I'm Italian, living in Spain, and we're managing to move to Hawaii in the very next years. And we knew about malasadas by fictions on TV so we at last decided to look for a simple malasadas' recipe and found yours...now we're able to cook very good malasadas and let them know to Europeans 😉😉😉! Thank you 🙏🙏🙏💗🌴🌺🌸🏵🏝🌅🌊
In the 1960's living in kapaa Kauai Hawaii. My Grandma would make these, and sell themat a local market. I remember thebline going out the store all the way to the street. People would stand in line long time. Every easter, she would make them too.
I made these tonight and .... wow, they're incredible. It's a hearty, substantial donut, unlike the dainty, light Krispy Kreme donuts. The recipe itself is so simple, it's really hard to mess these up. It also tastes a lot like the ones I ate in Hawaii. Thanks Relle!
Ahhhhhh. Reminds me of the malasadas I used to get way back as a kid in the Portuguese bakeries of New Bedford, Mass. Will make some for Moms later. Thanks. 🙏
@@maryjaneforsythe1 awesome. They don't call New Bedford "The Whaling City" for nothing 😉. Also, the city gained notoriety from the historic novel "Moby Dick." But the Portuguese people really made the city what is today. The seafood and bakeries are splendid 😋. Thanks for sharing! 🙏👍
@@KeepingItRelle wanted to tell you I finally made the malasadas. I surprised my Mom with some on Mother's Day. She truly enjoyed them and so did I. Check out the pic on my Twitter page by clicking the Twitter link on my UA-cam homepage. Funny but true story. I confused my regular dough bread with the malasadas dough and made a malasadas pizza. That's a combination that will stick with me for a long time. Take care and thanks! 🙏😄✌
Relle, was craving/missing the flavors of Hawaii and decided to try your recipe! The malasadas came out beautifully-light, fluffy, and very tasty! I usually “cheat “ and do the pilsbury method but why do that when this is easy and tastes so much better?! Family approved!
Hi, I have a few questions about the recipe: What temperature should the milk be? What type of milk did you use? Can I use 2% milk? Can I replace the bread flour with all-purpose flour? What speeds should the mixer be at the different times (when you add ingredients)? What size should the cookie-cutter be? What should be the thickness of the dough before cutting out the malasadas? What type of oil did you use to fry? The recipe looks amazing!
Hi. -I've always just used the milk as I pull it out of the fridge and have been successful. -You can 2%. The more fat content in the milk the richer the flavor. -I prefer bread flour. Higher protein content, more gluten, better chew. In a pinch if all you have it all purpose flour it will work as well. -I start the mixer on low to prevent the flour from flying all over. From there I don't usually go higher than medium speed. -No exact size needed on the cookie cutter. I'd say about 3in should be good. -Dough should be about 1/2in thickness. -Any mild flavor oil will work (vegetable, canola, etc.).
Hey Nice Repice i tried it and my Dough turned up Really Sticky ? i did use the recipe and didnt change anything could it happen if the dough is not enough kneaded or is it a problem whit the Flour i used 405 (german Flour) it is a really smooth flour
The dough is slightly tacky. If too sticky, simply add a little more flour. I suggest using bread flour and keep kneading. It will come together. Hope this helps.
Hi! Thank you for sharing your recipe of cooking Malasada, my forever favorite but unfortunately can’t go to Hawai’i yet:( can i also add filling in it? If so how do you do it? Thanks !

Not sure what I'm doing wrong. I don't have a stand mixer so I used a hand mixer then kneaded it by hand, but my dough baby didn't look look wet and sticky like yours 😓. I'm also converting cups to grams so it possible that there's too much flour? Idk 🤷🏻♀️
Sounds interesting :) How about adding to the rolling in the sugar step: lemon powder (“yours” brand) or maybe a lemonade powder drink powder but adjust the sweet with your preferred granulated sugar additions.
Do you have unsweetened condensed milk? I have not tried it with anything else. Evaporated milk has most of the water removed, so if regular milk is used in it's place the amount may need to be adjusted.
Eh can you say the measurements in your videos love your recipes but have hard time follow cause got question about how much to add. Mahalo much love to you.
Sure...but FYI this is just a Google conversion, so you may have to adjust. 9.3 grams active dry yeast 4 grams granulated sugar 29.6 grams water 3 eggs 122.5 grams milk 126 grams evaporated milk 100 grams granulated sugar 28.35 grams unsalted butter, melted 1.5 grams salt 544 grams bread flour

Are the malasadas ever filled with fruit or coconut cream?
Sure is. All kinds of different fillings.
Aloha Relle, is it okay to let the Malasads rise overnight and fry fresh in the morning? Mahalo, Keoni in WA
You could, but you also don't want them to over proof them. You can slow the process down in the refrigerator if you'd like.

are these similar to the ones you can get from the Punahou Carnival?

