👉INGREDIENTS:
-6 egg whites 🥚
-1/4 tsp (1.23 g) cream of tartar (or vinegar or lemon juice)
-1/4 cup (50.22 g) fine sugar

-6 egg yolks 🥚
-8 oz cream cheese (1 bar)
-1/4 cup (56.72 g) butter
-1/2 cup (122.43 g) milk
-1/4 cup (50.22 g) fine sugar
-2 tbsp (25.6 g) corn starch (magic ingredient)
-1/4 cup (31.29 g) all purpose flour (use rice flour or Mochiko instead to make a gluten-free Japanese Cheesecake)
-1 tbsp (12.8 g) matcha powder mixed into a paste with 3 tbsp water (or milk)
(Vanilla extract or powder or lemon juice for extra flavoring are all optional)

what do i do if the batter is too watery?

The recipe can make two 6-inch cakes or one 8-inch. If you use a 10-inch pan, the cake will be flatter
Do you have to cool the batter before incorporating it into the meringue?
By the time I finish with the meringue, the batter has cooled :) since it takes at least 8-12 minutes to finish beating the egg whites. Thanks for stopping by, Shelby!
Hi is the timing n temperature? I followed the timing n temperature n cake is overbake!! It rises very nicely at 25 mins n further baking per yr instruction shrank the cake.....
Hwee Yan Sim if the cake shrinks drastically, you may want to see if you had beaten the egg whites properly, baked in a water bath, and if you had mixed the egg whites well into the batter. The cake should not shrink drastically when heat is still on in the oven. 25 minutes on higher heat and then lower heat for 45 minutes. You can also try heat at 325F for 20 min, then lower to 300 for 15 min and then lower again to 265-285F for 40 min and rest in oven after baking. If the batter was made well, the drastic shrinking should not happen
@@PhilandMamaToys Appreciate your taking time to reply. Thank you. I didnt realised that you have to bake in waterbath. The lower 2/3 of the cake is soggy. Does this mean that it is overmixed or if egg white is overbeaten. Egg white was at stiff peak when put into mixture. Does a small oven affect the baking time and temperature? Please advise. thank you again.
Do you have suggestion for dairy free?
I haven’t tried it but I assume aquafaba, dairy free cheese, plant based milk. Or tofu instead of cheese, and the aquafaba would be the egg white replacement. I don’t think whipped coconut cream would fluff up the cake

mine came out way undercooked
It’s ok to keep the cake in the oven until it cooks. I’ve never run into an undercooked problem. Check if your parchment paper was too tall. It’s also ok to raise ur temperature. Adjust temp according to your oven. Happy baking!
