telling us how to make it: it is so well structured. From the garlic and ginger at the start all the way through to the mace and nutmeg at the end, all the flavours are there in the finished dish, everything complimentary, nothing overpowering. Likewise Bumbi walks us through the steps of the curry, explaining the reasoning behind each step clearly and succinctly. I have literally bought a chest freezer to put these amazing curries in for when i want a take away. Im also making some chinese recipes too. Gonna fill it up! Only was 200 euro and i probably spend that very easily on take aways in a few months so i think it is worth it! I will try burritos as well for mexican too!

I love how you narrates your video, it makes me smile and inspired to cook indian food too myself. I've been trying to cook Indian food since i love it soo much but less chili for me. I'm from the Philippines but since i started working abroad i love trying different cuisines from other countries.
Just a quick next day comment following my first one. I just made this today and had it with potatoes in and served with a mixed vegetable pilau rice using Basmati rice and cauliflower carrots and French beans. The chicken curry was gorgeous and my wife thought so too. I used fresh chillies and chilli powder. Nicely hot but not overpowering. I'll make it again without doubt. The puree at the start made all the difference to the smoothness.

I cooked and learned from a 85 year old lady who was the Temple cook and did all the catering at her temple. She learned from her granny … This is almost exact as she taught me.
I used regular chili powder, left out the cloves, used a star of anise ( I happened to have one that was gettingold), no mace nor nutmeg. It came out spicy and delicious with the right color and texture. Great video and thank you for sharing!
This is just like a perfect Sri Lankan chicken curry. Only we add coconut milk instead of yogurt. Love this video!!! You do a great job:) Now I am hungry and I don’t have chicken curry 😕😉😁

I've always used store bought paste because I thought making it from scratch is quite a hassle. However, looking at your recipe and video tutorial is quickly convincing me that it's worth the extra effort and time. I'll definitely try it out for my next curry chicken dish!
I made the recipe for curry paste she has and it wS like an indian resteraunt ...you can add different things to it to make it different like tomatoes tamarind or cream and almonds or extra spices to make it more spicey. I just made a big batch for my son at college to be able to make nice food. Its amazing and i bought the whole spices and used my blender ninja to crush them fresh omg the smell!!! And i had no idea how they got the flavour as i have always tried but the paste id full of caremalized onions which makes it soooo tsste like the réal thing! Good eating my friend!

I qill ask for something mild but very red. Hioefully that will work ok. I already made one of your curries too with chicken it was amazing. Best curry i ever cooked. I hope my son is impressed with the paste!
Other than the recipes themselves, another thing I like about your videos is how you teach us the words for spices in your language. Haldi, jeera, kasoori methi, etc. Not all Indian recipes on youtube are in English, but as long as I know the spices being used, I can usually follow along.

So I've been regarded as a great home cook for years. This is honestly one of the best things that I have ever made. Halved the heat for my spouse but the flavours at the end were ridiculous. Your advice that this requires patience is spot on. This is not a fast dish to cook, but well worth the wait. Add the "additional" ingredients. The Kashmiri chilli powder was amazing. Its infrequent that I try a recipe for myself and end up planning my next dinner party. Your hints about using spice wisely is spot on.
My mother used to make this curry when I was a child and I’ve been searching for years for the recipe. I’m so happy to find it here on your channel. Bless you! When you said the potatoes were completely optional I thought, “oh no, that’s the best part!” So I completely agree with you when you said later that the potatoes are better than the chicken. When I was little I loved them so much that if we had left over curry for lunch the next day I would always hope there would be potatoes left too! Superb chicken curry and a beautifully presented video. I cooked this the other day for the first time and I am cooking it again now. So much better with home- made paste and yogurt instead of coconut milk. I am not fussy when it comes to food, but I don't like a sickly coconut taste, drowning out all the flavors. Many thanks. I love seeing someone make a fast, no-nonsense video with discussion of options -- and putting the specific measurements in the text instead of in the video makes me so, so happy. My brain gets so distracted when people are quoting measurements all the time, and it just makes each step take longer. This let me see the technique and not get snowed by extra detail. Perfectly cooked just like a Durban Mutton Curry with the mandatory potatoes, looks lovely! Just a little tip , cardamoms are hard to completely remove after cooking I thread 5/6 onto a toothpick so easy to remove when the time is right:)

@Curries with Bumbi Can you please do an explainer video of how much to increase the cooking time and ingredients if I (say) double the amount of meat. Also can we use other types of meats with this recipe? (pork, beef, lamb?)
You need to double up everything except the whole spices. Cook the chicken until it reaches your desired level of tenderness. You can use any meat but the cooking time will be more than chicken.
@@CurriesWithBumbi another suggestion. try some recipes using standard masalas - it will help us save time. But of course, people may wonder if the masala manufacturer is sponsoring you - not a bad idea in itself!
I made this recipe tonight and it was absolutely delicious. Added a few more green chilies because my wife and I like it spicy. Made homemade naan bread as well. Pretty easy to prep the naan and start the curry and finish everything together even with basmati rice. Thanks for sharing your recipe Bumbi ❤

You can make the ginger garlic green chilli paste and it lasts in the fridge for a week. Please do not add much water but add salt and little oil. In that way it may last a little longer than a week but the ginger garlic green chilli paste can be frozen. I sometimes make a large quantity and freeze in ice trays. If you add tomatoes it won’t last for more than a day but you can always blend the tomato separately just before cooking.

