I would use my passion of baking and bake for my friends and not eat any of what I would make. For a while I was so unhappy and it took a toll on me physically and mentally. As I’m recovering, I’m watching your videos and you help me so much because of your positivity and comforting environment around food. You make it something to enjoy, to love, and to share, not to fear like I have for so long. I’ve already made a few of your recipes, such as the banana bread, chocolate chip cookie bars, blondies, and oreo cupcakes. They all came out amazing and the best part is that I had some too with my family and friends that I baked for. You have helped me realize my passion for baking and have assisted me in my recovery greatly. I told my mom that when I get back from vacation, I’m making this. Prior to vacation I’m making banana bread to bring with us to eat for breakfast, since that’s a big hit around my house! Ingredients Streusel: ▢ ¼ all-purpose flour (30g) ▢ ¼ cup granulated sugar (50g) ▢ pinch of salt ▢ 2 Tbsp cold butter diced Muffins: ▢ 2 cups all-purpose flour (240g) ▢ 1 cup granulated sugar (200g) ▢ 2 tsp baking powder ▢ ½ tsp kosher salt ▢ ¾ cup milk (180mL) ▢ 2 large eggs ▢ 5 Tbsp vegetable oil (75mL) ▢ 3 Tbsp melted butter (45mL) ▢ 2 tsp vanilla extract ▢ Zest of 1 lemon ▢ 1½ cups fresh raspberries Instructions Preheat the oven to 400F. Butter or spray a 12-cup muffin pan or line with paper liners. For the streusel: In a small bowl, whisk together flour, sugar, and salt. Add the butter and cut it in with a pastry blender or your fingers until the mixture is very crumbly. For the muffins: In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk together milk, eggs, oil, melted butter, vanilla, and lemon zest. Fold the egg mixture into the flour mixture, stirring just until combined. Fold in the raspberries. Divide the batter among the muffin cups. Sprinkle the streusel over the muffins. Bake for 18 to 20 minutes or until golden brown on top and a wooden pick inserted in the center comes out clean. Let cool for a few minutes in the pan before removing.
I bought raspberries intending to find something to use them in, literally the next day he posts this video. Had to bake them for an extra 5 or so minutes but it was worth it. They were sooo good! 😋
OMG I made these and they are literally the most delicious muffins I’ve ever tasted. To the top I added pine nuts to the topping. They were so good. Froze them, and had them with coffee. Delicious and easy to make.
I've made these several times. I would rate them at 9.0 on a 10.0 scale. When I was younger, the Mrs. Field's cookie stores used to make raspberry muffins. These were a special treat for work celebrations. Your raspberry muffins are almost as good. One of the things I found most impressive about this recipe (After the taste!) is that the amounts were so precise that the recipe made exactly 12 muffins. Often recipe volumes are off and you wind up with enough batter for 14 muffins or only enough for 12 wimpy muffins. You delivered exactly what you advertised, 12 substantial and delicious muffins! A sign of a well crafted recipe. Good job! Thank you.

I'm a buttermilk guy....gotta use that here in the south. Nice recipe and looks like a great recipe to substitute fruit. Maybe some fresh diced peaches tomorrow.
I made these this morning and they are very lemony and delicious. The raspberry flavor also comes through. Not overly sweet, most of which comes from the streusel topping. I recommend highly if you like lemon and raspberry. Would likely be very good with blueberries. They look exactly like yours.

I am smart so I put my mixing ( metal ) bowl for 5 seconds on a buring stove top. Turn it off, go collect your other ingredients, by the time u will come back u will hv a pool of melted warm butter. It will cool down while mixing sugar so no harm to the eggs.

I have a specific kitchen cleaning cloth designated for exploding butter in the microwave. I make scrambled eggs in the microwave very day. Part of this 3 min total prep and cook time is melting a teaspoon of butter and coating the bowl before scrambling 3 eggs in it. So gud and fluffy
Got these in the oven. Wanted to use some older raspberries grand kids didn't eat and so I used some frozen blueberries I had and a few dried cranberries to make up the 1 and a half cup of berries. Came together beautifully and, the batter is DELICIOUS! I'm sure the finished muffin will be even better. Thanks for sharing!

I just made these Gluten Free, I have celiac disease. I used King Arthur all purpose gf flour. I did also use blueberries because I had them. They’re delicious. This is a really great base for any gf muffin. Strawberries and bits of cream cheese are on deck. Thanks for your recipe!

Hello John, I tried to bake the classic lemon tart and it actually worked! I had issues since I did not have a kitchen scale, which was adventourous but otherwise a really good recipe! My boyfriend and his parents did enjoy it soo much they begged me to do another one! Adding rasperries and whipped cream made it even more delicious! So thank you very much for your recipe :3 (is a cat mouth).

I usually use melted butter for my streusel topping on coffee cake but only because it’s written in the recipe. It comes together quickly.
