Macros 1 Burrito (out of 5): 407 calories, 39C; 16F, 28P
5 tortillas 18cm/7inch
250g deli meat
500g potatoes
5 eggs
75g mozzarella cheese
2 onions
Sauce:
200g skyr
10g basil
10g mint
10g vinegar
10g mustard
15g oil
1 clove garlic
salt, pepper
Peel potatoes and then cut them into small cubes. Put them into a microwave-safe container and microwave for 5 minutes.
In the meantime crack 5 eggs into a bowl and whisk with a fork. Dice the onions and cut the ham into smaller chunks.
Add 10g of oil to a pan on medium heat and add in the microwaved potatoes and a pinch of salt. Fry them, stirring occasionally for 5-7 minutes. Then add another 5g of oil and add in onions and deli meat. Keep frying for another 6 minutes. Now add in optional spices. I used 1 tsp of cumin and 11/2 tsp cayenne pepper and toast the spices for 30 seconds.
Now go in with the eggs and cook them for 1 minute stirring constantly. Transfer everything into 2 plates and let them cool down until they don't steam anymore about 10 minutes.
In the meantime add all sauce ingredients into a blender and mix it for 1 minute. Transfer the sauce to a squeeze bottle. The sauce lasts in the fridge for up to a week.
Prep 5 tortillas, and distribute egg and potatoes evenly on all 5. Add 5g of sauce on top of every tortilla and add 15g of cheese. Roll the tortillas into a burrito shape, wrap them in a paper towel, and put them into a zip log back and then into the freezer.
If you want to eat them put them straight from the freezer in the microwave for 3-5 minutes or 15-20 minutes in the oven. Done!

Same here. We avoid processed foods…so I made my own tortillas and used chicken thighs to make a large batch of shredded chicken for this recipe and other various meals this week. Delicious 🎉

your knife will dull quicker if you cut on a plate like that. also, if you salt your eggs and let them sit for half an hour before cooking they’ll retain more moisture which i think would be beneficial for the burrito

I make similar every month. If your paper towel sticks to burritos after the microwave, you can wrap them in parchment which will not stick at all. 5 minutes is overkill IMO, all it takes is 90 seconds on high o make it lava-like.
I would keep the skin on the potatoes. FIBER! Just have to make sure you wash them OR buy them pre-washed in a steamable bag.

Hi. Love ur account. Recently found it a few days ago. I have a question. In regards to healthy fats, I am allergic to nuts. So I can’t eat that. Plus Avocado gives me really bad stomach aches. How else can I get healthy fats in. I see so many recipes with peanut butter for example and I always want to try the recipe but never know what to replace the peanut butter with. Can u help please. I never tried to be honest, I would add yogurt to 1 or 2 and try it before adding it to all and regret it later
I reckon you'd be better adding that after you've defrosted it before eating. Haven't tried it, but think it would make it quite soggy and may separate.

Skyr isnt really a brand as far as I know, its more like another type of yogurt. In fact I got this from google, "Skyr is akin to yogurt but has a different texture thanks to the heirloom Icelandic cultures used to make it. It takes nearly four cups of milk to make one cup of Skyr, making it thicker, and creamier than yogurt." so it should be available from more than one brand.

I'm not sure what mortadella is (sounds like a kind of cheese) but the chicken he's using looks like standard sliced deli chicken.
407 calories... A Mcdonalds wrap is 469.
That isn't low calorie.
If you can half that, you'd be in low calorie territory, on the high end.