Bumbi, let me tell you that I came across your video and I was runnining behind so when I saw that you were having me make a paste I wondered if I should just find a recipe that didn't have this step. Well I came back to your video because authentic curry is what I wanted and my family deserved a good curry. I made your recipe step by step, I will tell you that by the time my Husband made it home it was done, and he said it was better than any restaurant he ever ate at. My Husband is very honest and has eaten a lot of curry, so if it wasn't good he would say it in a kind way and have told me that it was not his favorite. My Husband could not stop saying how good it was, and then I realized that I had not even taken the time to taste the sauce before I served it ( not a good idea lol) but your instructions were so good that the curry was amazing! I even shared it with my Son who is always on YT looking for recipes. I let him know that it really was the best! Thanks again!

Great, and I use Bumbi's advice always when cooking my homemade masala curries. Also after washing my chicken I dry the pieces with kitchen paper nice and dry. I mage a fabulous Jerravan Masala Chicken, a really delightful dish.
That was the most straight forward explaination of your wonderful recipe. Some youtubers crap on for ages when all I want to do is write down the steps, go in the kitchen and make it. Instantly subscribed. Lose the mustard oil and replace with ghee, plus do not add sugar and it would be 100% healthy. My rule is never use an oil that come out of a factory or processed seed oils when animal fats are healthy. You put such little sugar you would not miss it at all anyway. To your health !

Great video! I've found that covering the chicken in some curry beforehand and frying it by itself in the pan just a bit adds more flavor to the chicken after it has cooked with the rest of the ingredients.
I was looking for authentic Chicken curry & found your channel. At first I was hesitant because I thought oh I already know how to make curry but somehow I thought to give it a try, oh wow! not just you clearly do step by step with your clear and calming voice, the curry itself is super tasty. I made a lot more of the sauce and remove some after adding and cooking so I don't need very long time to wait to make it dryer. Then after adding the chicken I added the extra sauce. I followed everything you do & again WOW! super tasty and yes just Perfect!

Balancing the spices and the order of adding them is important to layer the flavors to bring your dishes to a higher level, and you do that very well. I made this for supper this evening and it is quite possibly the nicest curry I've ever made. I didn't have sugar in the house. I'm diabetic so I try not to have it around. But I substituted a desert spoon of mango chutney and it worked very nicely.

In South Africa we always put potatoes in our chicken or mutton curry. And often even butter beans.

I've always used store bought paste because I thought making it from scratch is quite a hassle. However, looking at your recipe and video tutorial is quickly convincing me that it's worth the extra effort and time. I'll definitely try it out for my next curry chicken dish!

I made the recipe for curry paste she has and it wS like an indian resteraunt ...you can add different things to it to make it different like tomatoes tamarind or cream and almonds or extra spices to make it more spicey. I just made a big batch for my son at college to be able to make nice food. Its amazing and i bought the whole spices and used my blender ninja to crush them fresh omg the smell!!! And i had no idea how they got the flavour as i have always tried but the paste id full of caremalized onions which makes it soooo tsste like the réal thing! Good eating my friend!

@@CurriesWithBumbi yes i am at the asian shop right now to buy some kore things ...star anise and they dont have the chilli pepers you reocmended. They are more a chinese thai asian shop. I qill ask for something mild but very red. Hioefully that will work ok. I already made one of your curries too with chicken it was amazing. Best curry i ever cooked. I hope my son is impressed with the paste!
I tried the paste for a change, but not keen on it. I always add my own fresh garlic and ginger
Other than the recipes themselves, another thing I like about your videos is how you teach us the words for spices in your language. Haldi, jeera, kasoori methi, etc. Not all Indian recipes on youtube are in English, but as long as I know the spices being used, I can usually follow along.

So I've been regarded as a great home cook for years. This is honestly one of the best things that I have ever made. Halved the heat for my spouse but the flavours at the end were ridiculous. Your advice that this requires patience is spot on. This is not a fast dish to cook, but well worth the wait. Add the "additional" ingredients. The Kashmiri chilli powder was amazing. Its infrequent that I try a recipe for myself and end up planning my next dinner party. Your hints about using spice wisely is spot on.

