Just beautiful Steff! rhubarb turns into a syrup I tell ya..sticky mess but man do I miss it...In Canada it grew wild in everybody's yard...we cut a stick..rinse it and dip in sugar...it was Sour and Sweet..so good. Much love Steff
I’m 62 and when I was a kid it seemed like rhubarb grew in everyone’s yard. Us kids would eat it just like that. My mother made a rhubarb and strawberry pie that was out of this world. Ah, to be a kid again. I don’t see anything wrong with your pie, I’d eat it.👍

And to be honest, the one time I tasted rhubard something, I didn't particularly like it. But taste buds change, and I would totally try it again. The applesauce and pie looked delicious! I just dried rhubarb for the first time a few months ago, and I really liked it! It was surprisingly sour! I am sure the rhubarb and apple would be good together. Canning it turned out great. I did get a bit dizzy, but that's OK, lol. Your pie turned out great! I have heard of strawberry rhubarb pie, but not a plain rhubarb pie, so I am curious about this. Even though the juices came out a big around the edges, it turned out amazing! Perfectly golden brown. Thanks for sharing!
Hi Steph, would you believe the first time I tried rhubarb was about two years ago when a subscriber who lives in Maine sent me some that she grows. I made a rhubarb pie and it came out pretty good.