If the dough is too wet that means too much liquid or not enough dry ingredients. You can always add a little more flour and continue to knead.
Not sure what I'm doing wrong. I don't have a stand mixer so I used a hand mixer then kneaded it by hand, but my dough baby didn't look look wet and sticky like yours 😓. I'm also converting cups to grams so it possible that there's too much flour? Idk 🤷🏻♀️
It is dry then that means too much flour. You can try to add a little more liquid to see if you can get it to the right consistency.
Sis does it matter what type of yeast is used? What if I used the instant yeast?
You can use either or. The instant will dissolve fast and give it less of a yeasty taste.
Malassadas is a recipe from azores islands (Portugal). Even the name is portuguese. In the past we portuguese sailors were in hawai ...
Yes. And Portuguese make up a large population of the people of Hawai'i. Brought over so many yummy foods and traditions.
Aloha, can I replace the Milk & the evaporated Milk with fresh Orange juice? Thank for ansver. Greetings
Not sure. Never tried it before. Let me know if it works.
Thank you!
You're welcome!
How long did it take to mix and make the dough smooth?
With a stand mixer 5-10 minutes.
I had some original Malasadas from Leonards Bakery on Oahu that had "sweet and sour sugar" on them. How do you make sweet and sour sugar?
I've never had those. Maybe add lemon juice to the sugar?
Sounds interesting :) How about adding to the rolling in the sugar step: lemon powder (“yours” brand) or maybe a lemonade powder drink powder but adjust the sweet with your preferred granulated sugar additions.
Oh my I want one so bad
These are so yummy. Can't eat just one.
Can I just use whole milk instead of evaporated milk
Hi Jennifer. You can, it may change the flavor though. Thanks for watching.
I watched malasadas in Pokémon Sun and moon it looked so good and finally I had it also it is kinda hard to hear you over the music

Bread flour gives it the classic bread chew. I prefer bread flour but in a pinch you can use all purpose flour.

I haven't tried using anything else, but you could improvise. Let me know if you do and how it goes. Thanks for stopping by.
@@KeepingItRelle Oh ok my mom bought some so I don’t need to improvise
Quick question some recipes add acidity, like vinegar or lemon rinds. What do you think? Necessary or not, original or not?
Hi. I personally prefer not to. You can if you like that lemon taste.
Yummy to Tummy 😋😋😋Mahalo
Thank you.
I’ve attempted this twice but the dough won’t rise :/ any ideas why? The yeast is brand new and I’ve kept it in a warm dark place
What kind of yeast are you using?
@@KeepingItRelle I used active dry yeast
Did you try it in the air fryer yet?
I haven't. Somethings just taste better fried and I have a feeling these are one of them. But if you try it let me know.
Fun fact: Neither in Porto nor in Lisbon they have heard about Malasadas. They are called Bolas de Berlim (Berlin balls)
Thank you. Yes, malasadas are a Hawai'i Portuguese thing.
Can you substitute the evaporated milk with more milk?
Hi. I suppose you could, although I have never tried. It will change the flavor slightly.

What oil to use?
Any mild flavored oil (vegetable, canola, etc.).
Malassadas become part of Hawaii food culture thanks to the Portuguese... Some dough different shape.... You welcome!
Thankful for all the yummy foods that the Portuguese brought over.
How many were you able to make with this recipe?
Depends on the size you make them. Average sized malasadas makes about 2 dozen.
Eh can you say the measurements in your videos love your recipes but have hard time follow cause got question about how much to add. Mahalo much love to you.
All recipe instructions and ingredients are listed in the description box and the full write up can be found on the website.
How big is your cookie cutter?
You can use any size you'd like.
Can you do it without yeast
I’ve never tried it. It would likely have a different texture and flavor if it did work.
CAn you use all purpose flour vs bread flour?
Bread flour has more proteins and therefore more gluten which makes a more chewy consistency. You can use AP flour it would just change the texture.
Keeping It Relle okay thank you very much! I think I’m just gonna buy bread flour because I want the chewy ness lol. Aloha from Oahu 😘
☺️☺️☺️
