Really enjoy the Blue Zone books, have read a couple. The sad thing is that many of them aren't really Blue Zones anymore because the culture has changed over time - more unhealthy food, less exercise, less social interaction - all of which are important to longevity. The healthiest people in our country still are the Seventh Day Adventists, specifically a group in Loma Linda, CA. Wish I had changed my eating, sleeping, and exercise habits a long time ago instead of waiting until I was in my 60's - but hey, it has helped me stay healthier in my "golden" years. Love your videos on Sunday mornings and also your "Keep it Dairy Free" channel. Peace.
I love Japanese curry and I love soy curls so this is something I'll be making soon. I have a stage 4 incurable cancer. I was expected to die years ago but almost 4 years later I'm still here. Still getting chemo and immuno and fighting the cancer. I know that my vegan diet is part of why I've defied all expectations. I love to cook. I love to cook new recipes. And I love to make the food be not just the healthiest but also the most delicious. According to feedback I'm doing a pretty good job at it! I may not be extending my life like others, but I have most definitely already extended my life from what the expectations were. I love your recipes! I appreciate all you do to bring them to us. I’m thankful I saw this recipe and your comment, it really lifted and encouraged my convictions… with diet, lifestyle, gratitude, etc! I was looking all over for the”little whisk”…lol! I just happen to have some soy curls! Looks yummy ❤ I enjoyed the Happy Sunday email today sharing about your kitchen setup.
So, first rehydrate the soy curls in a flavored, hot broth of your choice (or just water), drain and squeeze out a lot of the moisture. Then marinate in the sauce/broth of your choice for a while and then saute them. That will give you more of what you are looking for without that funny soy taste. It takes a little longer, but makes a huge difference in flavor. They really do need to have that first dose of water/broth squeezed out - it removes a lot of that soy curl funk. I use them a lot now that I figured out how to make them taste good - the first batch I ever made was so disgusting, I threw out the rest of the bag. They are a bit pricey, so you don't want to waste them. Also not a huge fan of straight-up tofu, so usually freeze first, thaw and then marinate, or boil it in a broth for a little while if it hasn't been frozen to get some different flavor into it before frying or baking.

Gonna definitely save this recipe! I tried making a Japanese Curry with the curry cubes, onion, fresh ginger, potato, Japanese yams, carrots, apple, vegetable stock and extra firm tofu. It turned out amazing, but the leftovers didn't taste nearly as good. When you said in this video to leave out the soy curls until the end (like fry them up, take them out and re-introduce) that made a lot of sense to me! I think when I let the tofu sit before, it messed up the overall flavor - I need to try it your way! Though, I might just make katsu tofu (or, tofu katsu..? I don't know Japanese grammar) and do only vegetables in the curry, next time. I'll refer to this recipe though, for sure!

I see everyone saying it’s looks delicious, can a few please tell me was it delicious after making it ?! I’m on a fixed budget and have zero of these ingredients and I’m trying to change my eating while enjoying it , so me going out to purchase all of these ingredients and it’s not delicious will just not just hurt my pockets but it’ll turn me off by spending time and effort for a waste . I did one vegan meal and purchased everything , followed it to the letter and I’m so glad i tasted it before i fed it to my husband and my mom . It was so awful, i dumped it all .
It seems like a lot of the benefits from Japanese cuisine are the number and variety of fermented foods. In a typical meal, it seems like at least one if not multiple fermented items.

I’m familiar with the Blue Zones…I live close to a large Seven Day Adventist community in central Alberta, where they practice mindful preparation of food…which is in direct opposition to the ranching, steak mentality of most of Alberta. It’s an interesting, dare I say disturbing, contrast. Why are we still killing and eating animals 😵💫😵💫. Japan buys live horses from Alberta, and harvests dolphins to augment their diet…they might live longer but at what cost?
i use king arthurs GF all purpose blend or sweet rice flour as alts for AP flour and a small bit of tomato paste or even omit when doing a alt for ketchup!

I know processed meat & also meat that is raised on antibiotics & hormones & not grass fed is not the best, but to say that meat is bad for us is simply not true. Meat & protein is much more essential to our nutrition & health than grains, especially processed or white grains. And I don’t know that I want to necessarily live longer. If I were to have to live in a home or a wheelchair I dunno, I think I’d rather be dead

I didn't have Japanese curry powder so just used an Indian blend (I know I know) and I used a mix of chestnut mushrooms and Shiitake instead of Soy Curls as my wife isn't the biggest fan of soy curls. The end result was absolutely delicious.
I had to look up soy curls--honestly never heard of them before now, as best as I can recall. One source says tastes like chicken, and thus I probably would avoid these (unless that is untrue). Can one use tofu, tempeh, or something else instead of the curls?
soy curls does have a resemblance to chicken texture. its a warmer welcome to plant eating for newcomers. but tofu is definitely a useful resource here also!

I feel like blue zone food can over look access to healthcare or average stress level of the population as a reason for longevity. **However,** that being said, I’ve been trying to not just add a bunch of spices (like I always have) for the phytonutrients, but mind my cooking time, temperature, and vary up the veggies I use. I know I can fall into the trap of using the same root veggies and grains in different ways. While that saves money, I’m trying to occasionally shake that up more

I usually make a sauce that consists of 50% onions that is puréed. The longer you cook down the onions, the sweeter the curry will get. It's lovely!