My mother used to make this curry when I was a child and I’ve been searching for years for the recipe. I’m so happy to find it here on your channel. Bless you! When you said the potatoes were completely optional I thought, “oh no, that’s the best part!” So I completely agree with you when you said later that the potatoes are better than the chicken. When I was little I loved them so much that if we had left over curry for lunch the next day I would always hope there would be potatoes left too! Superb chicken curry and a beautifully presented video. I cooked this the other day for the first time and I am cooking it again now. So much better with home- made paste and yogurt instead of coconut milk. I am not fussy when it comes to food, but I don't like a sickly coconut taste, drowning out all the flavors. Many thanks. Ah I absolutely love Indian Food and who doesn't love an Indian curry? I've tried so many receipts but still haven't found what I'm looking for. Instant subscribe even if I'm not sure how many of your videos I'll ultimately watch. I love seeing someone make a fast, no-nonsense video with discussion of options -- and putting the specific measurements in the text instead of in the video makes me so, so happy. My brain gets so distracted when people are quoting measurements all the time, and it just makes each step take longer. This let me see the technique and not get snowed by extra detail. And it's focused on the recipe and what's actually happening in the pot, without excess "flare" like a couple other videos I just watched. Thank you so much! I hope your channel goes well ^_^

Perfectly cooked just like a Durban Mutton Curry with the mandatory potatoes, looks lovely! Just a little tip , cardamoms are hard to completely remove after cooking I thread 5/6 onto a toothpick so easy to remove when the time is right:)
I remove the pods and grind them into a powder. Biting into a stray cardamom pod is one of the worst things that could happen while eating.
Or put it in cheese cloth like a teabag
Made this tonight with homemade roti. Incense burning as it cooked. I always love trying a new twist to curries! Delicious! And I love the way the house smells! Added a dash of kitchen King and deep curry powder.

@Curries with Bumbi Can you please do an explainer video of how much to increase the cooking time and ingredients if I (say) double the amount of meat. Also can we use other types of meats with this recipe? (pork, beef, lamb?)
You need to double up everything except the whole spices. Cook the chicken until it reaches your desired level of tenderness. You can use any meat but the cooking time will be more than chicken.

For mutton and pork it will take at least 45 mins depending on the quality of meat.
@@CurriesWithBumbi another suggestion. try some recipes using standard masalas - it will help us save time. But of course, people may wonder if the masala manufacturer is sponsoring you - not a bad idea in itself!
I made this recipe tonight and it was absolutely delicious. Added a few more green chilies because my wife and I like it spicy. Made homemade naan bread as well. Pretty easy to prep the naan and start the curry and finish everything together even with basmati rice. Thanks for sharing your recipe Bumbi ❤

You can make the ginger garlic green chilli paste and it lasts in the fridge for a week. Please do not add much water but add salt and little oil. In that way it may last a little longer than a week but the ginger garlic green chilli paste can be frozen. I sometimes make a large quantity and freeze in ice trays. If you add tomatoes it won’t last for more than a day but you can always blend the tomato separately just before cooking.

Bumbi, let me tell you that I came across your video and I was runnining behind so when I saw that you were having me make a paste I wondered if I should just find a recipe that didn't have this step. Well I came back to your video because authentic curry is what I wanted and my family deserved a good curry. I made your recipe step by step, I will tell you that by the time my Husband made it home it was done, and he said it was better than any restaurant he ever ate at. My Husband is very honest and has eaten a lot of curry, so if it wasn't good he would say it in a kind way and have told me that it was not his favorite. My Husband could not stop saying how good it was, and then I realized that I had not even taken the time to taste the sauce before I served it ( not a good idea lol) but your instructions were so good that the curry was amazing! I even shared it with my Son who is always on YT looking for recipes. I let him know that it really was the best! Thanks again!

That was the most straight forward explaination of your wonderful recipe. Some youtubers crap on for ages when all I want to do is write down the steps, go in the kitchen and make it. Instantly subscribed. Lose the mustard oil and replace with ghee, plus do not add sugar and it would be 100% healthy. My rule is never use an oil that come out of a factory or processed seed oils when animal fats are healthy. You put such little sugar you would not miss it at all anyway. To your health !

Great video! I've found that covering the chicken in some curry beforehand and frying it by itself in the pan just a bit adds more flavor to the chicken after it has cooked with the rest of the ingredients.

I was looking for authentic Chicken curry & found your channel. At first I was hesitant because I thought oh I already know how to make curry but somehow I thought to give it a try, oh wow! not just you clearly do step by step with your clear and calming voice, the curry itself is super tasty. I made a lot more of the sauce and remove some after adding and cooking so I don't need very long time to wait to make it dryer. Then after adding the chicken I added the extra sauce. I followed everything you do & again WOW! super tasty and yes just Perfect!

Your videos and the way you explain every step, and also your soothing voice, are wonderful. I made your chicken vindaloo and your bhindi fry tonight and both were very delicious. Balancing the spices and the order of adding them is important to layer the flavors to bring your dishes to a higher level, and you do that very well. I made this for supper this evening and it is quite possibly the nicest curry I've ever made. I didn't have sugar in the house. I'm diabetic so I try not to have it around. But I substituted a desert spoon of mango chutney and it worked very nicely.
