*VEGAN COOK* Garlicky stir fry with broccoli, black beans and ginger

  • Easy and fairly quick lunch or dinner today. When you have done all the chopping and the rice is cooking along, it’s just a matter of frying up the veggies with the beans, whisking up a yummy stir fry sauce and get serving. Lot’s of green veggies for dietary fibre, black beans for protein and brown rice for complex carbohydrates. Can’t go wrong!
    Instructions:
    Wash rice and put on to boil
    Finely chop and slice onion, garlic and ginger
    Chop broccoli in small pieces
    Wash and chop kale
    In a big pan, heat olive oil and add onion, garlic, ginger, 2 tsp paprika and 2 tsp smoked paprika
    After a few mins, add broccoli and drained black beans
    Whisk together 4 tbsp of soy sauce, 2 tbsp rice wine vinegar, water and 1,5 tbsp of cornstarch
    Pour sauce in pan with kale and let kale wilt
    Simmer for a few mins
    Wash and chop coriander
    Serve with rice

    Brokkoli
    Kale
    Coriander
    Small onion
    Ginger, thumbsize piece
    4 garlic cloves
    Can of black beans
    Brown rice
    Soy sauce
    Rice wine vinegar
    Paprika
    Smoked paprika
    Cornflour
    Olive oil
    Salt
