rhubarb brings back memories, my aunt and uncle, that lived next door always grew a big garden, when we were kids, we would each get a paper cup of sugar, and a stalk a rhubarb, we'd take a break from playing and eat our treat. Your pie turned out great!
i LOVE rhubarb... in a tradition old danish plant, and we have a tons of recipes with them.. but there is a lot of young people there don't eat it because it 'sour' i'm LOVE it's not sweet, so it's the perfect dessert for me.. i have gotten my grandma AND my mother to plant it in theirs gardens, because i have just gotten a temporary apartment with a little garden..

I love rhubarb, rhubarb crumble yummy. I like it stewed and top it with hot custard also. I like this as I don't like a lot of pastry. I also like frittata which is like a quiche without the pastry, this is good to use up eggs. Love the videos, you are doing a great job.

I grew up eating rhubarb and have always loved rhubarb strawberry pie, when I was a kid my mom would always lots of rhubarb sauce which was just cooked down rhubarb with a lil sugar and we all loved having that in the summer.
I really enjoy your recipes and methods. Growing up we would add whatever strawberries we had to our rhubarb. I think my mom always made cobblers back then. She would use the strawberry in order to use less sugar. The only pie she would make was lemon meringue.
Of course my first move when I get my hands on fresh rhubarb is to fill a dixie cup with sugar & start dipping & eating😆 All us neighborhood kids lined up at the picnic table loading up on sugar & nature's Fun Dip sticks👍

i used to make rhubarb custard pie before i moved never used a top crust i just put strips of dough from the bottom crustand my recipe was from a very old b etty crocker book and it called for chunks of butter or margerine on top of the fillinggood and sweet my grandma we would visit her and got rhubarb from her but my mom said she used to chomp on it raw sour w/ sugar don remember what she saidbut never ever had it w/icecreamyr looked so good

That looks fantastic!! My grandma LOVED anything rhubarb. But she really loved the "rhubarb sauce" she made & canned. Just like applesauce, but it was rhubarb. I don't dislike it, but very much of it causes me....issues. 🙄 But along with something else is my preference... strawberry, peach, blueberry, etc. I will say that the rhubarb custard pie would still make me really happy!! I'd love a recipe for your upside down cake would be awesome... AND... a few years ago my daughter made what she called "BLUEBARB" jam. O. M. G!! It was ridiculously good! Sooo good in fact, if I was living alone at the time... all I would have needed was that jar of jam & a spoon!! Naughty, right? But sooo good! Have a blessed day.

Great recipe :D May I suggest that when you harvest the rhubarb you twist it off from the base, cutting it off like that leaves the end piece to breakdown and can cause root rot which will destroy the crown and I know how devastating that can be.

I LOVE Rhubarb, but it doesn't grow well in SWFL. When it comes into the grocery stores, I buy as much as I can and Vacuum Seal for Deep Freeze, but it is expensive. $3+/lb. When we lived in Upstate NY, it grew everywhere. If you needed to buy it, it was cheap.

Watching a garden programme in England and rhubarb should be pulled not cut from the base. Will certainly try making your version with the custard it looked very good.

I love rhubarb and have always had a patch in my yards. When harvesting you are not supposed to cut it off the plant. The best way is to pull it and get as much of the base root as possible....pulling it triggers the plant to grow more...cutting it hinders the growth.
It is so sour here in Canada! Even the reddest pieces. Very good for purging intestinal parasites. Super nutritious and one of the earliest fresh foods we can get in BC. Brightest Blessings! Looks delicious!

Please make sure to not have it raw (small pieces are ok raw) as it has very high levels of oxalic acid. It gets broken down when cooked though.
