Raspberry Muffins Recipe | Mindful, Adaptable & Delicious! | Cupcake Jemma

- Time for another Mindful Bake, and this week Sally is going back to basics again with this Mindful Muffins recipe. This Muffin recipe is by far the best you'll ever find, it uses Olive Oil to add richness and flavour to the sponge so no more bland boring Muffins for you! It's simple, quick and doesn't use any fancy equipment so you can enjoy making them with zero stress! Plus the chances are you have all the ingredients that you need already!
We love to leave these Muffins plain but feel free to add whatever additions you like, take a look below for some examples. And remember to keep sharing your photos over on Instagram using #cupcakejemma so we can see and share.

For 12 Muffins
Preheat Oven to 170C (fan assisted)
250g Caster Sugar
Zest of 2 Lemons
3 Large Eggs
250ml Whole Milk
250ml Light Olive Oil
375g Plain Flour
2 tsp Baking Powder
1/4 tsp Salt
100g Fresh Raspberries
100g White Chocolate Chips
Try mixing up your flavours:
Lemon and Blueberry
- Add 100g or fresh or frozen Blueberries
Chocolate and Orange
- Switch out the Lemon Zest for Orange Zest
- Add 100g whatever chocolate chips you like
Cinnamon Apple and Pecan
- Add 1 tsp Ground Cinnamon
- Chop up 1 Small Apple into cm diced
- Add 100g chopped Pecans

Just made these with my 6yr old grandson, and although it wasn’t a ‘mindful’ experience it was fun and the results are AMAZIING!!! I have always baked with my grandchildren from toddler to teens and our go to recipes are Cupcake Jemma’s as they always turn out so well. Thanks for this one Sally x

Tried and tested - absolutely amazing!
I loved making these by hand, it was so therapeutic, I skipped on the white chocolate, added an extra lemon worth of zest and used sunflower oil instead of light olive oil as I couldn't find any and they're genuinely the best muffins I've ever tasted, absolutely beautiful and the crunch top, oh my just gorgous!
I've baked so many cupcake jemma recipes and loved them all but this, THIS is my favourite!
Hi, Jess! I was wondering if I could use vegetable oil instead of olive because it can be quite expensive in my country. Did you use the same amount of sunflower oil as the recipe asks for, or did you have to make adjustments? Thank you very much for your time!

As much as I enjoy another lovely recipe with Sally, I must disagree with you, as I believe that the culture of 'I'm not feeling so well but I'm gonna muscle it through' and maybe spread the cold to someone else in the process is very harmful both to the coworkers and the employers, therefore also for economy🤷

My kids and I LOVE your channel. My 3 year old requests "cake video" for her to relax to for quiet time. I had another go at these and turned them into lemon meringue muffins. I just made the plain version with a bit more lemon zest and added a couple of tablespoons of lemon juice. I made holes in them and filled with lemon curd (the recipe from this channel), then topped with toasted Swiss meringue. They turned out amazing and I'm looking forward to trying other variations.

I've just made these but with Cape gooseberries( I'm in Cape Town!) instead of raspberries. Really delicious & nearly all finished already!( I put the white chocolate chunks in the batter so they could get cold overnight too; otherwise our white chocolate melts too quickly). Made a batch of these muffins for my child to share with her classmates in school, they were gone in a flash. I made the blueberry with lemon zest version, they're sooooo good! Thank you!
I really like this series because you really don't need any mixer or anything, I like there is no noise from mixers etc. because sometimes I really don't feel like it. I tried the crumble bars with pears from my garden and shortbread with walnuts from my garden and liked it a lot. Thank you.

This is my favourite type of baking. Just you and your hands (and of course the electric oven and scale) experiencing every little transformation of the mixture as you add in yet another ingredient.

Thank you for sharing this awesome recipe. I've been failing to make good muffins for awhile now but you have just changed that! I made chocolate chip muffins using this base recipe and the family love them.

These are awesome! I just went with the raspberry and white chocolate version this time but it would definitely be good to experiment in future. I used demerara sugar for the topping instead of caster and got 16 out of that quantity of batter, though I was perhaps being a little conservative on how much I filled each.
I've nothing against using machines to aid in baking but I do love a good recipe that I can get more hands on with, which may be why I always knead bread dough by hand.

These muffins are perfectly delicious! I used freeze-dried raspberries. I just ate one which I had put into the freezer the day after baking ... still perfect. With a great cup of coffee.
Did you use same quantity of freeze dried raspberries?
@@louiseoreilly5638 I don't remember exactly, but I think I used about 20 grams max. 100 g of freeze-dried raspberries would be way too much (and too expensive 🙃). Enjoy!

Just made another batch today as chocolate muffins. I took out 50g of flour and added 100g of cocoa powder. I also left out the lemon zest. I know that is a bit more dry stuff but I also added some coffee and a little extra milk. I used about 200g in total of assorted chocolate chunks. The result was a slightly thicker batter but they baked well and taste amazing.

Yayy just made these, reduced sugar by 25% and ended up with 15 delicious muffins, in loveee
Do remember the sugar topping before baking, I forgot for my first 12 and the texture was a bit too the same throughout… also could probably up the raspberries to 150 or 200g
